Been trying to make a great low carb bread for a long time. A lot of wasted ingredients. What I miss most about low carb, is a slice of rye toast. Not anymore! I finally got this right. And now that I did, I'll be able to use this recipe for other bread, including sweet breads.

Number Of Ingredients 8

3 c almond flour
2 tsp baking powder
1 tsp baking soda
1/4 tsp salt
1/2 c coconut oil
1/4 c coconut milk from can
3 eggs, whisked
1 Tbsp each dill weed & caraway seeds

Steps:

  • 1. In a medium size bowl mix all Your dry ingredients, except dill and caraway.
  • 2. Next add all the wet ingredients and mix well. After mixed add dill and caraway seed on top.
  • 3. In a greased 9in. Bread pan. Pour mix in and spread evenly. I like to add some more caraway seeds.
  • 4. Bake in preheated 300 degree oven for 1 hour. Remove and let cool before slicing
  • 5. Slice into 16 thin slices (Great for toasting) or 8 thicker slices. Thick slice 5 carb or 2 thin slices. I enjoyed My first slice slightly still warm with butter. Sooo good!

1 cup water
1 1/2 tablespoons canola oil
1 1/2 tablespoons unsulphured molasses
1 1/2 tablespoons honey
1/2 teaspoon liquid lecithin
2 1/2 cups whole wheat flour
1 cup rye flour
3 tablespoons whey powder
2 tablespoons gluten flour
2 teaspoons caraway seeds
1 1/2 teaspoons sea salt
1 teaspoon dried dill
2 teaspoons active dry yeast

Steps:

  • Put all of the ingredients in the bread machine in the order according to manufacturer's directions.
  • Select Basic Wheat cycle and Light crust setting.
