This recipe from the Florida Keys has been given to almost everyone I know. It is the best marinade for chicken, and it only takes 30 minutes from prep till you can grill! It's a great blend of flavors with honey, soy sauce, and lime juice. If you have time, try marinating overnight for the fullest flavor.

3 tablespoons soy sauce
1 tablespoon honey
1 tablespoon vegetable oil
1 teaspoon lime juice
1 teaspoon chopped garlic
4 skinless, boneless chicken breast halves

Steps:

  • In a shallow container, blend soy sauce, honey, vegetable oil, lime juice, and garlic. Place chicken breast halves into the mixture, and turn to coat. Cover, and marinate in the refrigerator at least 30 minutes.
  • Preheat an outdoor grill for high heat.
  • Lightly oil the grill grate. Discard marinade, and grill chicken 6 to 8 minutes on each side, until juices run clear.

The flavors of summer come alive in these colorful grilled kebabs, complete with a kick of heat from the Sriracha and sweetness from honey. If using wooden skewers, soak in water for 30 minutes prior to using to prevent burning. Serve over rice and garnish with lime zest if desired.

¼ cup honey
2 tablespoons Sriracha sauce
1 tablespoon lime juice
8 large metal skewers
1 pound skinless, boneless chicken thighs, cut into 1 1/2-inch pieces
1 red sweet pepper, cut into 1 1/2-inch pieces
1 medium zucchini, cut into 1 1/2-inch pieces
½ small fresh pineapple, cored and cut into 1 1/2-inch pieces
1 medium red onion, cut into 1 1/2-inch chunks
2 tablespoons olive oil
salt and freshly ground black pepper to taste
1 pinch garlic powder, or more to taste
1 teaspoon lime zest

Steps:

  • Preheat an outdoor grill for medium-high heat and lightly oil the grate.
  • Whisk honey, Sriracha sauce, and lime juice together in a small bowl. Set aside.
  • Thread chicken, red pepper, zucchini, pineapple, and red onion alternately onto skewers and place on a platter. Brush with olive oil, then season with salt, pepper, and garlic powder.
  • Arrange skewers on the hot grate. Close lid and reduce heat to medium. Grill until chicken is cooked through, turning skewers every few minutes, 15 to 20 minutes. Brush glaze on all sides of skewers during the last 2 to 3 minutes, turning to lightly caramelize glaze. Transfer to a serving platter and grate lime zest on top. Serve warm.

4 chicken breasts, boneless skinless, cut into bite size pieces
3 tablespoons soy sauce
2 tablespoons honey
1 tablespoon vegetable oil
1 lime, juiced
1 teaspoon garlic, minded

Steps:

3 tablespoons soy sauce (or coconut aminos)
2 tablespoons raw organic honey
1 tablespoon olive oil
zest of one lime
juice of one lime
3 garlic cloves, peeled
1-inch piece fresh ginger, peeled and roughly chopped
2 tablespoons Sriracha sauce (store bought or homemade)
1 teaspoon fine grain sea salt
2 lbs / 900 gr free-range organic chicken breasts, cut into 1 1/2-inch chunks
handful fresh cilantro, chopped

Steps:

  • In a blender, combine soy sauce, honey, olive oil, lime zest, lime juice, garlic, ginger, Sriracha and salt. Blend until completely smooth. In a shallow sealable container or in a large Ziploc bag, combine chicken chunks and marinade. Cover or seal and marinate in the refrigerator for at least 30 minutes (marinate overnight for fullest flavor). Heat a grill or a grill pan to medium-high (if you're using an outdoor grill lightly oil the grill grates). Grill the chicken kebabs, until golden brown and cooked through, about 6 to 8 minutes turning regularly, until juices run clear. Transfer kebabs to a platter and top with chopped cilantro.
