1 tablespoon cornstarch
2/3 cup apple juice
1/4 cup cider vinegar
1 teaspoon orange zest
1 lb kielbasa, cut in chunks
1 green bell pepper, cut into chunks (or red bell pepper)
1 onion, cut into chunks
1 cup pineapple chunk

Steps:

  • In small saucepan, combine brown sugar, cornstarch, apple juice, cider vinegar and orange peel; blend well.
  • Cook over medium heat until it boils and thickens, stirring constantly.
  • Thread skewers with kielbasa, bell peppers, onions, and pineapples.
  • When ready to barbeque, place kabobs on preheated grill.
  • Cook 4 minutes.
  • Brush with glaze, turn and glaze again.
  • Cook 3-5 minutes or until hot and browned.
  • Serve with any remaining glaze.

2 rings (1 lb each) kielbasa sausage
12 wooden skewers (6 to 8 inch)
1/4 cup apricot preserves
2 tablespoons orange juice

Steps:

  • If using bamboo skewers, soak in water at least 30 minutes before using to prevent burning. Heat oven to 350°F. Line 15x10x1-inch pan with foil; spray with cooking spray.
  • Cut kielbasa at an angle into 48 chunks, about 1 inch each. On each skewer, thread 4 chunks of sausage; place in pan.
  • In small bowl, mix preserves and orange juice with fork; brush glaze over kabobs. Turn kabobs over; brush other side.
  • Bake about 45 minutes or until kielbasa is browned.

3/4 cup unsweetened pineapple juice
1/4 cup cider vinegar
1/4 cup canola oil
2 tablespoons sugar
2 tablespoons soy sauce

2 pounds boneless skinless chicken breasts, cut into 1-inch cubes
1 pound smoked kielbasa or Polish sausage, thickly sliced
1 can (20 ounces) unsweetened pineapple chunks, drained
2 medium green peppers, quartered
2 cups grape tomatoes

Steps:

  • In a small bowl, combine the first seven ingredients. Remove 1/2 cup for basting; cover and refrigerate. Divide remaining marinade between two large resealable plastic bags. This is a super simple recipe I copied from the Whole Foods Market website. The grilled kielbasa have such a wonderful flavor. You can even use turkey kielbasa to save on calories and fat. I use more apple just because my kids like the way they taste off the grill. It's okay to let the ingredients sit in the lemon juice mixture for a few minutes. I was concerned about that at first, but it does not overpower or alter the flavor of the dish. I also don't use the skewers. I use a grilling basket - it's much faster!! I serve with couscous.

1 lb kielbasa
1 large onion
1 red apples, such as Braeburn or 1 gala apples, cored
1 tart green apple, such as Granny Smith, cored
1/4 cup lemon juice
1/4 cup olive oil
2 teaspoons fresh ground black pepper
1 teaspoon salt

Steps:

  • If using bamboo skewers, soak them in water for 30 minutes before grilling.
  • Cut kielbasa, onion and apples into 2-inch pieces.
  • Combine in a bowl with lemon juice, olive oil, black pepper and salt.
  • Toss to coat.
  • Preheat grill to medium high.

Every year in October, we have an Octoberfest for about 40 of our friends. Where I live, people don't get out as much in the winter, so this is so we can visit before winter sets in. We make all the meat dishes & everyone else brings the sides & desserts. These are a big hit.

4 pkg any kind kielbasa sausage(cut in bite size chunks), chicken chunks, beef chunks, etc
2 can(s) dole pineapple chunks (it matters), reserve 1/2 cup juice
2 onions, any kind, cut in bite size chunks
3 bell peppers, any kind, cut in bite size chunks
1 (16 oz.) box whole mushrooms, cut in half from top, down through stem
3/4 c brown sugar
1 c soy sauce
california style garlic seasoning with parsley
montreal steak seasoning
30 short or long wooden skewers

Steps:

  • 1. Make these the day before you plan on cooking them.
  • 2. It is recommended to soak skewers a few hours before assembling kabobs, so they don't catch fire on grill. I never do because I have them full & this never happens.
  • 3. Layer meat, then pineapple, then mushroom, then bell pepper, then onion, in that order on skewer. Repeat until skewer is full, pushing them tightly together as you go. Begin & end with your meat of choice.
  • 4. Place in a large plastic container that has a tight fitting lid.
  • 5. Pour the soy sauce, mixed with 1/2 cup of the pineapple juice & brown sugar over them. Put lid on & gently invert them. Do this for a minute or so, until well coated.
  • 6. Place in fridge overnight, inverting every so often.
  • 7. When ready to cook, preheat grill to around 350°. Spray with cooking spray.
  • 8. Lay the kabobs on grill & brush with the marinade. Sprinkle on the seasons.
  • 9. Close the lid on grill.
  • 10. Turn the kabobs after about 10 minutes. Brush again & season again. Finish cooking with lid closed, another 5-10 minutes.

1/3 cup GREY POUPON Country Dijon Mustard
1/3 cup apricot preserves
3 green onions, finely chopped
1 lb. kielbasa, cut into 1-inch pieces
1 large apple, cut into 12 wedges
1/2 cup frozen pearl onions, thawed
3 cups shredded green cabbage, steamed

Steps:

  • Cook potatoes in boiling water 10 to 12 min. or just until tender; drain. Cool slightly. Meanwhile, combine mustard, preserves and green onions; reserve 1/4 cup for later use.
  • Heat grill to medium heat. Thread sausage, apples, pearl onions and potatoes alternately onto 12 skewers.
  • Grill kabobs 12 to 15 min. or until heated through, turning after 7 min. and brushing occasionally with remaining mustard mixture for the last few minutes. Meanwhile, cook reserved mustard mixture in saucepan on medium heat 3 to 4 min. or until heated through.
  • Toss hot cabbage with mustard mixture. Serve with kabobs.

1 fresh pineapple
1 large sweet onion
1 large red bell pepper
1 large green bell pepper
favorite barbeque sauce, i like openpit
cooked rice, optional
metal or wooden skewers, if using wood, soak in water to keep from burning during cooking process

Steps:

  • 1. Peel and core pineapple and cut into good sized chunks; place in bowl and set aside.
  • 2. Peel and cut onions into good sized wedges, seperated into at least 2 pieces deep; place in bowl and set aside.
  • 3. Clean and core Bell Peppers, cut into good sized chunks; place in bowl and set aside.
  • 4. Thread ingredients onto skewers alternating along the way. Place on hot grill or broil in oven. After about 5 minutes on heat source, brush with your favorite barbeque sauce turning and brushing with sauce every few minutes or so. Grill or broil until desired doneness. Just make sure sausage is throughly cooked thru. Serve over rice.
