2 lbs boneless, skinless chicken breasts or thighs
Kickin' chicken seasoning (use our do-it-yourself recipe!)
2 TBSP honey
3 TBSP minced garlic
1/2 cup apple cider vinegar

Steps:

  • Mix all spices together
  • Add spices to chicken in a Tupperware container or a bag. Add honey and ACV.
  • Marinate chicken for 30 minutes to an hour
  • Grill until chicken is cooked through and no longer pink on the inside

10 chicken thighs, skinless and boneless
1 c kraft chipolte bbq sauce
salt and pepper to taste
2 Tbsp creole seasoning

Steps:

  • 1. Pre-heat your oven to 350 degrees. Place the 10 chicken thighs in a baking dish. Do not add water or oil !! Sprinkle the Creol seasoning evenly among the thighs, and salt and pepper them to your liking. Cover with foil and bake for 35- 40 minute.
  • 2. Remove the chicken from the oven. Evenly spread the bbq sauce on the chicken thighs. Cover with foil once again and return to the oven for an additonal 20-25 minutes.
  • 3. Once thoroughly cooked, remove from oven and allow to set for 5 minutes before serving.

Adapted this one night to use a basting sauce from a large grinder of Weber Grill Creations Kick'n Chicken Seasoning mix. And it was a huge hit! Citrus and spice VERY NICE!! I will add fresh crushed garlic next time!

6 bone in chicken thighs (or any selection of chicken)
kick'n chicken mixed spice (fine grind)
1 small lemon, cut in half
1 teaspoon Dijon mustard
2 tablespoons olive oil
1 tablespoon find ground kick'n chicken seasoning

  • season thighs liberally with fine ground seasoning mix and squeeze one lemon half over chicken.
  • heat grill to medium.
  • squeeze other half of lemon into small bowl and whisk in mustard, oil and spices. should be somewhat thick like a good salad dressing in order to stick to chicken while cooking- if to then whisk in olive oil while drizzling it into bowl until desired thickness.
  • taste marinde- should have a strong but not over powering lemon taste. add more spice if you desire.
  • grill chicken slowly until almost done and baste with all of sauce on both sides of chicken let cook until done.
  • EAT!

CRISPY AND STICKY CHICKEN THIGHS WITH SQUASHED NEW POTATOES AND TOMATOES



Crispy and Sticky Chicken Thighs with Squashed New Potatoes and Tomatoes image

This is a simple pan-baked chicken dish - the sort of food I absolutely love to eat. As everything cooks together in 1 dish, all the beautiful flavors get mixed up. This is what it's all about! With a green salad, it's an easy dinner.

1 3/4 pounds new potatoes, scrubbed
12 boned chicken thighs, skin on, preferably free-range or organic
Olive oil
Sea salt and freshly ground black pepper
1 1/4 pounds cherry tomatoes, different shapes and colors if you can find them
1 bunch fresh oregano, leaves picked
Extra-virgin olive oil
Red wine vinegar

Steps:

  • Put the potatoes into a large saucepan of salted boiling water and boil until cooked.
  • While the potatoes are cooking, preheat your oven to 400 degrees F. Cut each chicken thigh into 3 strips and place in a bowl. Rub the meat all over with olive oil and sprinkle with salt and pepper, then toss.
  • Heat a large frying pan, big enough to hold all the chicken pieces snugly in 1 layer, and put the chicken into the pan, skin side down. If you don't have a pan that's big enough, feel free to cook the chicken in 2 batches. Toss and fry over a high heat for 10 minutes or so, until almost cooked, then remove with a slotted spoon to an ovenproof pan or dish.
  • Prick the tomatoes with a sharp knife. Place them in a bowl, cover with boiling water and leave for a minute or so. Drain and, when cool enough to handle, pinch off their skins. You don't have to, but by doing this they will become lovely and sweet when cooked, and their intense flavor will infuse the potatoes. By now the potatoes will be cooked. Drain them in a colander and lightly crush them by pushing down on them with your thumb.
  • Bash up most of the oregano leaves with a pinch of salt in a pestle and mortar, or a Flavor Shaker if you have one. Add 4 tablespoons of extra-virgin olive oil, a good splash of red wine vinegar and some pepper and give everything another bash. Add to the chicken with the potatoes, the tomatoes and the rest of the oregano leaves. Toss everything together carefully. Spread out in a single layer in an appropriately sized roasting pan, and bake for 40 minutes in the preheated oven until golden.
  • Lovely served with an arugula salad dressed with some lemon juice and extra-virgin olive oil, and a nice glass of white wine.

8 bone-in chicken thighs with skin
¼ teaspoon garlic salt
¼ teaspoon onion salt
¼ teaspoon dried oregano
¼ teaspoon ground thyme
¼ teaspoon paprika
¼ teaspoon ground black pepper

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Line a baking sheet with aluminum foil and spray with cooking spray.
  • Arrange chicken thighs on prepared baking sheet.
  • Combine garlic salt, onion salt, oregano, thyme, paprika, and pepper together in a small container with a lid. Close the lid and shake container until spices are thoroughly mixed. Sprinkle spice mixture liberally over chicken thighs.

As needed weber's kicker chicken seasoning
As needed kroger chipotle chili pepper seasoning

Steps:

  • 1. Pre heat oven 400 * , Lay thighs on foil lined baking sheet
  • 2. Season one side with both seasonings, bake 15 minutes, flip over chicken and season 2nd side with both seasonings and bake 15 minutes longer. Serve

6 drumsticks
6 thighs
1 T. House Seasoning
1/2 cup pure maple syrup
1/3 cup apple cider vinegar
1 T. crushed red pepper
2 T. veg. oil
Maple White Barbecue Sauce (see recipe)

Steps:

  • Trim excess fat from chicken thighs. Sprinkle legs & thighs with House Seasoning. Place in large ziploc bag. Add syrup, vinegar, red pepper & oil. Seal bag and shake to mix ingredients. Chill 3-8 hrs. Preheat oven to 350. Remove chicken from marinade. In large skillet, cook chicken over med-high heat 2-3 min. per side. Place skin side up in baking dish. Cover with foil. Bake 45 min; uncover and bake 20 min. more. Serve with sauce.
