1/2 cup Worcestershire sauce
1/2 cup apple cider vinegar
2 tablespoons packed light brown sugar
1 tablespoon fresh lemon juice
1/4 teaspoon ground allspice
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
Kosher salt and freshly ground pepper

Steps:

  • Combine 4 cups water, the Worcestershire sauce, vinegar, brown sugar, lemon juice, allspice, garlic powder, onion powder, 1 1/2 teaspoons salt and 1/2 teaspoon pepper in a medium saucepan. Bring to a boil, then reduce the heat to medium low and simmer 5 minutes.

1/4 cup Worcestershire sauce, plus
2 tablespoons Worcestershire sauce
1 teaspoon paprika
1 teaspoon dry mustard
3/4 teaspoon garlic salt
3/4 teaspoon onion powder
1 1/2 teaspoons red peppers
3/4 teaspoon pepper

Steps:

  • Combine all ingredients in a large saucepan, mixing well.
  • Bring to a boil; reduce heat to medium.
  • Cook, uncovered, 20 minutes, stirring occasionally.
  • Use sauce to baste chicken or ribs.

1 large onion, sliced
30 garlic cloves, crushed
Juice&grated zest of 1 lemon
2 cups Kentucky bourbon
1 tsp black pepper
2 tsp dry mustard
2 tsp onion powder
2 tsp chile powder
1 tbs salt
1/2 cup tomato paste
4 cups ketchup
1/2 cup cider vinegar
1/4 cup pineapple juice
1 granny smith apple peeled/diced
1/4 cup liquid smoke
1/2 cup Worcestershire sauce
2/3 cup dark brown sugar
1/3 cup molasses
1/4 tsp tabasco
2 dashes bitters

Steps:

  • In 4 quart pot combine onion, garlic, lemon zest & bourbon. Bring to a simmer over medium heat, reduce the heat to maintain a simmer and cook until onion is translucent about 10 min. Stir in lemon juice, pepper, Chile powder, mustard, onion powder, salt tomato paste, ketchup, vinegar, pineapple juice, apple, liquid smoke, Worcestershire sauce, brown sugar, molasses, Tabasco & bitters gently simmer for 30 minutes. Remove from heat and puree in a blender.
