6 oz linguine
1/4 c red wine vinegar
1 Tbsp sugar
1 Tbsp dijon-style mustard
1 tsp dried basil, crushed
2 Tbsp water
vegetable cooking spray
12 oz low-fat turkey, beef or pork kielbasa or smoked sausage, halved lengthwise and cut into 1/4 inch-thick slices
1 medium sweet red or green bell pepper, cut into bite-size strips
1 medium onion, chopped
2 small zucchini, thinly sliced

Steps:

  • 1. Cook linguine, in boiling salted water, per package directions. Drain. Set aside.
  • 2. For dressing: in a small mixing bowl, combine vinegar, sugar, mustard, basil and 2 Tbs. water. Set aside.
  • 3. Spray, a medium skillet with cooking spray. Cook, sausage, pepper, and onion, until sausage is heated through and onion is tender. Add dressing and zucchini, and cook 2 minutes more. Toss with linguine. Makes 4 servings. Variation: Saucy Kielbasa-Prepare as above, except omit dressing, and use 1 cup spaghetti sauce.

I created this recipe to have something quick to make that basically seasons itself. Made with Kielbasa and Cream of Mushroom soup, you can serve this over noodles or rice.

1 kielbasa, sliced and cut into pieces
1 tablespoon sunflower oil
1 (8 ounce) can cream of mushroom soup, roasted garlic works best
1 teaspoon garlic powder
1 teaspoon sea salt
1/2 teaspoon black pepper

Steps:

  • Chop the kielbasa into small pieces. I like to cut slices about 1/2 inch thick then cut each slice into 4 pieces.
  • Fry the kielbasa in the cooking oil for at least 5 minutes.
  • Add the cream of mushroom soup and the spices. Bring to a boil then simmer on low heat for 30 minutes.
  • Serve over noodles or rice prepared per package instructions.
