4-Cheese Spinach-Artichoke Dip image

This is my first submitted recipe. I have tried many other spinach dip recipes from this website, but felt like something was missing or they were too "Alfredo-ey." So I modified the recipes I found to eliminate the Alfredo sauce and substituted in the cheeses I had on hand. Voila! A delicious recipe that I felt proud to share with my fellow cooks. Serve with chips or veggies. I hope you enjoy!

2 tablespoons salted butter
1 (16 ounce) bag fresh spinach, chopped
½ cup chopped marinated artichoke hearts
2 tablespoons diced onion
1 teaspoon bottled minced garlic
1 teaspoon ground black pepper
½ teaspoon salt
½ teaspoon red pepper flakes
½ (8 ounce) package cream cheese, softened
¼ cup grated Parmesan cheese
2 ounces processed cheese food (such as Velveeta®), cubed
2 ounces horseradish Cheddar cheese

Steps:

  • Melt butter in a large pot over medium heat. Add spinach, artichoke hearts, and any marinade oil that remains after chopping them. Add onion, garlic, pepper, salt, and red pepper flakes; cook, stirring regularly so it doesn't burn on the bottom, until spinach has wilted and mixture is wet, about 3 minutes.
  • Reduce heat to low and add cream cheese, Parmesan cheese, processed cheese, and Cheddar cheese. Stir occasionally and allow to simmer, uncovered, until cheeses have melted and some of the water from the spinach has cooked off, about 3 more minutes. This allows the herbs and spices to infuse their flavor into the dip. Serve hot.

1 (15 ounce) jar alfredo sauce
3 bricks cream cheese
approx 2 cups frozen chopped spinach (1 bag)
2 tablespoons Worcestershire sauce
2 tablespoons cajun seasoning
1 1/2 cups mozzarella cheese, shredded
1 1/2 cups cheddar cheese, shredded
15 pieces naan bread
2 tablespoons chili powder
1 tablespoon garlic powder
2 -3 tablespoons olive oil

Steps:

  • Preheat oven to 350 F.
  • Soften cream cheese in microwave, stir until smooth, add jar of alfredo sauce, Cajun seasoning, Worcestershire sauce, and 1/2 of the shredded cheese. Drain spinach and add.
  • Place mixture in 8x8 baking dish, top with remaining shredded cheese. Bake for 20 minutes or until cheese on top is bubbly.
  • Cut Naan bread into wedges, place in large mixing bowl and add olive oil, toss until coated. Sprinkle on chili and garlic powder and toss. Place on baking sheet and bake for last 10 minutes with dip.
  • Enjoy!

1 Package of cream cheese
1/4 cup fresh grated parm
2 tbsp. fresh grated romano
1/4 medium red pepper, minced
1 shallot minced
1 green onion minced
1/2 tsp. garlic powder
1/2 block frozen chopped spinach, thawed and drained well
shredded cheddar cheese to sprinkle on top

Steps:

  • Mix parm, romano, cream cheese & garlic powder well. Add chopped veggies. Then add spinach. Mix well. Put into a shallow baking dish so that the dip is no more than about an inch deep. Sprinkle shredded cheddar on top. Bake at 400 degrees for about 20 minutes or until bubbling. Serve with tortillia chips or pita triangles. Delish!

This recipe doesn't contain mayo or sour cream like most, so it's very cheesy and very delicious. I'm asked for the recipe every time I make it. For those who don't want a strong cheese like Cheddar, you can replace it with anything you like or even leave it out altogether. I like adding the Cheddar because it adds color and a little more flavor.

1 tablespoon olive oil, divided
1 small onion, finely chopped
2 cloves garlic, minced
2 (10 ounce) packages frozen spinach - thawed, drained, and chopped
½ cup milk
6 ounces cream cheese
½ cup shredded mozzarella cheese
¼ cup shredded Cheddar cheese
2 dashes Worcestershire sauce
salt and ground black pepper to taste
½ cup shredded mozzarella cheese

Steps:

  • Preheat oven to 425 degrees F (220 degrees C). Grease a 1 1/2-quart shallow baking dish with 1 teaspoon olive oil.
  • Heat 2 teaspoons olive oil in a large pot over medium heat. Cook and stir onion and garlic in hot oil until lightly browned, 4 to 7 minutes. Add spinach and simmer until spinach is hot, about 5 minutes. Drain any liquid from the mixture and transfer to a bowl.
  • Pour milk into pot and return pot to medium heat. Melt cream cheese into the milk; cook and stir together about 3 minutes. Return spinach mixture to pot with 1/2 cup mozzarella cheese and Cheddar cheese; stir to combine. Season the mixture with Worcestershire sauce, salt, and pepper. Pour the mixture into the prepared baking dish and top with 1/2 cup mozzarella cheese.
  • Bake in preheated oven until bubbly and golden brown on top, 20 to 25 minutes.

8 ounces cream cheese
3/4 teaspoon garlic powder (not garlic salt)
1/4 cup freshly grated parmesan cheese
1 tablespoon not packed freshly grated romano cheese
1 tablespoon very finely chopped sweet red pepper
1 green onion, white and green finely chopped (scallion)
0.5 (16 ounce) package frozen chopped spinach, thawed and squeezed dry
1/2 cup grated medium cheddar
1 pinch cayenne pepper (optional)

Steps:

  • Preheat oven to 400°F.
  • Mix first 4 ingredients with hand or stand mixer on medium until softened and well mixed.
  • Add next two ingredients and mix on med-low until just incorporated.
  • Add spinach and mix on low until just incorporated.
  • Transfer mixture to a small ovenproof dish and sprinkling cayenne on top to taste. Top with cheddar. Bake for 15 - 18 minutes or until bubbling around the edges.
  • Remove from oven and allow to set for 5 - 7 minutes before serving. Serve with fried or baked pita wedges and tortilla chips.
