A Deliciously Cheesy, Bacon loaded Keto Cauliflower Bake that's so easy and affordable to make it will become a regular at the dinner table. Not only for Low-carb people but the best way to cook cauliflower for sure.

1 whole Cauliflower
2 cups Mozzarella (shredded)
1/2 cup Cheddar (Aged Tasty)
1 cup Sour Cream
7 oz Bacon
1/2 medium Onion (sliced)
1 tbsp Italian Herb Mix
2 tsp Garlic Powder

Steps:

  • Preheat the oven to 180C/355F.
  • Break the cauliflower up into florets and blanch for 5 minutes (boil then quickly run under cold water) and drain well.
  • Add the cauliflower to a baking dish.
  • Add the sour cream and coat the cauliflower with it evenly.
  • Add half of the mozzarella and mix well.
  • Cut the bacon into strips and add on top, followed by the onion, herbs and garlic powder.
  • Add the rest of the mozzarella followed by the grated cheddar.
  • Bake for 25 minutes until golden.
  • Remove from the oven and serve hot!

Crispy, crumbled bacon, chopped green onions, and cheddar cheese are mixed in fluffy cauliflower faux-tatoes.

3 tablespoons butter
2 garlic cloves, minced
1 head of cauliflower, chopped into florets
1 cup turkey stock or chicken broth
2 oz cream cheese
1/2 cup parmesan cheese
½ teaspoon salt
⅛ teaspoon black pepper
1 1/2 cups shredded cheddar cheese
6 slices cooked bacon, crumbled
1/4 cup chopped green onions
2 tablespoons ground pork rinds

Steps:

  • Preheat oven to 400 degrees
  • Melt butter in a large skillet over medium heat.
  • Add garlic and sauté until fragrant, about 1 minute.
  • Pour in cauliflower florets and chicken broth. Simmer on medium heat until cauliflower is tender, about 5-8 minutes.
  • Drain fluid. Squeeze out excess fluid from the cauliflower by placing it between two paper towels. For thick mashed cauliflower, try to get as much fluid out as possible.
  • In a food processor or blender, combine the cooked cauliflower, cream cheese, 1/4 cup parmesan cheese, salt and pepper. Puree until smooth.
  • Add cheddar cheese, bacon, and green onions to the mashed cauliflower. Stir to combine. Transfer to a casserole dish and top with remaining parmesan cheese. Sprinkle ground pork rinds on top.
  • Bake at 400 degrees for 20 minutes.

This creamy (healthy) alternative to traditional mashed potatoes is a hearty side for any main dish. I am not going to say it tastes "just like" mashed potatoes because it doesn't. But it's a clean and delicious side that will fill the mashed potato void none the less. See the post for alternative spice ideas and serving suggestions.

1 lb Cauliflower Florets (frozen is easiest because it's already cut.)
2 oz cream cheese (softened)
2 tbsp Butter
1/2 tsp Kosher Salt
1/4 tsp Black Pepper
1/2 tsp Garlic Powder
4 slices Bacon (cooked crispy and chopped)
3 oz Smoked Gouda Cheese (shredded)

Steps:

  • Place the cauliflower in a microwave safe dish with a lid on high for 8 minutes, or until soft. Remove from microwave and take off the lid to let steam escape. You want the cauliflower to dry out a bit. See the post for tips.
  • Transfer the cauliflower and all ingredients except bacon and cheese in a food processor or blender. Pulse until smooth and salt and pepper to taste if you need to. Add almond milk or heavy cream one tbsp at a time if you need more moisture to get it smooth.
  • The texture should be smooth. Transfer to an oven safe serving dish or six ramekins. Top with cheese and bacon. Broil for a couple of minutes to get a nice golden crust (watch it closely). See post for alternatives and tips for baked cauliflower mash (yum).

½ pound bacon, diced
1 large head cauliflower, cut into florets
1 cup shredded Parmesan cheese
4 tablespoons unsalted butter, at room temperature
2 tablespoons medium-chain triglyceride (MCT) oil
½ tablespoon apple cider vinegar
sea salt to taste

Steps:

  • Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, 5 to 10 minutes. Drain on paper towels, reserving grease in the skillet.
  • Place cauliflower in a metal or silicone steamer basket inside a multi-functional pressure cooker (such as Instant Pot®). Add 1 cup water to the pot. Close and lock the lid. Select Steam function; set timer for 4 minutes. Allow 10 to 15 minutes for pressure to build.
  • Release pressure carefully using the quick-release method according to manufacturer's instructions, about 5 minutes. Unlock and remove the lid.
  • Drain cauliflower and transfer to a deep bowl. Add Parmesan cheese, butter, MCT oil, vinegar, and salt. Mix with an immersion blender until smooth. Stir in diced bacon. Add 1 to 2 tablespoons of the reserved bacon grease.
