Best Broccoli Salad Ever! image

This is a delightful, cool, and crisp salad with healthy fruits, vegetables, and nuts that is a great accompaniment to any entree. It's a real favorite with anyone who tries it. This is a fun recipe as you can get creative with it. I have even made it with out the sunflower seeds, and it was still delicious.

Time 20m

Yield 12 servings

Number Of Ingredients 12

6 slices bacon
3 medium heads broccoli, cut into florets
4 scallions, thinly sliced
1 cup diced red onion
4 cups red grapes, halved
1/2 cup mayonnaise
1/4 cup sugar
2 tablespoons milk
1 tablespoon white vinegar
Kosher salt and freshly ground black pepper
1 1/2 cups shredded mozzarella
1/2 cup sliced almonds

Steps:

  • Add the bacon to a large skillet and cook over medium-low heat, flipping it as needed, until all the fat has rendered, about 8 minutes. Transfer the bacon to a paper towel-lined plate. Let cool, then crumble.
  • Meanwhile, stir together the broccoli, scallions, onions and grapes in a large bowl.
  • Whisk together the mayonnaise, sugar, milk and vinegar in a medium bowl. Taste and season the dressing with salt and pepper.
  • Add the dressing to the salad, toss to combine and then stir in the mozzarella, almonds and crumbled bacon. Serve immediately or cover and refrigerate until ready to serve, ideally, up to 1 day in advance.
