1 cup Peanut Butter (sugar free, see post)
8 ounces Cream Cheese
3/4 cup Sugar Free Powdered Sugar
8 ounce Whipped Topping (tubbed, sugar free if possible)

Steps:

  • Make or purchase a sugar free crust. Allow the crust to fully cool.
  • In a large mixing bowl, combine together the peanut butter, cream cheese, and sugar free powdered sugar. Beat the ingredient until creamy.
  • Use a rubber spatula to fold in the whipped topping, scraping the sides of the bowl as needed.
  • Transfer the contents from the bowl to the pie crust. Evenly distribute the peanut butter filling. Then refrigerate until the filling is set (about 30 minutes).
  • Make the ganache by heating the cream until it bubbles, stopping to stir as needed. Pour the heavy cream over the chocolate chips and stir until creamy.Cover the peanut butter pie layer with the ganache and then place the pie into the refrigerator to set before serving.

1 3/4 cup Almond Flour
5 tablespoons Unsweetened Cocoa Powder (scoop and level method)
1 teaspoon Vanilla Extract
1/3 cup Erythritol
1/4 cup Coconut Oil
3 tablespoons Water
8 ounces Cream Cheese (lactose-free cream cheese or vegan cream cheese work as well)
3/4 cup Natural Peanut Butter (natural, no added sugar or oil)
1 teaspoon Vanilla Extract
1/3 cup Sugar-free Powdered Sweetener
3/4 cup Heavy Cream

Steps:

  • Grease a 9-inch round pie pan with butter or coconut oil. Set aside.
  • In a large mixing bowl, combine all the dry ingredients: almond flour, unsweetened cocoa powder, and erythritol.
  • Stir in melted coconut oil, water and vanilla, and combine until it is soft and sticks easily together. It shouldn't be overly wet but sticky. If too wet, add more almond flour. If too dry, add 1 tablespoon more water.
  • Press the dough with your fingers to evenly cover the bottom and sides of the pan. You can use the back of a spoon to smoothen the surface perfectly.
  • Place in the fridge while making the filling. This step will also harden the no-bake crust.

1 cup(s) peanut butter, creamy
3/4 cup(s) splenda
1 tablespoon(s) vanilla extract
12 ounce(s) cool whip
1 - pie crust

Steps:

  • FIRST, decide what kind of pie crust you want to use, if you use a store bought crust, check the sugar content, i have used, homemade, graham cracker and the frozen need to bake kind,
  • Mix the first 4 ingredients together using an electric mixer, then fold in cool whip, pour into crust, let chill 3 hours in fridge,

1 (9 inch) prepared graham cracker crust
1 (8 ounce) package cream cheese, softened
½ cup creamy peanut butter
½ cup confectioners' sugar
1 (16 ounce) container frozen whipped topping, thawed
15 miniature chocolate covered peanut butter cups, unwrapped

Steps:

  • Mix the cream cheese, confectioners' sugar and peanut butter together until smooth. Fold in 1/2 of the whipped topping. Spoon the mixture into the graham cracker crust.
  • Place the remaining whipped topping over the top of the peanut butter mixture and garnish with the peanut butter cups. Chill for at least 2 hours or overnight before serving.

My own creation,which is not only almost totally sugar-free, but lower in carbs. It's a wonderful, fattening tasting dessert which pleases even those who can have sugar! Tip: This dessert can also be layered in large dessert glasses, using the same layering as the pie, first layer is the 'crust', then pudding mix, topped with cool whip, drizzled with melted chocolate, and sprinkled with crushed peanuts.

1 1/2 cups pecans, finely chopped
4 tablespoons butter, melted
1 (1 1/2 ounce) package sugar-free instant vanilla pudding mix
1 (8 ounce) container Cool Whip, sugar free
1/2 cup Cool Whip
1 1/4 cups no-sugar-added peanut butter
2 cups 2% low-fat milk
2 semi-sweet chocolate baking squares, melted
1/4 cup peanuts, crushed

Steps:

  • Prepare one pecan crust.
  • Blend together the pecan, and melted butter.
  • Pack it firmly into a pie pan with your hand.
  • Bake in a 350°F oven until lightly brown.
  • Remove and cool.
  • Filling:.
  • Whisk together the pudding mix and milk until Creamy.
  • Add 1/2 cup Cool Whip, and the peanut butter. Mix throughly.
  • Pour into the baked, and cooled pie shell, cover with the rest of the Cool Whip.
  • Put in freezer for 1 hour to set.
  • Melt the two squares of chocolate.
  • Remove pie from freezer and drizzle with melted semi sweet chocolate, and the crushed peanuts.
  • Cover and chill 2 hours before serving.
