KIELBASA GRILLED CHEESE

3 tablespoons sugar
1/2 cup apple cider vinegar
3 tablespoons vegetable oil
1 16-ounce bag shredded coleslaw mix
1/2 cup roughly chopped fresh herbs (such as parsley and dill)
Kosher salt and freshly ground pepper
8 ounces kielbasa, sliced diagonally 1/4 inch thick
2 tablespoons whole-grain mustard
8 slices rye bread
8 slices cheddar cheese (about 6 ounces)
1/2 jalapeno pepper, thinly sliced (seeds removed for less heat)
2 tablespoons unsalted butter

Steps:

  • Whisk the sugar and vinegar in a large bowl until the sugar dissolves, then whisk in 2 tablespoons vegetable oil. Add the coleslaw mix and herbs, season with salt and pepper and toss.
  • Heat the remaining 1 tablespoon vegetable oil in a large nonstick skillet over medium-high heat. Add the kielbasa and cook until browned on both sides, 2 minutes; transfer to a paper towel-lined plate.
  • Spread the mustard on the bread, then sandwich with half of the cheese, the kielbasa, jalapeno and the remaining cheese.
  • Wipe out the skillet; add 1/2 tablespoon butter and melt over medium heat. Add 2 sandwiches and press another large skillet on top. Cook, pressing gently, until the bread is golden brown and the cheese melts, 4 to 5 minutes per side, adding another 1/2 tablespoon butter to the skillet when you flip. Transfer to a plate. Repeat with the remaining sandwiches. Serve with the coleslaw.

1 pound polish Kielbasa, sliced into 1/4 inch circles
1 (12-ounce) jar sauerkraut
1 large sweet onion, sliced in thin rounds
4 tablespoons whole grain Dijon mustard
4 tablespoons spicy jalapeno jelly
4 slices Gruyere cheese
4 small crusty rolls

Steps:

  • Mix together your mustard and jelly until well combine. Your condiment is now ready. In a cast iron skillet, brown up the kielbasa. Once slightly darkened around edges, remove from the pan and set aside. Preheat broiler. In the same pan, add your sweet onions and grill up until just beginning to brown and soften. Add sauerkraut to the pan with the onions and cook together about 8 minutes, until most juices evaporate. Slice your rolls and scoop out a bit of the inside bread if desired. Next, assemble the sandwiches (in a pan preferably with sides if making many). First, spread some of the mustard/jelly condiment on the bottom. Next, pile on some kielbasa rounds (about 8 Don't Skimp!) then the onion/sauerkraut mixture and then top with a good slice of Gruyere Cheese. Place the pan under the broiler - along with the top of the rolls (facing inside up) to slightly crisp its edges Once cheese has melted, remove from the oven. PAY ATTENTION WHEN IN BROILER. Spread some more mustard/jelly condiment on the inside top of the roll and close the sandwich.

9 pound smoked pork picnic shoulder, smoked but not cooked
1 can sliced pineapple
1/2 cup light brown sugar
2 tablespoons yellow mustard
Whole cloves, optional

Steps:

  • Preheat oven to 350º F. Line a 2-inch deep roasting pan with aluminum foil. Place the whole pork shoulder package in the pan. Carefully cut the outer plastic packaging and remove it entirely, discard. Remove any other packing materials that might be included. Leave the netting on the meat, do not remove at this time. Place the meat skin side up in the pan. Add one cup of water to the pan. Cover the meat with aluminum foil. Place in oven on middle rack. Meat should cook about 18-22 minutes per pound of weight. In a small bowl, add the light brown sugar. Add yellow mustard and a few tablespoons of the juice from the sliced pineapples. Stir until it forms a thick paste. About 45 minutes before the pork should be done, remove the pan from the oven and remove foil. Reduce the oven heat to 250º F. Carefully cut away the netting from around the meat. It may stick in some places so be careful.Using tongs and a knife, carefully remove the layer of skin and fat from the meat. Set aside. Use a sharp knife and score the meat about every one inch and about ½ inch deep. Crosscut again. If using cloves, place one clove in each of the squares made from the cuts. Drizzle half of the glaze over the cooked meat. Use toothpicks to attach the pineapple slices to the meat and drizzle remaining glaze over the top. Return the meat to the oven, uncovered and bake for about 30-45 minutes or until a meat thermometer placed in the thickest part of the meat reaches a temperature of 170º F. EXTRA GLAZE: OPTIONAL I decided to add some extra glaze to my ham, it's not necessary, just a matter of preference. Remove the toothpicks, pineapple and cloves. Spread a thin layer of mustard all over the baked shoulder. Sprinkle an even coating of brown sugar on top of that. Set your oven to BROIL. Return the shoulder, uncovered, to the oven and Broil for about 10 minutes longer or, until it's a nice brown color. Sugar should be melted but don't let it burn. Oven temperatures will vary so, keep a close eye on it during this final step. Remove from oven and let stand for 5-15 minutes before carving. Serve warm and enjoy!

1 1/2 pounds smoked Polska kielbasa
2 tablespoons butter
3 tablespoons sugar
1 onion, sliced
3 cups sauerkraut, drained
3 tablespoons freshly chopped parsley leaves
Honey Mustard Dipping Sauce, recipe follows
1/4 cup yellow mustard
1/4 cup honey
1/4 cup Dijon mustard
1/2 teaspoon cayenne
1 tablespoon prepared horseradish
Pinch salt
Pinch cracked black pepper

Steps:

  • Preheat grill. Preheat oven to 400 degrees F.
  • Cut kielbasa into 3-inch lengths and butterfly lengthwise. Place on hot grill and cook for 4 to 5 minutes on each side turning frequently, charring all sides. Remove from grill. Transfer kielbasa to a baking sheet and place in oven to cook for another 5 to 6 minutes.
  • In a large skillet over medium-high heat, add butter and sugar. Allow sugar to cook to a golden brown color. Add onions and cook until caramelized. Stir in the sauerkraut and cook for 5 to 6 minutes until onions and sauerkraut are wilted and colored.
  • Remove kielbasa from oven and cut into 1-inch pieces. Add to pan of sauerkraut and onions. Toss together and cook for 1 minute. Transfer to a platter, garnish with parsley and serve with Honey Mustard Dipping Sauce.
  • In a small bowl, mix all ingredients until well combined.

8 slices turkey kielbasa (1/4 inch thick)
2 -4 slices swiss cheese (for spicy) or 2 -4 slices monterey jack cheese (for spicy)
4 -6 tablespoons sauerkraut (Fresh, jar or canned)
3 tablespoons prepared oktoberfest mustard
1 bakery-style bun, sliced in half (I use onion buns)

Steps:

  • Preheat oven to 450°F.
  • Slice bun and lay on baking sheet.
  • Spread mustard on each half of bun.
  • Squeeze juice from sauerkraut and layer on top of mustard.
  • Layer cheese slices on top of sauerkraut, so it covers entire area of bun halves.
  • Layer 4 slices of kielbasa on each bun half.
