- Place potatoes and water in a microwave-safe dish. Microwave, covered, on high until potatoes are tender, 3-4 minutes; drain., Meanwhile, mix brown sugar, vinegar, mustard, thyme and pepper. In a large skillet, heat oil over medium-high heat; saute onion and kielbasa until onion is tender., Add potatoes; cook and stir until lightly browned, 3-5 minutes. Stir in brown sugar mixture; bring to a boil. Reduce heat; simmer, uncovered, 2 minutes, stirring occasionally. Stir in spinach until wilted. Stir in bacon.

- Cut potatoes (scrubbed with skins left on) into bite-sized pieces.
- Thinly slice both bell peppers and the onion.
- Quarter Kielbasa length-wise and cut into bite-sized pieces.
- In a large skillet, heat olive oil over medium heat.
- Place Kielbasa and potatoes in skillet. Season with Old Bay and Seasoning Salt. Cover and cook 25 minute or until potatoes are almost tender. Stir occasionally.
- Add peppers and onion. Cook 5 minute or until peppers and onion are just tender. Adjust seasoning if needed.

Steps:
- Heat oil in a large skillet over medium-high heat.
- Add potatoes, onions, garlic, and pepper. Fry until potatoes are golden and onions are translucent, about 8 minutes.
- Add kielbasa and cook 1-2 minutes until warm.
- Add broth and cover skillet with lid. Lower heat to medium-low. Cook until broth is mostly evaporated, 5-10 minutes, and potatoes are tender. Be careful not to overcook the potatoes.
- If potatoes are not done and broth has evaporated completely, add more chicken broth and continue to cook until potatoes are tender.

KIELBASA AND POTATOES
Kielbasa and potatoes is a simple and delicious meal filled with kielbasa sausage, fried potatoes, onions and peppers.

- Slice kielbasa into 1/4 inch rounds.
- Place sliced kielbasa into a large skillet and cook over medium heat until they start to brown. Make sure to occasionally stir so that they don't stick.
- Carefully remove the kielbasa sausage from the skillet but be sure to leave any grease.
- Add in olive oil, diced potatoes, salt and pepper. Stir the potatoes and then cover the skillet. Cook for 8-10 minutes, stirring occasionally, or until potatoes start to soften.
- Remove lid and add in diced onion and bell pepper. Keep cooking another 7-8 minutes or until they start to soften.
- Stir in minced garlic and cook 1-2 minutes more.
- Add in kielbasa and let warm through, about 5 minutes. Optional garnish with fresh parsley. Serve hot.

EASY KIELBASA SKILLET DINNER
The house always smells awesome while this very tasty, filling meal is cooking. It makes kielbasa worth stocking up on when it goes on sale and uses basic/cheap ingredients overall. Vary the vegetables depending on what you have on hand. For example add/replace broccoli with a can of corn and/or peas, etc. If you like a little heat, sprinkle a little hot sauce on top after it's cooked. This should make about 4 servings, but it almost always turns out to be split into 2 large servings between the me and the boyfriend. We like to crisp up/brown the kielbasa slightly before adding the vegetables.
