This easy keto cheeseburger casserole is filling and flavorful. It makes a wonderful low-carb alternative to a cheeseburger.

Olive oil spray (for the baking dish)
2 tablespoons olive oil
2 lb. extra lean ground beef
1 medium onion (finely chopped (6 oz))
2 teaspoons Diamond Crystal kosher salt (or 1 teaspoon fine salt)
1/4 teaspoon black pepper
1 tablespoon minced fresh garlic
1/4 cup avocado oil mayonnaise
1/4 cup unsweetened ketchup
1 tablespoon mustard
1 1/2 cup shredded sharp cheddar (divided (6 oz))

Steps:

  • Preheat your oven to 400 degrees F. Spray a 2-quart baking dish with olive oil.
  • Heat the olive oil in a large skillet over medium-high heat, about 2 minutes. Add the beef and the onions. Cook, stirring to break up the beef, until the meat is browned and the onion is soft, about 5 minutes.
  • If there are liquids at the bottom of the skillet, carefuly drain the mixture and return it to the skillet.
  • Stir in the kosher salt, black pepper, and garlic. Cook, stirring, 1 more minute.
  • Turn the heat off. Stir in the mayonnaise, unsweetened ketchup, mustard, and 1 cup cheddar.
  • Transfer the mixture to the prepared baking dish. Sprinkle with the remaining cheese.
  • Bake until the cheese is melted and the casserole is heated through, about 15 minutes. Or, if your baking dish is broiler-safe, broil the casserole 6 inches below the heating element (not directly below) until the cheese is melted, 1-2 minutes.

1 tbsp Avocado oil
1 large head Cauliflower
1/2 tsp Sea salt
1 cup Cheddar cheese ((shredded))
1/4 cup Heavy cream
2 lb Ground beef
2 tsp Sea salt
1/2 tsp Black pepper
1/2 cup Sugar-free ketchup ((or regular ketchup if not sugar-free))
2 tbsp Mustard ((or more if you love mustard!))
1 cup Cheddar cheese ((shredded))

Steps:

  • Rice the cauliflower using a food processor or box grater. (Learn more about how to make cauliflower rice here.)
  • Heat the oil in a large saute pan over medium-high heat. Add the cauliflower rice and sea salt. Stir fry until the cauliflower is cooked and a little browned, about 7-10 minutes.
  • Remove from heat. Stir in the cheddar cheese and heavy cream.
  • Transfer the mixture evenly to a 9 x 13 in (23 x 33 cm) glass casserole dish. Set aside.
  • Preheat the oven to 400 degrees F (204 degrees C).
  • Lightly wipe down the saute pan to remove any cauliflower pieces, and add the ground beef. Season with sea salt and black pepper. Cook the ground beef until browned, about 10 minutes. Drain if needed.
  • Sprinkle the ground beef evenly over the cauliflower in the casserole dish.
  • Drizzle the casserole with ketchup (you can make your own sugar-free ketchup like this, or store bought is fine if you are not strictly sugar-free) and mustard. Sprinkle with shredded cheese.
  • Bake for about 10 minutes, until casserole is hot and cheese melts.

1 tbsp minced garlic
2 lbs lean ground beef (or ground turkey to mix things up)
3 oz cream cheese, cubed
½ tsp salt
1 tsp onion powder
¼ tsp pepper
4 eggs
½ cup heavy cream
1 ½ cup shredded cheddar cheese, divided
2 tbsp mustard (or dijon mustard)

Steps:

  • Preheat oven to 375°F.
  • Grease your casserole dish, and set it aside.
  • Place a large pan or large skillet onto your stove at medium-high heat.
  • Drizzle in some olive oil, add the garlic and saute it until it becomes fragrant, which usually takes a couple of minutes.
  • Add the grass-fed ground beef and cook until brown. Drain the excess liquid and grease.
  • Mix in the cream cheese, salt, and pepper. Once you've combined those ingredients into your pan, stir them until the cream cheese has fully melted, and transfer the mixture to your greased baking dish.
  • Grab a medium bowl, add the eggs, heavy whipping cream, mustard, and 1 cup of shredded cheddar cheese.
  • Use an electric mixer and mix it on medium-high until it's thoroughly combined, then pour the egg mixture on top of the beef mixture that's already in your casserole dish. Top it off with the remaining shredded cheddar cheese.
  • Place the casserole dish into the oven, baking until the edges are golden brown, which will take about 15-18 minutes. Once the sides are nice and golden, broil the casserole for 2 minutes then remove it from the oven, allowing it to cool for a few minutes.

1 teaspoon Olive Oil
1 pound Ground Beef
½ teaspoon Salt
¼ teaspoon White Pepper (ground)
5 ounces Bacon (diced)
1 small Onion (diced)
2 Dill Pickles (sliced)
¼ cup Sugar-Free Tomato Ketchup
¼ cup Yellow Mustard
¼ cup Low Carb Mayonnaise
2 tablespoons Worcestershire Sauce
1 teaspoon Garlic Powder
1 cup Cheddar Cheese (shredded)
3 large Eggs
1/4 cup Heavy Cream

Steps:

  • Preheat your oven to 190C/375F.
  • Place a large saucepan over high heat, add the oil, ground beef, salt, and pepper. Break the beef up and cook until browned, then remove from the heat.
  • Place the bacon into a nonstick frying pan over high heat and saute until crisp, drain off the fat and add the bacon to the beef mixture.
  • Add the onion, pickles, ketchup, mustard, mayonnaise, Worcestershire, garlic powder, and half the cheddar into the beef mix. Mix well.
  • Add the beef mixture to a casserole dish.
  • In a bowl, whisk together the eggs and cream, pour over the beef mixture.
  • Top with the remaining cheddar and bake for 30 minutes.
  • Serve immediately.
