4 tablespoons butter, softened
4 tablespoons cream cheese, softened
¾ cup low-calorie natural sweetener (such as Swerve®)
1 egg white
1 teaspoon vanilla extract
3 cups blanched almond flour
1 pinch salt
4 tablespoons dark chocolate chips, melted

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Line 2 baking sheets with parchment paper.
  • Whisk butter, cream cheese, and sweetener together in a bowl with an electric mixer until creamy, about 3 minutes. Add egg and vanilla extract; whisk until smooth.
  • Combine almond flour and salt in a bowl; whisk into butter mixture, 1/2 cup at a time, until a crumbly dough is formed. Drop spoonfuls of dough 2 inches apart onto the prepared baking sheets; flatten with a spoon.
  • Bake in the preheated oven until golden, 15 to 17 minutes.
  • Remove and let cool on a wire rack. Once completely cool, drizzle with melted dark chocolate.

Still working on the perfect Keto cookie, I changed up my original recipe. This cookie comes out soft on the inside, so some might call it a biscuit cookie. Either way, it's great when you're not eating carbs.

Number Of Ingredients 7

1 1/2 cups almond flour
1/2 cup flax seed meal
1/4 cup artificial sweetener (I used Truvia, not calculated in nutritional totals)
2 ounces walnuts, chopped
1 teaspoon baking powder
4 egg whites
1 ounce butter, softened

Steps:

  • Preheat oven to 350°F
  • Combine and mix all dry ingredients.
  • Add softened butter and rub into dry ingredients until even (produces a slightly grainy texture).
  • Add egg whites and mix well.
  • Using a leveled tbsp, plop dough onto parchment paper. Press each cookie down with a fork. You can use your fingers to fix the shape.
  • Bake 18-20 minutes depending on desired -- brown-ness I guess. I like mine darker, so 20 minutes is good and still gives you a soft middle.
  • Remove to cool on a wire rack and munch away.
  • Notes: I used natural almond flour, not blanched, so my cookies are dark to begin with. I think either would be fine for the recipe.
  • I suggest melting some dark chocolate and dipping the cookies in half way for extra yumminess. Lindt 85%, 90% or even 99% would be good depending on your needs.
  • Totals per cookie: 63 Calories, 5g Fat, 3g Protein, 2 Carbs, 1 Fiber, .73 Net Carbs. If you count Truvia, net carb is 2.33g per cookie.

Steps:

  • In food processor, place almond flour, coconut flour, sugar replacement and salt. Pulse until combined. Add butter, cream cheese and almond extract; pulse 8 to 10 times or until dough begins to come together. Remove dough; shape into flattened disk. Wrap in plastic wrap; refrigerate about 1 1/2 hours or until firm.
  • Heat oven to 350°F.
  • Place chilled dough between two pieces of parchment paper; roll into 10x8-inch rectangle, about 1/4-inch thick. Peel top piece of parchment paper off dough.
  • Cut into 8 rows by 4 rows. Place rectangles 1 inch apart on ungreased large cookie sheets. Prick with fork, if desired.
  • Bake 8 to 10 minutes or until edges are golden brown. Cool on cookie sheet 2 minutes; remove from cookie sheet to cooling rack. Cool completely, about 15 minutes.

1 cup almond flour
1/4 cup coconut flour
1 stick (8 tablespoons) unsalted butter, at room temperature
1/2 cup erythritol (see Cook's Note)
2 ounces cream cheese, at room temperature
1/2 teaspoon almond extract
1 large egg
1/2 cup sliced almonds

Steps:

  • Mix together the almond and coconut flours in a small bowl.
  • Combine the butter and erythritol in a medium bowl and beat with an electric mixer until light and fluffy, 2 to 3 minutes. Add the cream cheese and continue to beat until smooth, about 1 minute more. Add the almond extract and egg and beat until combined. Add the flour mixture and continue beating until just combined and smooth. Gently fold in the almonds.
  • Place the mixture onto a piece of parchment or wax paper and, using the paper, mold the dough into a log. Wrap the log in plastic wrap and refrigerate until firm, at least 1 hour.
  • Position an oven rack in the center of the oven and preheat to 350 degrees F. Line a baking sheet with parchment.
  • Slice the dough into 1/2-inch-thick slices and place on the prepared baking sheet. Bake until the edges are golden brown, 18 to 20 minutes. Let cool before serving; the cookies will firm up as they cool.
