EASY KIELBASA SKILLET DINNER

The house always smells awesome while this very tasty, filling meal is cooking. It makes kielbasa worth stocking up on when it goes on sale and uses basic/cheap ingredients overall. Vary the vegetables depending on what you have on hand. For example add/replace broccoli with a can of corn and/or peas, etc. If you like a little heat, sprinkle a little hot sauce on top after it's cooked. This should make about 4 servings, but it almost always turns out to be split into 2 large servings between the me and the boyfriend. We like to crisp up/brown the kielbasa slightly before adding the vegetables.

cooking spray
½ onion, chopped
1 (16 ounce) package kielbasa sausage, sliced
½ head broccoli, cut into florets
3 potatoes, peeled and sliced
salt and ground black pepper to taste

Steps:

  • Spray a large skillet with cooking spray and heat over medium-low heat. Cook and stir onion in the hot skillet until translucent, about 5 minutes. Add kielbasa; fry until sausage is lightly browned, stirring occasionally, about 5 minutes more.
  • Stir broccoli and potatoes into sausage mixture; season with salt and pepper. Cook, without stirring, until broccoli begins to soften, about 15 minutes. Stir mixture and continue to cook until vegetables are completely tender, 10 to 15 minutes more.

My own recipe, distilled from several sources to be my own take. Hearty peasant food, perfect for a cold winter night. Serve with mashed potatoes or rice to soak up the gravy.

2 teaspoons oil
1 large onion, sliced thin
1 tablespoon minced garlic
1 large head red cabbage, quartered cored and sliced
2 lbs kielbasa, sliced in 1-inch pieces (I use the lite variety)
2 cups chicken broth (you can swap 1 c apple cider or juice for 1 c of broth if you like it a little sweeter)
1/2 cup apple cider vinegar
1/2 cup brown sugar
1 teaspoon cinnamon
1/2 teaspoon powdered ginger
12 allspice berries
1/2 tablespoon coriander seed
1/2 cup golden raisin
2 tart apples, cored and cut into wedges (Jonathan or Braeburn work well)

Steps:

  • Sweat the onion and garlic in the oil with a good pinch of kosher salt. When limp but not brown, add the cabbage. Sweat another 5-7 minutes, until the cabbage begins to wilt.
  • Add the remaining ingredients and mix well. Bring to a boil, reduce to a simmer, cover and cook for 30 minutes.
  • (Alternatively, just toss everything into a slow cooker and cook on high for 2-3 hours, or low for 5-6 hours.).
