CAULIFLOWER CASSEROLE WITH QUINOA KALE AND SHARP CHEDDAR
A vegetarian cheesy cauliflower casserole with kale and quinoa. gluten-free.

- Preheat oven to 375ºF. Pull the kale leaves off the thick stems and tear them into bite sized pieces, rinse leaves, spin or pat dry (they don't have to be completely dry) and spread kale leaves out on a large rimmed baking sheet. Drizzle olive oil over kale and use your hand to massage the oil into the leaves. Roast kale in the center of the oven for 15-20 minutes, tossing after ten minutes, until tender and crisp on the edges. Set aside.
- While the kale is roasting, put the quinoa in a large saucepan (large enough to hold all the cauliflower too) and add cold water so the pot is about 2/3 of the way filled. Turn the heat to high. Once boiling, turn the heat down to a gentle boil and set the timer for 7 minutes. When the timer goes off, add the cauliflower florets and once again turn the heat to high. Set the timer again for 7 minutes. Drain the quinoa and cauliflower and transfer to a large mixing bowl. Add roasted kale and toss. Add most of the cheese, setting aside a handful to sprinkle on top. Add the milk, mustard, 1 teaspoon of salt or to taste, 1/2 teaspoon of black pepper or to taste, and onion powder, if using. Toss well to combine.
- Turn the oven down to 350ºF. Transfer the mixture to a 2-quart casserole. Sprinkle with remaining cheese. Bake in upper third of the oven for 30 minutes or until the top is golden brown and crisp in spots. If you like the top to be extra crisp and brown, turn on the broiler for a minute or two, watching carefully to prevent burning.
- Serve hot.

- Preheat the oven to 400 degrees F.
- Remove the tough, fibrous ribs from the kale leaves and discard the ribs. Tear the leaves into bite-size pieces. Reserve any tender stems and finely chop. Keep the leaves and chopped stems separate.
- Meanwhile, bring a large pot of salted water to a boil over high heat and fill a large bowl with ice water. Add the kale leaves to the boiling water and cook until tender and bright green, 1 to 2 minutes. Use a slotted spoon or tongs to transfer the kale to the ice water bath. Once completely cool, drain well. Bring the water back to a boil, then add the squash. Cook until just tender, about 3 minutes. Drain well and reserve the pot.
- Place the pot over medium-high heat. Melt the butter, then add the reserved kale stems, garlic, onion, 1/2 teaspoon salt and several grinds of pepper. Cook until the vegetables are tender, about 4 minutes. Stir in the kale leaves, squash, heavy cream, cream cheese, Parmesan and nutmeg until well combined and smooth. Reduce the heat to medium and cook until the sauce has reduced and thickened slightly, about 5 minutes. Season with salt and pepper.
- Transfer to a 2-quart baking dish. Stir together the breadcrumbs, parsley and a pinch of salt and pepper in a small bowl until combined, then sprinkle evenly over the top of the casserole. Bake until golden brown and bubbling at the edges, 15 to 20 minutes.
BAKED KALE, BROCCOLI, CAULIFLOWER, CHEDDAR CHEESE
Baked Kale, Broccoli, Cauliflower, Cheddar Cheese ~ is my take on my favorite mac and cheese casserole with a twist; only it's made with veggies and without the mac! It's made with a blend of fresh baby kale, steamed broccoli and cauliflower topped with cheddar and Parmesan cheeses and some cream, then baked until the cheeses have melted, and the veggies are tender.

- Preheat oven to 350 degrees.
- First, steam the broccoli and cauliflower: Place the broccoli and cauliflower in a large pot filled with 1 inch of water. Sprinkle with salt over the vegetables. And cover with a lid. Set it over high heat.
- Bring water to a boil, lower, and simmer for about 2 to 3 minutes, or until the broccoli turns into a bright green color. Turn off the heat. Drain water, transfer them back into the pot, and set it aside, covered for an additional 3 to 4 minutes to steam the vegetables until they are tender to the bite. Then, remove the cover to stop the cooking.
- Meantime, layer with fresh baby kale on the bottom of an 8 x 8 Pyrex baking dish and spread evenly.
- Transfer the steamed vegetables on top of the baby kale. Scatter on top with grated Parmesan cheese, and then with cheddar cheese. Drizzle the heavy cream over the vegetables.
- Optional: Season with some fresh cracked pepper to taste.
- Place the baking dish, uncovered into the oven.
- Bake for 10 minutes, or until the cheeses are completely melted and the cream has slightly thickened. Remove and set aside for a few minutes to cool down before serving.

- Bring a large pan of salted water to the boil and cook the cauliflower for 6 mins, adding the kale for the final min. Drain well.
- Meanwhile, heat the oil in a non-stick frying pan and add the sausagemeat, breaking it up with a wooden spoon. Brown all over for 4-5 mins.
- Heat oven to 200C/180C fan/gas 6 and put the cauliflower and kale in a large baking dish. Pour over the cheese sauce, season and mix to coat well. Scatter over the sausagemeat and the cheddar. Bake for 30 mins until the top is golden and bubbling. Serve with mixed leaves, if you like.
