KICKED UP HUSH PUPPIES
I usually only make these when having Seafood, but my son loves them and asks for them just as a snack...so, he got his way today...he dips them in Ranch dressing...they have quite the kick to them, as my jalapeno's are quite hot...you can make them without too - delicious either way! Enjoy!

Steps:
- In a bowl, combine cornmeal, flour, baking powder and salt & onion powder.
- Beat egg slightly and add it to the bowl, along with the milk, onion and peppers. Stir until blended. Leave batter set for about 5 minutes, before frying in hot oil.
- Drop into hot grease by Tablespoonfuls. Fry until golden brown. ( flipping occasionally ).
- Drain on paper towels and enjoy with a dip or garnished with Parmesan cheese. I normally serve these with fish, but the son wanted some as a snack...Lol!

- In a large bowl, combine the cornmeal, flour, baking powder and salt. Whisk the egg, milk and onion; add to dry ingredients just until combined. , In a cast-iron Dutch oven or an electric skillet, heat oil to 365°. Drop batter by tablespoonfuls into oil. Fry until golden brown, 2 to 2-1/2 minutes. Drain on paper towels. Serve warm.

- Heat 2 inches of oil to 365 degrees F (185 degrees C). Drop batter by rounded teaspoonfuls in hot oil, and fry until golden brown. Cook in small batches to maintain oil temperature. Drain briefly on paper towels. Serve hot.

Stir in 1 beaten egg, 1/2 cup each buttermilk and corn kernels, 1 minced jalapeno, 4 minced scallions, and pepper to taste. Deep-fry spoonfuls of the batter in 350 degrees F vegetable oil until golden, 2 to 3 minutes.
