Named for a popular mayor in post-war France, Kir drinks combine black currant liqueur with various wines. The Kir Royale is named thusly for its use of Champagne.

CRANBERRY KIR ROYALE
Steps:
- Add cranberries, orange juice, zest and sugar to a large pan and set over medium heat until berries break-down slightly and liquid is syrupy, 12 to 15 minutes. *Pour into a blender and process, be careful of the hot liquid expanding when you blend - use a towel over the top of the blender.
- Strain and discard any solids then set aside and cool.
- Pour 2 tablespoons of cranberry-orange syrup into the bottoms of 4 chilled champagne glasses. Add a few cranberries to each glass and gently top off each glass with Champagne.
- *When blending hot liquids: Remove liquid from the heat and allow to cool for at least 5 minutes. Transfer liquid to a blender or food processor and fill it no more than halfway. If using a blender, release one corner of the lid. This prevents the vacuum effect that creates heat explosions. Place a towel over the top of the machine, pulse a few times then process on high speed until smooth.
CONCORD AND CRANBERRY KIR ROYALE

- Pour 1 to 2 tablespoons of the Cranberry Concord Syrup into champagne flutes and top with sparkling wine. Stir gently and serve.
- Combine the cranberries, grape jam, grape juice, sugar and orange zest in a medium saucepan over medium-high heat. Bring to a boil, then reduce the heat and simmer, stirring occasionally, until the cranberries are very soft and easily break apart when pushed with a wooden spoon, about 20 minutes. Do not simmer too hard or the sauce may boil over. Let cool, then strain the syrup into a small pitcher.

BERRY KIR ROYALE
This favorite of mine dates back to when I first came of age to order a cocktail in a restaurant. The sophisticated sound of the name made this drink fun to order ("I'll have a Kir Royale, please"), and made me seem like I knew what I was doing (I didn't). It was served in a tall, elegant flute, which made every occasion feel like a celebration, and still does. And, of course, the light effervescence of this drink -- i.e. the bubbles -- made me feel grown-up. It's still a favorite before-meal starter, pleasant accompaniment with a weekend brunch, or treat for a late afternoon visit with girlfriends. Though traditionally made with Champagne, I substitute prosecco. This Italian bubbly and the fresh berries dropped in the glasses, along with the cassis, provide a hint of currant flavor that trumpets your taste buds to attention, as is the duty of a first-class aperitif.

- Stir water and sugar in heavy medium saucepan over medium heat until sugar dissolves. Increase heat and bring mixture to boil.Pour mixture into medium bowl. Mix in 5 tablespoons crème de cassis. Chill mixture 2 hours.
- Stir Champagne into sorbet mixture. Process sorbet mixture in ice cream maker according to the manufacturer's instructions. Transfer sorbet to container; cover and freeze until firm, about 2 hours. (Can be prepared 2 days ahead: keep frozen.)
- Freeze 4 martini glasses or Champagne coupes for 1 hour. Scoop sorbet into frozen glasses. Garnish with small cluster of grapes, if desired, and serve.

KIR ROYALE SORBETS
Kir became a favorite drink of mine (cassis and wine), then Kir Royale quickly became a new favorite (cassis and champagne). So when we made this for a dinner party in Scotland, this combined my favorite drink with ice cream! This is well worth the time it takes to freeze multiple times!

- 1. Mix sugar and water in saucepan until sugar dissolves. Cook, covered 10 min, stir in rinds. Remove from heat, refrigerate 2 hours until cold. Add lemon juice, champagne and brandy. Strain into a bowl and freeze until 2" in from sides. Beat smooth, repeat freezing and beating 3 times. Freeze solid, beat before serving.
- 2. Put jelly, liqueur, and sugar in saucepan. Boil, then simmer until reduced to 1 1/4 cup, smooth and thick. Stir in lemon. Serve sorbet with warm sauce.
