1 pound bulk Italian sausage
4 cups half-and-half
3 cups cubed potatoes
2 cups low-sodium chicken broth
2 cups whole milk
1 onion, chopped
½ teaspoon dried oregano
½ teaspoon red pepper flakes, or more to taste
½ teaspoon ground black pepper
2 cups torn kale leaves (bite-size pieces)

Steps:

  • Heat a large soup pot over medium-high heat. Crumble sausage into pot; cook and stir until browned, about 10 minutes. Drain and discard grease.
  • Stir half-and-half, potatoes, chicken broth, milk, onion, oregano, and red pepper flakes into sausage, bring to a boil, and reduce heat to low. Simmer until potatoes are tender, about 30 minutes. Season with black pepper; stir kale into soup. Simmer until kale is tender, 10 to 15 more minutes.

2 tablespoons extra-virgin olive oil
1 onion, diced
¾ cup diced carrot
4 cloves garlic, minced
3 cups low-sodium chicken broth
2 cups water
1 cup white wine
3 potatoes, halved and sliced
½ teaspoon chopped fresh rosemary
½ teaspoon chopped fresh sage
½ teaspoon chopped fresh thyme
1 (16 ounce) can cannellini beans, rinsed and drained
2 cups finely chopped kale leaves
1 small red chile pepper, seeded and chopped fine
ground black pepper to taste

Steps:

  • Heat the olive oil in a large Dutch oven over medium heat; cook and stir the onion until softened and translucent, about 5 minutes. Stir in the carrot and garlic, and cook for 5 minutes more.
  • Pour in the chicken broth, water, and white wine; stir in the potatoes, rosemary, sage, and thyme. Bring to a boil over high heat, then reduce heat to medium-low, cover, and simmer until the potatoes are tender, about 20 minutes. 1/2 pound chouriço or linguiça (smoked Portuguese sausages) or kielbasa, cut into 1/2-inch pieces
1 medium onion, chopped
2 garlic cloves, minced
1 pound russet (baking) potatoes, peeled and cut into 1-inch pieces
6 cups water
1 pound kale, stems and center ribs discarded and leaves very thinly sliced
Accompaniment: piri-piri sauce or other hot sauce

Steps:

  • Heat 1 tablespoon oil in a 5-quart heavy pot over medium-high heat until it shimmers, then brown sausage, stirring often, 2 to 3 minutes. Transfer with a slotted spoon to a bowl. Add 2 tablespoon oil to fat in pot and cook onion and garlic with 1/4 teaspoon each of salt and pepper over medium heat, stirring often, until browned, 7 to 8 minutes.
  • Add potatoes, water, and 1 teaspoon salt and simmer, covered, until potatoes are very tender, 15 to 20 minutes. Mash some potatoes into soup to thicken, then add kale and simmer, uncovered, until tender, about 5 minutes. Stir in sausage and cook until just heated through, 1 to 2 minutes. 1 teaspoon salt

3 cups cubed sweet potato
1 bay leaf

Steps:

  • Heat olive oil in a large pot over medium-high heat. Add hot sausage, mild sausage, salt, and pepper; cook, breaking up sausage with the back of a wooden spoon, until no longer pink, about 5 minutes.

12 red potatoes, thinly sliced
1 1/2 pounds bulk Italian sausage
1 onion, chopped
4 cups low-sodium chicken broth
3 cups whole milk
2 cups half-and-half
1/2 teaspoon fresh or dried oregano
1/2 teaspoon red pepper flakes, or more to taste
Salt and freshly ground black pepper
Splash of heavy cream
2 bunches kale, picked over, cleaned and torn into bite-size pieces

Steps:

  • Bring a medium pot of water to a boil. Add the potatoes and boil until they're just starting to soften, then drain and set aside.
  • In a large pot, crumble and brown the Italian sausage with the onions over medium heat, about 5 minutes. Drain as much of the fat as you can (blotting the surface with paper towels helps). Add the chicken broth, milk, half-and-half, oregano and red pepper flakes to the pot with the sausage and onions, bring to a simmer and simmer for 30 minutes. Give it a taste and adjust the seasoning as needed with salt, pepper and more red pepper flakes if needed.
  • Add the potatoes and a splash of heavy cream for richness, then stir in the kale. Cover and simmer for an additional 10 minutes, then serve.

Steps:

  • In a kettle cook the garlic, the onions, and the carrot in the oil over moderately low heat, stirring, until the vegetables are softened. Add the russet potatoes, peeled and cut into 1-inch pieces, the broth, and 4 cups water, bring the liquid to a boil, and simmer the mixture, covered, for 10 to 15 minutes, or until the potatoes are tender. 1/2 cup dried cannellini beans
2 sprigs fresh rosemary
1 small onion, cut into quarters
1 head garlic
Salt
1/2 cup tubetti (small tube-shaped pasta)
1 tablespoons olive oil
2 small leeks, rinsed, white and light-green parts cut in half lengthwise and thinly sliced
1 sweet potato, peeled and cut into 1/2-inch cubes
1 bunch kale (3/4 pound)
6 cups Homemade Chicken Stock, or canned low-sodium chicken broth, skimmed of fat
1/2 teaspoon freshly ground black pepper

Steps:

  • Place beans in a large bowl, and cover with water. Let soak overnight, and drain.
  • Cut a 7-inch square of cheesecloth. Place 1 rosemary sprig at one end, and roll, enclosing sprig; secure with kitchen twine. Place beans, wrapped rosemary, onion, and 6 cups water in a large saucepan. Bring to a boil over medium-high heat. Reduce heat to a simmer, and cook until beans are just tender, about 25 minutes. Drain beans in a colander. Discard onion and rosemary; set beans aside.
  • Heat oven to 425 degrees. Wrap garlic in aluminum foil. Cook until soft, about 40 minutes. Remove garlic from oven, and allow to cool. Slice garlic in half crosswise, and squeeze, removing cloves; set cloves aside.
  • Bring a large stockpot of salted water to a boil over high heat. Add tubetti, and cook until al dente, about 8 minutes. Transfer to a colander, drain, and set aside.
  • Place a 6-quart low-sided saucepan over medium heat. Add olive oil; heat until oil is hot but not smoking. Add leeks, remaining sprig rosemary, and roasted garlic cloves. Cook until leeks become translucent. Add sweet potato; cook, stirring until the potato pieces just begin to soften, about 8 minutes.
  • Add kale; cook until kale begins to wilt, about 4 minutes. Add stock; cook until potato pieces are tender, about 10 minutes. Add reserved beans, pasta, 1/2 teaspoon salt, and pepper. Cook until heated through, about 5 minutes. Divide among six plates; serve.

1 medium onion, diced

1 pound small boiling potatoes, peeled and sliced 1/2-inch thick

4 cups, packed, very finely shredded kale leaves (about 1 bunch)
2 cups cooked kidney beans (see note)

Steps:

  • Slice the sausage into rounds about 1/2-inch thick. Heat two tablespoons of the oil in a heavy 3- to 4-quart saucepan, add the sausage and saute over medium heat until the sausage is just beginning to brown. Remove the sausages from the pan, draining well.
  • Add the onion to the pan and saute over low heat until it is soft but not brown. Stir in the garlic. Add the potatoes and six cups of water. Bring to a boil and simmer about 15 minutes, until the potatoes are tender.
  • Drain the potatoes, leaving the cooking liquid in the saucepan, and roughly mash them. Stir the mashed potatoes back into the liquid. Season with salt and pepper.

8 c chicken broth, low salt
2 large sweet potatoes, peeled and diced small
3 c chopped kale
1 c canned cannellini bean, drained and rinsed
1 large carrot, peeled and diced small
1 stalk(s) celery, diced small
1 c cooked brown rice
1/2 small red bell pepper, diced small
1/4 c white wine
1/2 Tbsp sugar
1 tsp turmeric, ground
1 tsp oregano, dried
1 Tbsp parsley flakes
1 Tbsp minced onion
1/2 tsp minced garlic
1/4 tsp nutmeg
2 Tbsp olive oil

Steps:

  • 1. Heat oil in a skillet.
  • 2. Add the onion, garlic, celery and bell pepper and saute 5 minutes.
  • 3. Remove casing from the sausage. Cut sausage into slices.

6 cups water
4 teaspoons chicken bouillon granules
2 lbs sweet potatoes, peeled, quartered and sliced 1/4-inch thick
1 lb kale, trimmed of stems and torn into 3-inch pieces
1/2 cup old fashioned oats
10 slices crusty bread

Steps:

  • In large pot, heat oil over medium heat. Add Italian sausage links and cook, turning until browned and cooked through, about 8-10 minutes.
  • Take sausage out of pot and slice 1/4" thick.
  • Add onion to the drippings in pot and cook, stirring, until lightly browned, 2-3 minutes.
  • Return sausage to pot with garlic powder and pepper. Cook, stirring, for one minute.
  • Stir in water and chicken bouillon granules. Add sweet potatoes. Cover; bring to simmer over medium-low heat. Cook, stirring occasionally, until potatoes are tender, 10-12 minutes.
  • Stir in kale. Cover; cook over low until kale is wilted, 5-6 minutes.
  • Sprinkle old-fashioned rolled oats over soup. Cover; cook, stirring occasionally, until oatmeal is softened and cooked through, 5 minutes.
  • Serve with crusty bread.

1 yellow onion, small, diced
2 tablespoons fresh ginger, grated
1 tablespoon extra virgin olive oil
3 stalks celery, diced
1 large sweet potato, peeled and diced
3 cups great northern beans, cooked and rinsed
3 tablespoons mirin
1 bunch kale, chopped
2 cups vegetable stock (or more)
1 pinch ground nutmeg
salt and pepper
gomashio

Steps:

  • In soup pot over medium heat, saute onion and ginger in olive oil until soft (3 min). Add celery, sweet potato, beans and mirin, and stir. Add kale and enough vegetable stock to cover all ingredients by an inch. Bring to a boil, reduce heat, cover and simmer for 30 minutes to cook potatoes through and allow flavors to develop. Season to taste with nutmeg, salt and pepper; and serve topped with gomashio or toasted sesame seeds.

1 lb Portuguese chourico (can use turkey chourico) or 1 lb turkey sausage (I like to use chourico dogs)
1 lb kale, stems removed, leaves shredded
1 teaspoon olive oil
1 onion, chopped
4 garlic cloves, chopped
6 cups fat free chicken broth
4 small boiling potatoes, peeled diced into 1/4 inch pieces
1 pinch dried red pepper flakes
salt, if needed
1/4 teaspoon fresh ground pepper

Steps:

  • In a large pot, cook chourico or sausage over low heat. Turn and cook until brown, about 10 minutes. Remove from pot and let cool. Cut sausage into slices. Remove any fat from pot, but leave the cooked on bits.
  • Add oil to pot, add onion and cook on medium until translucent, about 5 minutes. Add garlic and cook 1 minute more. As you stir, scrape up the bits from the bottom of the pan.
  • Add broth potatoes, and black pepper, bring to a boil and cook 20 minutes. Remove the pot from heat and either lightly mash the potatoes with a potato masher or food processor, or I like to use my immersion blender to puree the entire mixture.
  • Add chourico or sausage, red pepper flakes and bring back to a simmer. Cook covered for about 4 minutes. Add kale and bring back to a simmer. Cook partially covered until the kale is cooked. Adjust salt if needed.

4 ounces smoked fully cooked sausage (such as kielbasa or hot links), sliced into rounds
2 3/4 cups canned low-salt chicken broth
3/4 pound small red-skinned potatoes, thinly sliced
1 cup dry white wine
5 cups thinly sliced trimmed kale leaves (about 3/4 of medium bunch) or 3/4 of 10-ounce package frozen chopped kale, thawed, drained
1/4 teaspoon caraway seeds, lightly crushed

Steps:

  • Sauté sausage slices in heavy medium saucepan over medium-high heat until beginning to brown, about 3 minutes. Add chicken broth, sliced potatoes and white wine and bring mixture to boil. Reduce heat to medium, cover and simmer until potatoes are almost tender, about 10 minutes.
  • Add kale and caraway seeds to soup. Simmer soup uncovered until potatoes and kale are very tender, about 10 minutes longer. Season soup to taste with salt and pepper. Ladle soup into bowls and serve immediately.

2 bunches kale (picked over, cleaned, and torn into bite sized pieces)
12 whole red potatoes, sliced thin
1 whole onion, chopped
1 1/2 lbs Italian sausage
2 cups low sodium chicken broth
4 cups half-and-half
splash heavy cream
oregano, to taste (fresh or dried)
black pepper, to taste

Steps:

  • Prepare the kale and set it aside.
  • In a medium pot, boil sliced potatoes until tender. Drain and set aside.
  • In a large pot, crumble and brown the Italian sausage. Drain as much of the fat as you can.
  • Stir in the red pepper flakes, oregano, chicken broth, milk, and half and half. Simmer for 30 minutes.
  • Give it a taste and adjust seasonings as needed.
  • Add the potatoes, a splash of heavy cream for richness, then stir in the kale. Simmer an additional 10 to 15 minutes, then serve.

2 ½ pounds bone-in chicken thighs
salt and ground black pepper to taste
1 tablespoon canola oil
1 large yellow onion, chopped
1 clove garlic, minced
12 cups chicken broth
6 ribs celery, chopped
5 medium carrots, chopped
2 medium sweet potatoes, chopped
4 bay leaves
1 ½ teaspoons ground thyme
10 ounces Tuscan kale, remove from tough stem and coarsely chopped
1 (8 ounce) package chopped fresh mushrooms
4 cups uncooked egg noodles
1 tablespoon lemon juice

Steps:

  • Heat a stockpot over medium-high heat. Pat chicken dry with paper towels; sprinkle with salt and pepper. Add oil to the pot and cook chicken in batches, skin-side down, until golden brown, 3 to 5 minutes. Remove chicken from the pan. Discard skin and drippings, reserving 2 tablespoons in the stockpot.
  • Cook and stir onion in the drippings over medium-high heat until tender, 4 to 5 minutes. Add garlic; cook for 1 minute longer. Pour in broth and stir to loosen browned bits from the pan. Bring to a boil.
  • Return chicken to the pot and add celery, carrots, sweet potatoes, bay leaves, and thyme. Reduce heat to low, cover, and let simmer for 10 minutes. Add kale and mushrooms; continue to simmer until chicken is tender and no longer pink in the centers, 15 to 20 minutes.
  • Transfer chicken to a plate. Remove soup from heat and add noodles. Let stand, covered, until noodles are tender, 20 to 22 minutes.
  • Meanwhile, when chicken is cool enough to handle, remove meat from bones and shred into bite-size pieces.
  • When noodles are tender, return chicken to the stockpot. Stir in lemon juice. Season with salt and pepper to taste. Remove bay leaves and serve.
