1 ounce celery
4 pieces lumpia skins
1 egg
1 tablespoon water

Steps:

  • Julienne carrots, green beans, and celery.
  • Shred kalua pig and season.
  • Wrap carrots, green beans, celery pork, and bean sprouts in lumpia wrapper using egg wash to seal.
  • Deep fry then cut each roll in half on a slant.
  • Serve with Tropical Salsa.

4-5 lb pork butt
3 tablespoons Hawaiian salt or kosher salt
2 tablespoons liquid smoke
8 ti leaves (or 2-3 banana leaves)

Steps:

  • Preheat oven to 350 degrees. Make several slashes along the surface of the pork butt. Rub with salt, then liquid smoke. Prepare ti leaves by removing the rib. Lay out a large piece of heavy-duty aluminum foil, and place 4 ti leaves on top. Place pork on leaves and wrap them around the pork. Cover with remaining leaves in the opposite direction until pork is completely wrapped. Wrap the foil tightly around the pork to make a watertight seal.
  • Place package in a large roasting pan. Fill with two inches of water and cover pan tightly with foil. Bake at 350 degrees for 1 hour. Lower temperature to 325 degrees F and cook for 3-3 1/2 hours or until tender. Unwrap pork from package and shred before serving.

1 quart canola oil
2 eggs
4 (1.5 ounce) milk chocolate bars
12 egg roll wrappers
48 large marshmallows, microwaved or 3 cups marshmallow fluff
1/4 cup powdered sugar
1/4 cup graham cracker crumbs, about 3 crackers crushed in resealable bag

Steps:

  • In a deep pot, heat oil to 380 degrees F. In a small bowl, beat egg.
  • Cut chocolate into 1/2-inch cubes. Take an egg roll wrapper, and brush edges with egg wash, and lay on a work surface, wash side up, with a point facing you, not a straight edge. Place about 2 ounces of chocolate 1 or 2 inches from the edge, and top with 1/4 cup of microwaved marshmallow or fluff.
  • Fold the corner closest you up and just over the filling, press lightly, then fold in the sides, making a little pull or tuck to keep the roll right. Then roll away from you and press to seal tightly. (Take care not to tear the egg roll wrapper. This can cause roll to leak while cooking. If tear occurs, pinch dough together until it reseals or discard wrap and use a new one.) Repeat until all egg rolls are formed.
  • Fry egg rolls 4 at a time, turning almost immediately, cooking on all sides to just golden brown, less than a minute. (Make sure not to overcook filling. If you see marshmallows start to ooze out before both sides are golden, filling will be overcooked and egg roll will appear hollow inside) Remove to a paper towel-lined plate and repeat until all cooked. Make sure to check your oil temperature between additions.
  • When ready to serve, dust with powdered sugar and graham cracker crumbs. Serve immediately, but caution very hot!

KAHLUA PIG SPRING ROLLS

1 ounce green beans
1 ounce celery
4 ounces cooked Kahlua pig, or roast pork
Salt and pepper
1 egg
1 tablespoon water
1 ounce bean sprouts
4 pieces lumpia wrapper
Pineapple Salsa, recipe follows
2 tablespoons diced ripe but firm papaya
1 Maui onion, diced
1 piece Hawaiian chile pepper, minced, or 1/4 teaspoon red chili flakes
4 mint leaves, chopped
1 teaspoon minced cilantro leaves
1 Maui pineapple, peeled, cored and small diced
1 tablespoon sweet Thai chile sauce
1 tablespoon sweet thick soy sauce
3 green onions, minced
2 tablespoons pineapple wine
1 tablespoon plum sauce
Pinch black pepper

Steps:

  • Julienne the carrots, green beans, and celery. Shred the Kahlua pig and season it with salt and pepper. Whisk together the egg and water to make the egg wash.
  • Wrap all ingredients, including bean sprouts, in lumpia wrappers, using egg wash to seal. Preheat a deep fryer or a heavy pot halfway filled with oil to 360 degrees F. Deep-fry the rolls until golden brown on all sides. Remove to a paper towel lined plate to drain.
  • Cut each roll in half on a slant. Serve with Pineapple Salsa.
  • Mix all ingredients together in a bowl. Serve with Kahlua Spring Rolls.

THE BIG EGG MONTE CRISTO

5 eggs
2 tablespoons sugar
Zest of 1/2 a lemon
1/4 teaspoon ground cardamom
Pinch salt
1/4 cup cream
1/2 teaspoon pure vanilla extract
4 pieces thick-cut brioche bread
Panko (Japanese) breadcrumbs
Butter, for frying
4 ounces Black Forest ham, thinly sliced
3 ounces Gorgonzola, crumbled
2 eggs
Pure maple syrup
Powdered sugar

Steps:

  • For the French toast batter: Whisk the eggs, sugar, lemon zest, cardamom, salt, cream and vanilla in a bowl until blended.
  • Dip the bread in the batter and cover all sides. Put the breadcrumbs on a plate and coat the dipped bread in the breadcrumbs.
  • Add butter to a pan on medium-high heat to melt and place coated bread in the pan.
  • Once it is golden brown, add more butter and flip the bread over. Remove the French toast from the pan once golden brown.
  • Pour the maple syrup on each piece of toast. Crumble Gorgonzola cheese on one piece of French toast per sandwich. Grill off the Black Forest ham and place on top of the cheese.
  • Cook an egg (any style) and place on top of the ham.
  • Put the other piece of French toast on top of the ham and dust with powdered sugar.
