KIELBASA " HASH " ONE SKILLET DINNER

Kielbasa, onions, sliced potatoes, red bell pepper and garlic, all sautéed till crispy. So good! I served it like a hash, with eggs on the side. Very easy, and done all in one large pan. Thanks to ThatBobbieGirl for inspiring me. She had mentioned doing something like this, and this is the version I came up with. Feel free to add whatever spices or heat you may like. Makes a great dinner or breakfast.

Number Of Ingredients 9

2 -3 tablespoons oil
1 1/2-2 onions, sliced thinly
3 medium potatoes, cut in half lengthwise, then sliced thinly
1 -2 red bell pepper, sliced
6 garlic cloves, minced
1 lb kielbasa, thinly sliced (polish sausage)
salt
pepper
1/2-3/4 teaspoon mccormick grill mates McCormick's Montreal Brand steak seasoning, to taste

Steps:

  • In a large skillet, heat oil.
  • Add onions and potatoes, sauté over medium heat until onions are soft and starting to brown, about 10-15 minutes or so.
  • Add red peppers and garlic, sauté for about 5 more minutes.
  • Add sausage and cook for about 5 more minutes, or until peppers are done to your liking.
  • Add salt, pepper, and McCormick seasoning to taste, along with any other spices you might like.
  • Like I said, this is great with eggs and toast.

The house always smells awesome while this very tasty, filling meal is cooking. It makes kielbasa worth stocking up on when it goes on sale and uses basic/cheap ingredients overall. Vary the vegetables depending on what you have on hand. For example add/replace broccoli with a can of corn and/or peas, etc. If you like a little heat, sprinkle a little hot sauce on top after it's cooked. This should make about 4 servings, but it almost always turns out to be split into 2 large servings between the me and the boyfriend. We like to crisp up/brown the kielbasa slightly before adding the vegetables.

½ onion, chopped
1 (16 ounce) package kielbasa sausage, sliced
½ head broccoli, cut into florets
3 potatoes, peeled and sliced
salt and ground black pepper to taste

Steps:

  • Spray a large skillet with cooking spray and heat over medium-low heat. Cook and stir onion in the hot skillet until translucent, about 5 minutes. Add kielbasa; fry until sausage is lightly browned, stirring occasionally, about 5 minutes more.
  • Stir broccoli and potatoes into sausage mixture; season with salt and pepper. Cook, without stirring, until broccoli begins to soften, about 15 minutes. Stir mixture and continue to cook until vegetables are completely tender, 10 to 15 minutes more.

1 pound red potatoes (3-4 medium), cut into 1-inch pieces
3 tablespoons water
2 tablespoons brown sugar
2 tablespoons cider vinegar
1 tablespoon Dijon mustard
1-1/2 teaspoons minced fresh thyme or 1/2 teaspoon dried thyme
1/4 teaspoon pepper
1 tablespoon olive oil
1/2 cup chopped onion
3/4 pound smoked kielbasa or Polish sausage, cut into 1/4-inch slices
4 cups fresh baby spinach
5 bacon strips, cooked and crumbled

Steps:

  • Place potatoes and water in a microwave-safe dish. Microwave, covered, on high until potatoes are tender, 3-4 minutes; drain., Meanwhile, mix brown sugar, vinegar, mustard, thyme and pepper. In a large skillet, heat oil over medium-high heat; saute onion and kielbasa until onion is tender., Add potatoes; cook and stir until lightly browned, 3-5 minutes. Stir in brown sugar mixture; bring to a boil. Reduce heat; simmer, uncovered, 2 minutes, stirring occasionally. Stir in spinach until wilted. Stir in bacon.
