When we returned home Grandpa would take his place on hi recliner and read and Nana would don her apron and head for the kitchen. 1/2 lb sliced kielbasa
1 sliced large onion
1 large bell pepper sliced thin
8 eggs
1/2 c milk
2 t bread crumbs
salt, pepper, garlic powder to taste

Steps:

  • 1. In a 10 inch skillet cook kielbasa, pepper and onions on medium heat until vegetables are tender.
  • 2. In a large bowl beat eggs, milk, bread crumbs,garlic powder, salt and pepper until well beaten and nice yellow color
  • 3. Now pour the egg mix into the skillet.Stir the eggs gently in with the veggies and kielbasa until eggs are done to your liking.
  • 4. Serve with a nice slice of texas toast with roasted garlic

I tried this dish at a Mothers Day brunch, and was pleasantly surprised It was delicious! I have found it is best with just eggs and kielbasa, no onion, garlic, herbs or cheese (and I am a cheese, onion and garlic fanatic!)

3 ounces kielbasa, sliced and quartered
6 eggs, beaten
2 tablespoons water
salt and pepper

Steps:

  • Heat a 10" skillet on medium heat, add some butter and the chopped kielbasa and warm them up. Do not brown.
  • Whisk the eggs with the water.
  • Turn the heat up to medium high.
  • Pour in the eggs.
  • Cook until desired doneness, stirring constantly. Your eggs will be light and fluffy if you do this. Eggs cook very quickly, so this should not take longer than one minute.
  • Salt and pepper at the table,.

2 teaspoons vegetable oil
1/2 lb fully cooked kielbasa sausage, cut lengthwise in half, then cut crosswise into slices
1 large onion, sliced
1 medium green bell pepper, thinly sliced
8 large eggs
1/2 cup milk
1/4 teaspoon salt
1/8 to 1/4 teaspoon pepper

Steps:

  • In 10-inch skillet, heat oil over medium heat. Cook kielbasa, onion and bell pepper in oil about 5 minutes, stirring occasionally, until vegetables are tender.
  • Meanwhile, in medium bowl, beat eggs, milk, salt and pepper with fork or wire whisk until blended.
  • Pour egg mixture over kielbasa mixture. As mixture begins to set at bottom and side, gently lift cooked portions with spatula so that thin, uncooked portion can flow to bottom. Avoid constant stirring. Cook 4 to 5 minutes or until eggs are thickened throughout but still moist.

2 lbs.smoked kielbasa
2 onions, sliced
2 tablespoons olive oil
1 tablespoon butter
salt, to taste

Steps:

  • In a large skillet, heat one tablespoon of olive oil over medium-high heat. Add sausage slices, and cook until brown.
  • Remove sausage slices from skillet, and drain grease. Add remaining olive oil and butter to the skillet and heat over medium-low.
  • Spread sliced onions evenly over the bottom of the skillet. Stir onions to coat them with the oil and butter mixture.
  • Cook onions for about 20 minutes or until soft and brown. If onions seem to be cooking too quickly, lower heat to prevent them from burning.
  • Return sausage slices to the skillet, and stir together with the onions. Season with salt and pepper.
  • Cook until sausage is warmed through. Serve immediately, and enjoy!

1 package (14 oz) cooked Polska kielbasa
1/2 cup chopped onion
2 teaspoons chopped garlic
2 cups packed fresh baby spinach, coarsely chopped
6 cups frozen shredded hash browns, thawed (from 30-oz package)
2 cups shredded Colby-Monterey Jack cheese blend (8 oz)
10 eggs
2 cups milk
3 tablespoons country Dijon mustard
1/2 teaspoon salt
1/2 teaspoon pepper
1/2 cup sliced green onions
Prepared horseradish

Steps:

  • Heat oven to 350°F. Spray 3-quart oval or 13x9-inch baking dish with cooking spray. Slice Polska kielbasa in half lengthwise, then in 1/2-inch slices.
  • In 10-inch nonstick skillet, cook Polska kielbasa over medium-high heat 3 to 5 minutes or until browned; remove from skillet. Reduce heat to medium. In same skillet, cook onion and garlic 3 to 5 minutes, stirring frequently, until slightly softened. Add spinach to skillet; cook about 1 minute or until starting to wilt.
  • Layer half of the hash browns in baking dish. Add 1 1/2 cups of the cheese, the Polska kielbasa, spinach mixture and remaining hash browns. In large bowl, beat eggs and milk with whisk; beat in mustard, salt and pepper. Pour over hash browns; top with remaining 1/2 cup cheese.
  • Bake 50 to 55 minutes or until golden brown and center is just set. Let stand 15 minutes; top with sliced green onions before serving. Serve with horseradish.
