1 (15 ounce) can refried beans
1 (4 ounce) can green chiles
1 cup sour cream
1 (8 ounce) package cream cheese (softened)
2 tablespoons taco seasoning
1 cup salsa
1/2 cup sliced olives
1 cup shredded cheddar cheese
2 green onions (sliced)
5-6 thinly sliced grape tomatoes
Tortilla Chips for serving

Steps:

  • In a small mixing bowl, mix together refried beans and green chiles. Spread mixture into the bottom of a 9-inch pie plate or square baking dish.
  • Beat cream cheese, sour cream and half a packet of taco seasoning together until smooth and creamy. Spread into the bottom of dish over refried beans mixture.
  • Spread salsa on top of cream cheese mixture.
  • Top with cheese, olives, tomatoes and green onions.
  • Keep refrigerated until ready to serve. Serve with tortilla chips.

1 (1 ounce) package taco seasoning mix
1 (16 ounce) can refried beans
1 (8 ounce) package cream cheese, softened
1 (16 ounce) container sour cream
1 (16 ounce) jar salsa
1 large tomato, chopped
1 green bell pepper, chopped
1 bunch chopped green onions
1 small head iceberg lettuce, shredded
1 (6 ounce) can sliced black olives, drained
2 cups shredded Cheddar cheese

Steps:

  • In a medium bowl, blend the taco seasoning mix and refried beans. Spread the mixture onto a large serving platter.
  • Mix the sour cream and cream cheese in a medium bowl. Spread over the refried beans.
  • Top the layers with salsa. Place a layer of tomato, green bell pepper, green onions and lettuce over the salsa, and top with Cheddar cheese. Garnish with black olives.

This version of a game-day favorite, taco dip, is super simple to make. Even easier, make the beef-and-bean mixture a day ahead, then just reheat and top.

1 tablespoon vegetable oil
1 1/2 pounds ground beef
Half a 1.25-ounce packet taco seasoning mix, or 3 tablespoons homemade taco seasoning
2 tablespoons tomato paste
One 14.5-ounce can black beans, drained and rinsed
2 cups sour cream
2 cups shredded sharp Cheddar
1 large tomato, chopped
2 cups shredded iceberg lettuce
Sliced black olives and/or pickled jalapenos, optional
Tortilla chips, for serving

Steps:

  • Heat the oil in a large skillet over medium-high heat. Add the beef, and cook, stirring occasionally, until completely browned, 8 to 10 minutes. Pour off the excess grease, add the taco seasoning and stir until the beef is well coated. Add the tomato paste, and stir until it darkens to a dull brick red, about 30 seconds. Add 3/4 cup water, bring to a simmer and cook and until the mixture thickens, 2 to 3 minutes. Add the beans, and stir just to warm them through. Remove from the heat, and transfer to an 8-inch square baking dish.
  • Top the beef-and-bean mixture with an even layer of sour cream, then a layer of Cheddar. Sprinkle the tomatoes, lettuce and black olives and jalapeno if using on top. Serve with tortilla chips.

1 can (4-1/4 ounces) sliced ripe olives, drained, optional

Steps:

  • In a large bowl, beat the cream cheese, sour cream and chili powder until smooth; stir in salsa. Spread cream cheese mixture over a large serving platter. 2 pounds ground beef
1 large onion, chopped
1 can (14-1/2 ounces) diced tomatoes, undrained
1 can (12 ounces) tomato paste
1 can (15 ounces) tomato puree
2 tablespoons chili powder
1 teaspoon ground cumin
1/2 teaspoon garlic powder
2 teaspoons salt
2 cans (15 ounces each) Ranch Style beans (pinto beans in seasoned tomato sauce)
1 package (9-1/4 ounces) corn chips
2 cups hot cooked rice
TOPPINGS:
2 cups shredded cheddar cheese
1 medium onion, chopped
1 medium head iceberg lettuce, shredded
3 medium tomatoes, chopped
1 can (2-1/4 ounces) sliced ripe olives, drained
1 cup picante sauce, optional

Steps:

  • In a Dutch oven, cook beef and onion over medium heat until meat is no longer pink; drain. Add next 7 ingredients; cover and simmer for 1-1/2 hours. , Add beans and heat through. My ex sister in law made this one night when our family got together to play cards and it became a card playing tradition. It's so easy and I almost always have the ingredients in the house so it works for drop in guests also.

8 oz sour cream
1 lb hamburger
1 pkg taco seasoning mix
1 can(s) refried beans
1 jar(s) green taco sauce
3 c sharp cheddar cheese
1 bag tortilla chips

Steps:

  • 1. Brown hamburger. Add taco seasoning; mix well with refried beans. Layer in oblong cake pan. Mix sour cream and green taco sauce and put in as second layer.
  • 2. Grate cheese and top off. Cook 20 minutes at 350 degrees until warm and bubbly.

This taco dip is incredibly simple to make - so simple, it doesn't seem right that it can taste so good. We got this recipe from my friend Kathy, who altered a recipe she had found online. Whenever I make this, my DH asks me to make two so he can enjoy it again after the party. It gets gobbled up quickly no matter where we take it! The main key is to make this the day before and let it chill in the fridge overnight - allowing the flavors to meld together. Feel free to get creative with the ingredients!

1 1/4 ounces taco seasoning
16 ounces fat-free refried beans
16 ounces fat free sour cream
10 ounces mexicorn (canned)
15 ounces low fat guacamole (prepackaged)
16 ounces salsa
4 ounces green chilies
2 cups shredded monterey jack cheese or 2 cups monterey jack pepper cheese, blend
4 ounces sliced olives

Steps:

  • Mix refried beans, taco seasoning and 1-2 T salsa.
  • Spread in bottom of 13 x 9 inch pan.
  • Spread sour cream on top of refried beans - take all the way to edges.
  • Sprinkle corn on top of sour cream.
  • Spread guacamole on top of corn and sour cream - take to edges of pan.
  • Spread remaining salsa on top of guacamole - take to edges of pan.
  • Sprinkle chiles on top of salsa.
  • Cover entire dish with shredded cheese. Feel free to use whatever blend you prefer.
  • Sprinkle sliced olives on top.
  • Cover with plastic wrap and put in refrigerator.
  • Take it out of fridge approximately 1/2-1 hour prior to ready to eat. Serve with tortilla chips.
