12 ounces dry ziti pasta
3 tablespoons olive oil
1 onion, chopped
1 red bell pepper, chopped
2 cloves garlic, minced
1 pound kielbasa sausage, sliced into 1/2 inch pieces
12 ounces sauerkraut, drained and rinsed
2 tablespoons prepared Dijon-style mustard
1 pinch cayenne pepper
ΒΌ cup white wine
2 tablespoons chopped fresh parsley

Steps:

  • Bring a large pot of lightly salted water to a boil. Add pasta, and cook for 8 to 10 minutes, or until al dente; drain.
  • Heat olive oil in a large skillet over medium heat. Cook onion and bell pepper in oil, stirring frequently, until onion is tender. Stir in garlic and kielbasa, and cook until kielbasa begins to brown, about 8 minutes. Stir in sauerkraut, mustard, and cayenne; cook about 4 minutes more. Stir in wine and parsley, and heat through.
  • Toss ziti with kielbasa and sauerkraut, and serve immediately.

3/4 pound Swiss chard (preferably red; from 1 bunch)
1/2 pound kielbasa, quartered lengthwise, then cut crosswise into 1/2-inch-thick pieces
2 tablespoons olive oil
1/2 teaspoon salt
2 garlic cloves, finely chopped
1/2 cup water
1/4 teaspoon dried hot red-pepper flakes
3/4 pound penne
1 pound finely grated Parmigiano-Reggiano (1/2 cup) plus additional for serving

Steps:

  • Cut out center ribs and stems from chard, then thoroughly wash, along with leaves, in several changes of cold water. Cut ribs and stems crosswise into 1/4-inch-thick pieces and coarsely chop leaves.
  • Cook kielbasa in oil in a 5-quart heavy pot over moderately high heat, stirring occasionally, until golden, 2 to 3 minutes. Transfer with a slotted spoon to a bowl. Cook chard ribs and stems with salt in fat remaining in pot over moderate heat, stirring occasionally, 3 minutes. Add garlic and cook, stirring, 1 minute. Add chard leaves, water, and red-pepper flakes and simmer, partially covered, until chard stems are tender, about 5 minutes. Remove lid and stir in kielbasa.
  • Cook pasta in a large pot of boiling salted water until al dente, then reserve 1/2 cup pasta-cooking water and drain pasta in a colander. Add pasta to chard mixture with cheese and salt to taste and toss until combined well. Thin with some of reserved pasta water if necessary.

This is especially good to make when apples are in season and at the peak of their flavor, and it features a favorite food pairing: sweet-tart apples with cheddar cheese.

nonstick cooking spray
8 ounces dried rigatoni pasta or 8 ounces penne pasta
2 cups milk (not fat-free)
2 tablespoons all-purpose flour
1 cup shredded cheese (4 ounces)
1/2 teaspoon salt
1/2 teaspoon bottled hot pepper sauce
3 medium fuji or jonathan apples, cored and cut into 1/2-inch cubes (you want a fine-grained apple in order to avoid the apples getting too mushy when cooked)
8 ounces cooked kielbasa, halved lengthwise and sliced 1/4-inch thick
1 medium green onion, thinly sliced

Steps:

  • Preheat oven to 350 degrees F. Coat a 2-quart baking dish or casserole with nonstick cooking spray; set aside.
  • Cook pasta according to package directions in a large saucepan. Drain and return to saucepan; set aside.
  • Meanwhile, in a medium saucepan whisk together milk and flour. Cook and stir over medium heat until thickened and bubbly. Cook and stir 1 minute more. Remove from heat. Stir 1/2 cup of cheese, salt and hot pepper sauce into the milk mixture until smooth.
  • In the large saucepan toss together the cooked pasta, apples, kielbasa and cheese sauce. Transfer to prepared baking dish; cover with foil.
  • Bake in preheated oven for 20 minutes. Uncover and carefully stir pasta mixture. Sprinkle with remaining 1/2 cup cheese and the green onion. Bake 10-15 minuted more or until cheese is melted and sauce is bubbly. Remove from oven and let stand for 10 minutes before serving.

1 pound kielbasa (Polish smoked sausage), quartered lengthwise and cut into 1/2-inch-thick pieces
6 garlic cloves, minced
1 bunch of broccoli rabe (about 1 pound), stems peeled and cut into 1/2-inch pieces and the leaves and flowerets chopped coarse
1 cup water
1 pound spiral-shaped pasta such as spiral-shaped pasta such as or fusilli
3 tablespoons olive oil, or to taste

Steps:

  • In a heavy skillet brown the kielbasa over moderate heat, stirring, transfer it with a slotted spoon to paper towels to drain, and pour off all but 1 tablespoon of the fat. In the fat remaining in the skillet cook the garlic over moderately low heat, stirring, until it is golden, add the broccoli rabe, and cook the mixture, stirring, for 1 minute, or until the broccoli rabe is wilted. Add the water, simmer the mixture, stirring occasionally, for 5 to 7 minutes, or until the broccoli rabe is tender, and stir in the kielbasa. In a kettle of boiling salted water cook the pasta until it is al dente and drain it well. In a large bowl toss together the pasta, the oil, the kielbasa mixture, and salt and pepper to taste.

1 lb rigatoni pasta
2 tablespoons olive oil
1 large onion, sliced
1/4 cup all-purpose flour
1 quart milk
3 cups extra-sharp cheddar cheese
1 teaspoon hot pepper sauce
1 teaspoon salt
1 (14 ounce) package kielbasa, fully cooked, cut into 1/4 inch slices
3 fuji apples, cored, cut into 1/2 inch slices
2 scallions, thinly sliced

Steps:

  • Preheat oven to 350 degrees Fahrenheit.
  • Coat a 10-cup baking dish with non-stick cooking spray.
  • In large pot of lightly salted boiling water, cook rigatoni until al dente, firm but tender, following package instructions. Drain.
  • In large heavy-bottom saucepan, heat olive oil over medium-high heat.
  • Add onion and cook until softened, 5 to 7 minutes.
  • Stir in flour, cook 1 minute.
  • Gradually whisk in milk.
  • Bring to boil, stirring continuously; boil until thickened, about 1 minute.
  • Remove from heat.
  • Set aside 1 cup of cheese for topping casserole.
  • Whisk remaining 2 cups cheese, hot-pepper sauce, and salt into mixture.
  • In pasta pot, combine rigatoni, cheese sauce, kielbasa and apples into baking dish.
  • Cover.
  • Bake covered for 30 minutes.
  • Uncover and stir.
  • Sprinkle with 1 cup remaining cheese and scallions.

1/2 lb uncooked whole wheat linguine
1 lb kielbasa (cut 1/2 inch thick)
1 tablespoon olive oil
1 green bell pepper (cut into thin strips)
1 yellow bell pepper (cut into thin strips)
1 red bell pepper (cut into thin strips)
1 onion (chopped)
1 tablespoon dried parsley flakes
1 tablespoon dried oregano
1 1/2 teaspoons cayenne pepper or 1 1/2 teaspoons ground red pepper
4 fresh garlic cloves (minced)
1/2 cup parmesan cheese (grated)

Steps:

  • 1. Put water for pasta on high-heat.
  • 2. In large pot cook Kielbasa in Olive oil on medium-high heat for about 5 minutes.
  • 3. Add onion and garlic, cook on medium-high for another 3-5 minutes.
  • 4. Add in the peppers, parsley, oregano, and cayenne pepper and lower heat to medium-low.
  • 5. Pasta water should be boiling now. Put pasta in water.
  • 6. Cook peppers until tender. Cook pasta al dente.
  • 7. Strain and toss in cooked pasta; add grated cheese and toss well.
  • Refrigerate leftovers; this meal is even better the next day!
  • Adjust amounts of meat, veggies to your taste.

Steps:

  • Slice the kielbasa and put in frying pan with onion and oil. Fry on med-high about 15 minutes.
  • Meanwhile boil the penne pasta. When done boiling, drain, then mix with the kielbasa and onions mix. Cook about 10 minutes. Add gravy mix with little water. Enjoy!
