Steps:
- Start by adding water and sugar to a medium saucepan and heating on high heat. Boil until sugar has fully dissolved stirring constantly. It typically takes about 2 minutes to dissolve. Take of the heat and place in the refrigerator until cool.
- Combine simple syrup mixture with the lime juice. Serve over ice. Garnish with extra slices of lime.

- Simple Syrup: In a saucepan bring the water and sugar up to a boil. Stir on occasion and cook until the sugar has dissolved. Cool the mixture down. Syrup can be stored in the refrigerator for up to two weeks. Lime Drink: In 4 drink size canning jars (or large glasses) put in a piece of lime slice and a couple mint sprigs. Add 40 ml of the simple syrup and 20 ml of the lemon/lime juice to each glass. Add ice cubes then add sparkling water to fill each glass to the top. Garnish each glass with a thin slice of lime and fresh mint.

- In a large saucepan, heat the sugar and 2 cups water until the sugar is dissolved and the mixture is hot. Allow to cool, and then place into a large drink dispenser or jug. Add the lemon juice and lime juice and stir. Fill with ice and top with 1 gallon (16 cups) cold water. Add the lemon and lime slices.

- Preheat oven to 350 degrees F (175 degrees C). Grease cookie sheets.
- In a large bowl, cream butter, sugar, egg, and egg yolk until smooth. Stir in lime juice and lime zest. Combine the flour, baking powder, and salt; blend into the creamed mixture. Form dough into 1/2 inch balls, and arrange on the prepared cookie sheet.
- Bake 8 to 10 minutes in the preheated oven, or until lightly browned. Cool on wire racks. Sift confectioners' sugar over cookies while still warm.

KEY LIME LEMONADE
I bought a bottle of key lime juice for Christmas to make a key lime pie. I noticed the expiration date is 20-15-2015. I only used a little ,so quite a bit is left.I was making lemonade this afternoon and decided to use some of the key lime juice,first I added half key lime,half lemon juice,but the key lime was so good,I added a bit more.It was delicious! So refreshing! Next Key lime squares. (like lemon squares)
