This recipe is not vegetarian. This recipe is from the kitchen of a local Thai restaurant near my home town.

Number Of Ingredients 11

7 ounces ground lean pork
1 garlic clove, minced
1/2 teaspoon salt
6 cups chicken stock
1 lb firm tofu, cubed
1 cup bok choy, thinly sliced
1 tablespoon nam pla
1/2 teaspoon sugar
1/4 teaspoon white pepper
1 green onion, sliced (garnish)
2 tablespoons fresh cilantro leaves, minced (garnish)

Steps:

  • Combine the pork, garlic, and salt in a small bowl and mix until well blended. Set aside.
  • Bring the chicken stock to a boil in a large saucepan over medium heat. Using a small teaspoon, drop small bits of the pork mixture into the soup (like mini meatballs) and bring the mixture back to a boil again.
  • Add the tofu, bok choy, and season with the fish sauce, sugar and pepper. Simmer uncovered for 5 minutes before removing from heat.
  • Serve hot, garnished with the green onions and cilantro leaves.

4 -5 garlic cloves, minced
1 teaspoon vegetable oil
8 cups vegetable broth, hot
2 tablespoons soy sauce
1 (14 ounce) package firm tofu, cubed
4 cups chopped vegetables (I used green onions, broccoli, carrots, snowpeas, cabbage and baby bellas)
chopped fresh cilantro
fresh cracked pepper
hot sauce (optional)

Steps:

  • In a deep saucepan heat vegetable oil and sautee garlic until golden brown.
  • Add soy sauce and let it bubble and sizzle before adding the vegetable broth.
  • Bring to a boil.
  • Turn down heat and add the remaining ingredients.
  • Simmer for 5 minutes.
  • I like my vegetables crunchy.

2 1/2 cups vegetable broth
2 cups broccoli, in small florets
2 cups small shiitake mushroom caps, thickly sliced
1 cup carrot, thinly sliced
1 cup water
1 tablespoon reduced sodium soy sauce (gluten-free if need be)
1 teaspoon dark sesame oil
1/8 teaspoon ground ginger
1/8 teaspoon crushed red pepper flakes
8 ounces firm tofu, cut into 1-inch cubes
2 cups cooked rice (or less)
4 lime wedges
1/4 cup cilantro leaf

Steps:

  • In large saucepan, combine broth, broccoli, mushrooms, carrots, water, soy sauce, sesame oil, ginger, and crushed red pepper. Cover and bring to a boil over high heat.
  • Add tofu and rice to boiling soup; cover and cook 2 minutes, or until tofu and rice are heated through and vegetables are crisp-tender.
  • Serve soup with lime wedges and cilantro leaves.

2 tablespoons soy sauce
1/4 lb extra firm tofu, cubed
2 tablespoons olive oil
1 small sweet potato, cubed
1/4 cup raw cashews, chopped
1/4 lb broccoli floret
spinach leaves
1 (14 ounce) can coconut milk
1 cup vegetable broth
1/4 teaspoon turmeric
1/4 teaspoon cumin
1/4 teaspoon ginger
1/4 teaspoon curry powder
1/4 teaspoon garam masala
1/4 teaspoon cinnamon
1 dash cayenne

Steps:
