6 hard boiled eggs, (chopped)
1 lb Kielbasa, (sliced)
4 green onions, (sliced)
2 large red peppers, (roasted, peeled and chopped (or 1 can of store bought))
4 oz can chopped olives, (only used about 2 oz (can use whole can).)
3/4 cup mayonnaise

Garlic salt and pepper to taste

  • Rub a little oil on the red peppers and roast over open flame until charred. Put into an air tight container for about 10 minutes. Peel off skin and chop, add to bowl.
  • Cube potatoes into 1" squares, add to bowl.
  • Add the juice from the pepperoncini and the remaining ingredients, stir and serve warm (no need to put in the oven since the potatoes are still warm, however, can place in oven on 200° until ready to serve. Cover with foil so it doesn't dry out.
  • Also good served cold.

Warm New Potato Salad with Grainy Mustard image

New potatoes are simply young spuds of any variety that haven't converted all their sugar to starch. We like them because they are small enough to be cooked whole and are excellent boiled or pan-roasted.

DEEN BROS. KIELBASA POTATO SALAD

Deen Bros. Kielbasa Potato Salad image

Not your ordinary potato salad. This recipe is served warm or at room temperature, like a German Potato salad is served. Very versitile because it can be served for a picnic in the summer sun though it's hearty enough for a dinner in the dead of winter as a one dish meal or along side of a green salad or veggie and warm crusty bread. It's very yummy indeed! Courtesy of the Deen Bros. cookbook "Y'all Come Eat".

SPICY MUSTARD KIELBASA BITES

Spicy Mustard Kielbasa Bites image

I had a 5-pound package of kielbasa that I wanted to use for an appetizer and went in search of something simple that I could prepare early in the day. Boy did I find a winner! The recipe is from FBNR.com (Favorite Brand Name Recipe web site). I highly recommend doubling or tripling the recipe, otherwise you'll be sorry when it disappears quickly and your guests are looking for more. If you have extra sauce, save it and use it to dip chicken nuggets or wings. I changed the directions to make this a more hostess-friendly recipe that can be prepared ahead of time and served hot in a small crock pot. Using a crock pot also makes it easier to prepare this at home and bring it to a party. You can play with the amount of honey. I think it could easily be decreased a bit to lower the calories and the hot sauce could be increased.

1 cup spicy brown mustard

  • Slice kielbasa into bite-size pieces. Using a griddle or frying pan, brown both sides of the kielbasa slices.
  • While the kielbasa is grilling: In a large saucepan, combine mustard and honey. Bring to a boil over medium heat. Stir in hot sauce.
  • Next, add the kielbasa to the honey-mustard sauce, stirring to coat.
  • Transfer everything to a small crock pot or serving bowl and serve with toothpicks. I recommend using a crock pot -- then you don't have to worry about keeping them hot during the party.
