1 garlic clove (minced or pressed)
1 tablespoon olive oil
1 14 ounce can crushed tomatoes in rich puree
1/2 teaspoon brown sugar
1/2 teaspoon Italian seasoning
1/2 teaspoon dried basil
pinch of salt
pinch of crushed red pepper flakes
12 4- inch flour tortillas
Pizza topping: Mini pepperoni (shredded mozzarella, fresh basil)

Steps:

  • Preheat oven to 450°. Bake pizza sauce.
  • Place flour tortillas on a rimmed baking sheet. Place a tablespoon of pizza sauce into the center of each tortilla round. Sprinkle cheese on top of the sauce on each tortilla round. Top each pizza with mini pepperoni rounds and fresh basil if using.
  • Bake 8 - 10 minutes or until the cheese is melted and starting to brown and the crust edge is browned and crisp.
  • HOMEMADE PIZZA SAUCEIn a small saucepan, sauté garlic in oil until tender. Stir in the remaining sauce ingredients. Bring to a boil. Reduce heat; simmer, uncovered, for 15 minutes or until sauce reaches desired thickness. Sauce may be refrigerated for up to 1 week.

3/4 cup prepared pizza sauce (tomato, pesto, or alfredo; whichever your family likes! (We use tomato))
Tiny Pinch kosher salt
Pinch black pepper
1 cup shredded part-skim mozzarella cheese (or cheddar cheese, provolone, or any cheese you like)
1/2 teaspoon Italian seasoning
Toppings of choice (such as mini pepperonis (or regular pepperonis, quartered), or sautéed veggies, such as spinach or mushrooms)
Thinly sliced fresh basil (optional for serving)

Steps:

  • Preheat the oven to 400 degrees F. Line a baking sheet with parchment paper.
  • Arrange the English muffin halves cut side up onto a baking sheet. Lightly drizzle with olive oil. Place in the oven and toast until barely golden, about 4 minutes.
  • Spoon 1 1/2 tablespoons pizza sauce over each one, using the back of a spoon to spread it evenly. Sprinkle with salt and pepper. Top with mozzarella cheese and Italian seasoning. Add any desired toppings.
  • Bake for 10 minutes, until the cheese is melted and the muffins are browned on the edges. Top with fresh basil. Enjoy hot.

Let your kids (and other family members) loose with a ball of dough, a bowl of sauce, and a spread of colorful toppings, and watch their creativity unfold! All you need is fresh pizza dough (cut one 14- to 16-ounce ball into 4 pieces for individual pies), a rolling pin, baking sheets, any sauce you like, and a variety of sliced veggies, cured meats, and grated or cubed cheeses. Make-your-own-pizza night is all about individuality, and it's a great way to encourage your kids to eat their veggies and explore fun new foods.

1 (14- to 16-ounce) ball pizza dough
1½ cups super-easy marinara sauce ((or your favorite pizza sauce))
6 ounces mozzarella, Jack, Colby, or cheddar cheese, (grated or cut into ½-inch cubes)
Toppings of your choice
Extra-virgin olive oil
Salt and freshly ground black pepper
Condiments for serving ((ranch dressing, hot sauce, etc.))

Steps:

  • Preheat the oven to 500°F. Line two large rimmed baking sheets with parchment paper or grease them with a little olive oil.
  • Prep your toppings while the oven preheats, and place them all in separate bowls on a counter or table within easy reach of each pizza maker.
  • Cut the ball of dough into 4 equal-size pieces. Give one piece of dough to each person and let them roll, stretch, or press it out to a 6- to 8-inch circle. Try to avoid overworking the dough; encourage everyone to form their pieces into pizza-size circles and then get right to topping.
  • Place two rounds of dough on each baking sheet and let each person top their pizzas however they like! No combination of ingredients is off limits (as long as there's enough for everyone). As a general rule, two or three spoonfuls of sauce is plenty for individual pizzas. As far as the other toppings go, however, there are no limits! (Just know that the crust might be flimsy and wet in the middle if you pile on too much. Encourage your fellow pizza makers to grab pinches or spoonfuls rather than handfuls of toppings.) Pro tip: Making pizza faces (see photo above) or other patterns with colorful toppings will prevent pizza makers from overloading their crusts.
  • Transfer the baking sheets to the oven. Bake the pizzas for 10 to 15 minutes, rotating them halfway through, until the crust is golden and the cheese begins to brown in spots.
  • Remove the pizzas from the oven. Drizzle the pizzas with a little olive oil and season with a pinch of salt and a grind or two of black pepper if desired. Let them cool for a few minutes before slicing.
  • Serve the pizzas on their own or with ranch dressing, hot sauce, or other condiments for dipping/topping.

1 teaspoon salt
1 tablespoon olive oil

Pepperoni, sausage, ham, pineapple, olives, peppers, and any other toppings you like

Steps:

  • Preheat oven to 425ºF. Line two baking sheets with parchment paper.
  • Combine the yeast, water, and sugar in a large mixing bowl. Stir, then let sit for 10 minutes, or until the mixture is creamy and has small bubbles on the top.
  • To the yeast mixture, add the salt, olive oil, and flour. Stir until everything is incorporated and the mixture forms a ball. Turn out onto a lightly floured work surface and knead for a minute or two, or until it feels smooth and elastic.
  • Rub a teaspoon of olive oil all over the dough ball, then cover it with plastic wrap and let it rest in the mixing bowl for 5 minutes.
  • Cut the dough into 8 equal pieces and form them into balls. One at a time, place each ball onto the floured work surface and use a rolling pin or clean hands to roll, pat, or pull the dough into a pizza crust shape.

1 -2 tablespoon pizza sauce
1 tablespoon mozzarella cheese

Steps:

  • Boil noodles according to package directions. Drain.
  • Rinse pasta to get rid of starch.
  • Place pasta in small bowl, add pizza sauce, stir to mix.
  • Place in microwave for 30 sec. to heat sauce and pasta. Every microwave is different so adjust time accordingly.
  • Top with cheese.
  • My little guy loves this.
  • Save leftover pasta if there is any for another meal.

1/8 teaspoon active dry yeast
7 1/4 cups all-purpose flour
1 tablespoon kosher salt
canola oil, for greasing and brushing
cornmeal, for sprinkling
crushed ice
1 1/2 cups finely grated pecorino romano cheese (4 ounces)
extra-virgin olive oil
black pepper

Steps:

  • In a medium saucepan, heat 3 cups of water to 80°. Transfer 2 tablespoons of the warm water to a small bowl and whisk in the yeast. In a large bowl, combine the flour with the remaining warm water and stir with a wooden spoon until a shaggy dough forms. Cover both bowls with plastic wrap and let stand for 30 minutes.
  • Mix the salt into the yeast and add to the dough in the large bowl. Knead until all of the liquid is absorbed; the dough will be quite wet. Cover with plastic wrap and let stand at room temperature for 30 minutes.
  • With a dampened hand, lift one edge of the dough, stretch it up and fold it over the top of the dough. Turn the bowl a quarter turn, lift up the edge of the dough, stretch it up and fold it over the top. Repeat until you've turned the bowl all the way around. Cover the bowl with plastic wrap and let the dough stand for 30 minutes. Repeat the lifting and folding one more time, then transfer the dough to a large oiled bowl. Cover with plastic wrap and let stand at room temperature until tripled in bulk, about 12 hours.
  • Turn the dough out onto a lightly floured work surface and cut into 6 equal pieces. Take 1 piece of dough and pull the edge into the center, then place seam side down on the work surface. Roll the dough into a ball and set on an oiled baking sheet. Repeat with the remaining 5 pieces of dough, arranging them 3 inches apart on the sheet. Brush the rounds with canola oil and cover with plastic wrap. Refrigerate for at least 8 or up to 12 hours.
  • Let the dough stand at room temperature for 30 minutes. Preheat the broiler. Place an inverted baking sheet or a pizza stone in the oven 8 inches from the heat. Invert a second baking sheet and dust liberally with cornmeal.
  • On a lightly floured surface, use your fingertips to press 1 ball of dough into a 6-inch round, leaving a border around the edge and keeping the center slightly thicker than the rest. Use your palms to press the dough into a 10- to 12-inch round. Transfer to the cornmeal-dusted sheet and slide onto the hot sheet in the oven. Place 2 tablespoons of ice in the center of the dough and bake for about 8 minutes, until golden. Immediately sprinkle 1/4 cup of the cheese all over the pizza, drizzle with olive oil and season with pepper. Serve immediately.
  • Repeat to make 5 more pizzas.

PIZZA DOUGH FOCACCIA (ABM)



Pizza Dough Focaccia (Abm) image

I got the pizza dough recipe from my Breadman Breadmachine book. I made a 2 lb. dough. I put the ingredients into the machine in the order as I have listed them. I added fresh and dried herbs, a small piece of pimento from a jar, some kalamata olives as well as some minced garlic and Romano cheese. I cut everything up fairly fine. I also sprinkled some fresh ground smoked black pepper on this. The possiblities for this are endless, depending on what you like. You could probably divide this in half and make two smaller focaccias if you wish, though, the cooking time might be different with a smaller focaccia.

1 1/2 cups warm water (100-115'F)
2 tablespoons olive oil
2 teaspoons salt (I used the large crystal sea salt)
3 1/4 cups all-purpose flour
1 cup spelt flour (I used sprouted)
2 teaspoons raw sugar
2 teaspoons yeast (I used the red star from the little brown jar)

Steps:

  • Put all the ingredients into the bread machine in the order given.
  • Turn it on to your dough setting.
  • When the dough is finished remove it from the bread pan and place on a lightly floured counter and pat it into a circle about 1/2 inch thick.
  • Place on your oven peel (or a baking pan) that you've sprinkled with corn meal.
  • Dimple the top of the dough with your finger and brush with olive oil. Add whatever toppings you want.
  • At this point, heat your oven to 400'F. and put your oven stone or pan you're going to cook the focaccia on into the oven to heat up.
  • Let the dough rise for about 15-20 minutes.
  • Once the focaccia has risen slide it off the peel onto the oven stone and bake until golden brown. It took 20 minutes in my oven.
  • When done, remove with your pizza peel and set on a metal wrack to cool.
  • Bon Appetit!

2 cups elbow macaroni
1 pound ground beef
1 (14 ounce) jar pizza sauce
1 (4 ounce) can tomato sauce
1 (4.5 ounce) can sliced mushrooms, drained
1 pound shredded mozzarella cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Bring a large pot of lightly salted water to a boil. Cook elbow macaroni in the boiling water, stirring occasionally, until cooked through but firm to the bite, 8 minutes. Drain.
  • Cook and stir ground beef in a skillet over medium heat until meat is crumbly and browned, about 10 minutes; drain excess grease.
  • Mix cooked ground beef, macaroni, pizza sauce, tomato sauce, and mushrooms in a bowl. Layer half the macaroni mixture into a 9x12-inch baking dish; top with 1/2 the mozzarella cheese. Layer remaining macaroni mixture over the top; sprinkle remaining mozzarella cheese over macaroni mixture. Cover dish with aluminum foil.
  • Bake in the preheated oven until cheese has melted and casserole is bubbling, about 35 minutes. Let cool for 3 to 5 minutes before serving.
