  • RINSE and blot chicken; CUT chicken into 8 pieces (or 10 pieces with breast portions cut in half); MIX 2 quarts (8 cups) cups cold water with 2 tablespoons Morton Lite Salt (OR 2 tablespoons fine sea salt), and 2 teaspoons Accent seasoning in a large container with an accompanying lid, until dissolved; ADD chicken pieces; COVER and transfer to refrigerator; MARINATE chicken at least 4 hours in refrigerator. NOTE: FOR A QUICKER STOVETOP MARINATION METHOD, PIERCE CHICKEN PIECES WELL WITH A FORK, THEN HEAT THE MARINADE WITH CHICKEN, COVERED, OVER LOW HEAT UNTIL HEATED THROUGH, TURNING ONCE).
  • MEASURE the BASE MIXTURE and 11 SECRET HERBS AND SPICES into a large re-sealable container; BREAK up any clumps (and nonfat milk granules) using the back of a spoon; SEAL the container with mixture; SHAKE to mix well; OPEN container and add the BREADING FLOUR (2 cups unbleached bread flour), then seal the container again; SHAKE well until thoroughly combined.
  • REMOVE chicken from brine; PLACE one piece chicken at a time into the breading mixture container; SEAL container firmly; SHAKE chicken gently in all motions to thoroughly coat chicken until evenly and generously breaded; PLACE breaded chicken piece onto a rack to rest; REPEAT with remaining pieces chicken; ALLOW breaded chicken to absorb the breading for a few minutes before frying.
  • ADD the manufacturer's recommended amount frying oil for deep-frying; PLACE deep-fryer basket into place in deep-fryer; PREHEAT fryer to 315°F (or preheat enough fat to immerse chicken completely in deep heavy stovetop pot between 315°F to 325°F, using a standard deep-fryer thermometer to gauge).
  • CAREFULLY drop each piece breaded chicken one at a time, gently into the deep-fryer basket without crowding (if a standard size home fryer is used, add no more than 2-3 pieces at a time); (if stovetop frying, gently place breaded chicken pieces into hot oil using tongs, turning once halfway through frying duration).
  • FRY chicken between 15-18 minutes until golden brown and fully cooked, depending on chicken portions/sizes (juices should run clear when chicken is done); BLOT chicken lightly to absorb excess oil; PLACE cooked chicken into a large resealable container to steam (the steam will soften the breading for added Original Recipe authenticity. If you prefer crisp breading, skip this procedure).
  • MAINTAIN frying fat temperature for each new batch and repeat the same cooking/steaming procedures for the remaining chicken.
  • REHEAT chicken if necessary before serving in a microwave oven, using a reduced-power setting, as if reheating 2 frozen pastries, pausing in intervals to turn chicken for even heating if necessary.

2 -4 lbs premium quality fresh chicken livers
4 cups cold water
1 tablespoon fine sea salt
1 teaspoon Accent seasoning (recommended flavor enhancer)
2 cups pre-sifted all-purpose flour
1/2 cup seasoning (Bulk KFC Original Recipe Seasoning (Copycat))
vegetable oil or pure vegetable shortening

Steps:

  • MARINATE chicken livers at least 2 hours in refrigerator, in blended BRINE ingredients: 4 cups cold water, 1 tablespoon fine sea salt, 1 teaspoon Accent seasoning; COVER; TURN chicken livers periodically with tongs during marination.
  • MEASURE 2 cups flour and 1/2 cup Recipe #453973 (one batch without added flour) into a large sealable container, such as a GLAD food storage container or a Ziploc bag.
  • SHAKE container and mix well.
  • REMOVE chicken from brine with tongs; RINSE or soak chicken in very warm water.
  • PLACE a few pieces breaded livers at a time into the SEASONED FLOUR mixture container; SEAL container firmly; SHAKE gently in all motions to thoroughly coat livers.
  • PLACE breaded pieces on a wire rack when livers are evenly and generously breaded.
  • ALLOW chicken livers to rest and absorb the breading for a few minutes before frying.
  • PREHEAT the manufacturer's recommended amount frying oil in your deep-fryer between to 315°F (OR) preheat enough fat to immerse chicken completely in deep heavy stovetop pot to 315°F (use a deep-fryer thermometer to gauge).
  • ADD breaded chicken livers to the elevated fry basket in deep-fryer without crowding; LOWER the basket slowly into the hot oil; TURN livers only once midway, frying until golden brown and fully cooked, about 10-12 minutes. DRAIN on a wire rack over a paper towel-lined baking sheet; TRANSFER rack over a baking sheet and keep chicken livers warmed in a preheated 170°F oven until serving.

  • PREHEAT manufacturer's recommended amount of pure shortening or vegetable oil (or a blend of both) in deep-fryer to 315°F (OR) preheat enough fat to immerse chicken completely in deep heavy stovetop pot to 315°F - 325°F (use a heat-safe thermometer to gauge).
  • PLACE breaded chicken to the elevated fry basket in deep-fryer without crowding; LOWER the basket slowly into the hot fat (or gently lower breaded chicken pieces using tongs into stovetop pot, turning once halfway through frying duration).

The Colonel also had a Roasted chicken that was mighty tasty. The chicken was marinated also and then baked with his famous seasonings. The baking process was long it takes 4 hours to bake it. It is baked at 225 for 2 hours till the internal temp was at 175. But for you at home I have updated this to be baked at a higher temperature and be prepared in less time.

COPYCAT KFC CHICKEN SEASONING

There was a book of KFC recipes in my e-cookbook collection. Most of them called for ingredients I don't use and being a vegetarian I don't eat chicken. But this seasoning looks good; it originally called for adding 1/8 tsp MSG but I opted not to include it. This would probably work nice for tofu chunks and veggies like greenbeans and asparagus for us vegetarians and vegans, the omnivorous types would probably like to make some health-ified chicken with this. This yields about 4 teaspoons, a small spice-rack sized bottle.

6 5-6″ Foil Pot Pie Tins
1 Rotisserie Chicken or Fried Chicken
2 sheet Puff Pastry Dough
4-5 Potatoes
4-5 Carrots
2 cup Frozen Peas
2 can Cream of Chicken Soup
15 oz Milk
1 tsp Sugar
Salt and Pepper (to taste)

Steps:

  • Pick meat from bones and cut into bite size pieces. Peel and cut potatoes into 1/2″ cubes. Peel and slice carrots into 1/4″ slices. Remove pastry from box and thaw at room temperature. Boil potatoes and carrots in water until almost tender. Drain liquid, add frozen peas and set aside. In a large pot, add soup, milk, and sugar. Mix well and simmer. Preheat oven to 400. Add chicken and vegetables to the sauce and simmer until warm, stirring frequently. Spoon mixture into each pie tin, Do not over fill. Cut pastry into 6″ circles and then roll slightly to make sure crust will overlap rim. Moisten edges of pastry and cover each tin pressing edges to the rim. Bake at 400 18 minutes.

4 chicken drumsticks
1/2 cup milk
2 eggs
2 1/2 cups flour
1/3 cup onion powder
1/3 cup garlic powder
1 tablespoon salt
1 tablespoon pepper
1/3 cup paprika
3 cups vegetable oil

Steps:

  • Put the eggs and the milk into one bowl and mix them.
  • Put the flour, garlic, powder, onion powder, salt, pepper, and paprika into a bowl and mix.
  • Take the chicken with the skin on it and dip it into the egg wash (an egg wash is milk and egg mixed).
  • Then dip it in the flour.
  • Then dip it in the egg wash one more time.
  • Then dip it in the flour one more time.
  • Heat the oil in a pot (test the oil by putting a piece of egg wash and flour into it if it sizzles and rises to the top that means the oil is hot enough for the chicken).
  • Put the chicken into the oil and cook it for 15 mins.
  • When the chicken is golden brown its good if not cook it more.
  • Enjoy.

1 Tbsp oregano, dried
1 Tbsp sage, dried
1 Tbsp rosemary, dried
1 Tbsp onion powder
1 Tbsp garlic powder

2 Tbsp chicken bouillon
3 Tbsp brown sugar
1 tsp black pepper
1 tsp marjoram, dried
1 tsp ginger
1 tsp thyme

Steps:

  • 1. Combine all ingredients and mix well. Add 2 Tablespoons of mix to 1 cup flour for coating chicken before frying.
  • 2. Coat the chicken in the flour mixture, then egg wash, then flour again. I fried it on all sides in a large fry pan, then finished in the oven for 30 minutes at 350 degrees.

Number Of Ingredients 13

2 cups flour
2 tablespoons salt
2 tablespoons pepper
4 tablespoons paprika
1 teaspoon garlic salt
1 tablespoon dry mustard
1 tablespoon French thyme, ground
1 tablespoon dried sweet basil, ground
1 teaspoon oregano, ground
1 tablespoon Jamaica ginger, ground (regular ground ginger will work too)
2 cups buttermilk
2 2 1/2- 3 lb. chickens, cut into 8 pieces each
Vegetable oil for frying (canola and peanut oil work too)

Steps:

  • Mix dry ingredients in large bowl. Set aside. Put chicken and buttermilk in two large plastic Ziploc bags or a flat dish and marinate in the refrigerator for at least two hours, turning every 30 minutes. This tenderizes the meat as well as removes any blood. When ready to cook, remove chicken pieces from buttermilk, shake off excess liquid. Toss with dry ingredients. The chicken should be lightly covered, but it's okay if there are a few missed spots. You can also shake chicken with the dry ingredients in a large Ziploc bag. Fill a large, heavy bottomed skillet or deep pot with enough oil to cover halfway up the largest piece of chicken. Heat oil to 325-350 degrees. If you don't have a cooking thermometer, wait for small bubbles to form. Adjust heat so the oil bubbles are steady but not too rapid. Working in two or more batches, place the coated chicken in the hot oil. After about eight minutes, the chicken will be golden brown underneath. Turn over once and cook for an additional eight minutes or until nicely browned on both sides. The cooking process will agitate the pieces slightly, so you don't need to shift them around in the pan. After frying, place chicken on a metal sheet tray covered in a paper towel and transfer to 200-degree oven to keep warm until serving. The chicken will stay moist for up to an hour.

Even though KFC tried to crack down and do some damage control to protect their secret, the leaked recipe is reportedly pretty spot-on when it comes to replicating the taste KFC fans hate to love. And that's it, exactly as written, on the back of the note stored in a KFC safe. According to the Chicago Tribune, when they tried the recipe with a few updated modifications to the method of cooking, it was pretty spot-on.

Steps:

  • KFC uses pressure cookers to fry chicken, which can be risky to do at home. If you are using a deep fryer, fry a few pieces at a time for about 20 minutes, covered, turning occasionally. Likewise, if pan frying, cook covered, turning occasionally for about 30 minutes As always with chicken, check the middle of a large piece to check for doneness. Allow to drain on paper towels when cooking is completed.
  • Allow chicken to soak in salted water for 30 minutes. Mix egg and milk in a bowl. Mix flour, and all (12) other seasonings, in another bowl.
  • Preheat deep fryer to 350 F, or place 3/4 inch oil in a skillet over medium heat.
  • Dry chicken with a paper towel. Dredge in flour mixture. Dip into milk-egg mixture, then back into flour mixture. Do this one piece at a time making sure that there is total coverage over entire surface of chicken in each step. ENJOY
