5 pounds Korean style beef short ribs*
1 cup brown sugar, packed
1 cup soy sauce
1/2 cup water
1/4 cup mirin (rice wine)
1 small onion, peeled and finely grated
1 small Asian pear, peeled and finely grated
4 tablespoons minced garlic
2 tablespoons dark sesame oil
1/4 teaspoon black pepper
2 green onions, thinly sliced (optional)

Steps:

  • Preparation: Sprinkle brown sugar over beef and mix well to evenly coat. Let sit at room temperature for 10 minutes while preparing marinade. In a bowl, whisk together remaining ingredients. Transfer beef into a large sealable freezer bag (you may need 2). Add marinade, press out excess air from bags, and seal. Turn bag over several times to ensure beef is evenly coated. Refrigerate for at least 4 hours but preferably overnight.
  • Heat gas or charcoal grill to medium-hot. Drain excess marinade off beef. Grill short ribs, turning once, to desired doneness, about 3 to 4 minutes per side. Garnish with thinly sliced green onions, if desired. Serve whole pieces as a main course or cut into smaller pieces, using kitchen shears, for a starter or party nibble.

¾ cup soy sauce

4 cloves garlic, minced
3 green onions, chopped

After trying many recipes for homemade-style Korean BBQ, I finally found a great recipe from a friend who learned it from his mom. It's sweet, salty, spicy, and very tender (Thanks to the Coke®). I use this same recipe to make Bulgogi and Dae Ji Bool Gogi (Spicy Pork) and simply change the onions to sliced bulbs for the bulgogi.

¼ cup white sugar
¼ cup soy sauce
¼ cup water

In Hawaii, we have alot of mixed up ethnic foods. This is almost always served with steamed white rice and some potato-mac salad and some salted cabbage.

5 lbs thin cut tender short rib of beef, cross cut, about 1/2 inch thick (can substitute chuck steak)
2 cups soy sauce (I use 1/2 aloha brand and 1/2 yamasa brand.)
2 cups white sugar
4 garlic cloves (pressed or chopped fine)
1 inch ginger, grated
1 teaspoon toasted sesame oil
sliced green onion (optional)
sesame seeds, toasted until they pop and turn light brown (optional)
1 little red pepper paste (optional) or 1 red chile (optional)

Steps:

  • Place ribs in a glass dish or a Tupperware marinator.
  • Mix all ingredients except for the optional ones in a pan and warm until the sugar melts, then cool.
  • Pour marinade over ribs, add optional ingredients if you like, and place in the refrigerator 4 hours or overnight, mixing up occasionally to make sure all ribs are covered with sauce.
  • Grill or broil until sizzling, being careful not to burn because of the sugar.

Steps:

  • For the Alley's house dressing: Blend together the honey, sesame oil, soy sauce, rice vinegar, hoisin, onions, white vinegar, chile flakes, garlic, ginger and salt in a blender. Continuing to blend, add oil slowly. Mix in mayonnaise.
  • For the short ribs: Whisk together soy sauce, sugars, garlic, ginger, sesame oil and pepper in a bowl until sugar is dissolved Transfer to a vacuum-seal or resealable plastic bag and add the ribs. Marinate, refrigerated, overnight.
  • Preheat a grill to medium-high heat.
  • Grill ribs until medium to well-done, 3 minutes a side. Slice for service.
  • Divide shredded cabbage among 4 plates. Add 2 scoops sticky rice to each. Top with kalbi.
  • Toss lettuce with The Alley's house dressing. Plate with kalbi. Garnish with sliced green onions.

Steps:

  • 1. Soak the ribs in cold water for about an hour or until coloration of the water turns pinkish red. Drain and rinse under cold water. Set aside. 2. Combine soy sauce, pear, garlic, ginger, and onion into a food processor. Pulse until smooth. 3. In a large mixing bowl (the ribs will be added here later), combine all the sauce ingredients and mix well. Add the beef short ribs and coat thoroughly. 4. Cover the ribs with plastic wrap and refrigerate overnight. 5. If using a grill, heat the grill to high. Remove short ribs from marinade and grill short ribs until slightly charred and tender and cooked to desired preference. Serve short ribs with white rice and kimchi. 6. If using a stove top, add the short ribs to a non-stick frying pan on medium-high heat. Cook about 5 minutes on each side or until slightly charred. Serve with rice and accompanying side dishes. 3 pounds beef short ribs, or other meaty ribs cross-cut into two strips
1 1/2 tablespoons sugar
1 tablespoon sesame oil
4 large cloves garlic, minced
6 scallions, chopped
2 tablespoons minced fresh ginger
3 tablespoons dry sherry
4 tablespoons tamari (Japanese soy sauce)
3 tablespoons mirin (sweet rice wine)
2 tablespoons peanut oil
1 onion, chopped
2 carrots, one minced and the other cut into 1-inch chunks
3/4 cup chicken or beef broth
1 cup red wine
10 to 12 dried shiitake mushrooms
12 fresh chestnuts, peeled, or 12 dried peeled chestnuts, soaked in water for 2 hours, or 12 jarred peeled chestnuts
1 pear or apple, peeled, cored, chopped

Steps:

  • Score ribs diagonally, and place in a large bowl. Add sugar, and rub into the meat. Rub sesame oil into the meat, and let rest for 15 minutes. Add garlic, scallions, ginger, sherry, tamari and mirin. Rub into meat, and marinate, refrigerated, 2 to 3 hours.
  • Preheat oven to 350 degrees. In a Dutch oven or other covered pan large enough to hold ribs in one layer, heat 1 tablespoon peanut oil over medium heat; add chopped onion and minced carrot. Saute until vegetables are tender, 5 minutes. Place ribs on vegetables, meat side down. Add marinade, broth and wine. Bring to a boil on top of stove; cover and place in oven for 1 hour.
  • While meat is in oven, reconstitute mushrooms by adding boiling water to cover and soaking until tender, about 20 minutes. Drain, pat dry with paper towels and slice thinly. In a small skillet over medium-low heat, heat remaining tablespoon peanut oil, and add mushrooms slices. Saute until lightly browned, about 3 minutes. Set aside.
  • Remove pan from oven, skim fat, and turn ribs meat side up. Add mushrooms, carrot chunks, chestnuts and chopped pear or apple. Cover, and return to oven 1 1/2 to 2 hours, until liquid is almost evaporated.
  • Before serving, skim fat from liquid in pan. Accompany with rice, kimchi and other Korean condiments and side dishes. Kalbi-chim improves with rest, and may be made the day before, refrigerated and reheated for about 10 minutes in a 350-degree oven.

Steps:

  • soak beef in cold water for 2 hrs. dispose water. blanch beef. soak beef again for 2 hours. cover beef in clean water in pot. cover about 1 inch above beef. add dry mushrooms, korean radish. boil for 10min. reduce heat. when water line hits beef (~20min), add soy sauce, garlic, carrot. right before serving add, green pepper.

5 pounds Korean style Short Ribs
1 cup Brown Sugar (Packed)
1 cup Soy Sauce
1/2 cup Water
1/4 cup Mirin (rice wine)
1 piece Onion (small, peeled and finely grated
1 piece Apple Pear (small, peeled and finely greated)
4 tablespoon Garlic (minced)
2 tablespoon Dark Sessame Oil
1/4 teaspoon Black Pepper
2 pieces Green Onions (thinly sliced (optional))

Steps:

  • Sprinkle brown sugar over beef and mix well to evenly coat. Let sit at room temperature for 10 minutes while preparing marinade. In a bowl, whisk together remaining ingredients. Transfer beef into a large sealable freezer bag (you may need 2). Add marinade, press out excess air from bags, and seal. Turn bag over several times to ensure beef is evenly coated. Refrigerate for at least 4 hours but preferably overnight. Heat gas or charcoal grill to medium-hot. Drain excess marinade off beef. Grill short ribs, turning once, to desired doneness, about 3 to 4 minutes per side. Garnish with thinly sliced green onions, if desired. Serve whole pieces as a main course or cut into smaller pieces, using kitchen shears, for a starter or party nibble. * NOTE: Korean-style short ribs can be found at most Asian markets. The cut, also known as "flanken," refers to a strip of beef cut across the bone from the chuck end of the short ribs. Unlike American and European-style short ribs, which include a thick slice of bone-in beef, Korean-style short ribs are cut lengthwise across the rib bones. The result is a thin strip of meat, about 8 to10 inches in length, lined on 1 side with 1/2-inch thick rib bones. The thin slices make for fast cooking on the grill. 2, 3 lbs beef short ribs
2 potatoes, cut into 2-inch balls (if possible)
3 carrots, cut into 2-inch balls (if possible)
7, 8 daechu (jujubes or dried dates)
1 bunch Japanese beech or enoki mushrooms (or shiitake)
1 tbsp rice vinegar (or rice wine like mirin)
2 tbsp gochugaru (Korean red pepper flakes)
4 tbsp brown sugar
5 tbsp soy sauce
4 cloves garlic, finely chopped
1 tbsp sesame oil
7, 8 bbam (chestnuts if available)
1 tbsp mulyeut (corn syrup) or honey
sliced green onion (for garnish)

Steps:

  • Soak short ribs in cold water in a large bowl for at least 30 minutes to remove residual blood. (Optional step) In a large pot over high heat, place the beef short ribs with pieces of halved onions, whole garlic, and ginger pieces. Bring to a rapid boil for at least 20~30 minutes while removing scum from surface. When finished save about 2 cups of broth for later use, rinse the beef under cold water, and discard remaining greens and vegetables. When cool enough to handle, make slits or incisions in each short ribs. Remove or cut away excess fat (optional). Return the ribs to the pot with 2 cups of the beef broth and sauce ingredients, cooking for at least 1 hour on low heat. Add the golf ball sized potatoes, carrots, dried dates, and mushrooms with 15 minutes remaining and continue to simmer. Near the end of the hour when most of the broth has thickened or evaporated, add some mulyeot (corn syrup) or honey. The sauce should have a slight syrupy consistency. Serve on a large platter as main course. Garnish with green onion slices and enjoy with rice and banchan (side dishes).

One of Korea's most loved dishes, kalbi jjim is a rich, braised short rib and vegetable meal that is traditionally reserved for special occasions. Luckily, a pressure cooker makes it possible to enjoy this special one-pot stew whenever the craving hits. The ribs and vegetables simmer in the garlic and ginger-infused sauce until the meat falls off the bone and the vegetables absorb all of the rich juices. Bones give the sauce extra flavor, but boneless ribs also work great here. Chop leftover meat and vegetables and serve in corn tortillas with salsa for a tasty taco. If you prefer pork, try pressure cooker Korean soy-glazed pork belly, which has similar flavors to this dish.

3/4 cup low-sodium soy sauce
2 scallions, finely chopped (about 1/4 cup)
1/4 cup turbinado sugar (or 3 tablespoons granulated sugar)
2 tablespoons minced fresh garlic
2 tablespoons minced fresh ginger
1 teaspoon ground black pepper, plus more for seasoning
4 pounds meaty English-cut short ribs (about 2 inches in length and thickness)
Kosher salt
1 pound daikon radish, peeled and cut into 2-inch pieces
12 ounces russet potatoes, peeled and cut into 2-inch pieces
12 ounces carrots, peeled and cut into 2-inch pieces
Steamed rice and kimchi, for serving

Steps:

  • In a pressure cooker, combine soy sauce, scallions, sugar, garlic, ginger and 1 teaspoon black pepper. Lightly season short ribs with salt and pepper, and add to the cooker. Toss ribs in the sauce. Arrange ribs in an even layer and top with the daikon, potatoes and carrots. Lock pressure cooker lid in place and set steam vent to sealing position. Select high pressure and cook for 30 minutes. Let pressure release naturally.
  • Transfer short ribs and vegetables to a large plate. Loosely cover with foil or plastic wrap to keep warm. Carefully pour liquid into a fat separator or large bowl and degrease. Return liquid to the pressure cooker. Using the sauté function, simmer until reduced to about 1 1/2 cups and thickened, about 15 to 20 minutes.
  • Add short ribs and simmer, turning, until warmed through and evenly coated in the sauce, about 2 minutes. Divide ribs among 4 shallow bowls. Repeat with vegetables, simmering until warmed, then distributing among the bowls.
  • Spoon the sauce over the ribs and vegetables, and serve with rice and kimchi.

1 cup HEINZ BBQ Sauce Hawaii Style Sweet & Smoky, divided
1/4 cup lite soy sauce
1 cup chopped apples
4 green onions, cut into thin slices, divided
2 lb. beef short ribs (1/4 inch thick), cut lengthwise in half
1 tsp. sesame seeds, toasted

Steps:

  • Blend 1/2 cup barbecue sauce, soy sauce, apples and half the onions in blender until smooth; pour into 13x9-inch dish.
  • Add ribs; turn to evenly coat both sides of ribs with barbecue sauce mixture.
  • Refrigerate 1 hour to marinate.
  • Heat grill to medium heat. Remove ribs from marinade; discard marinade. Grill ribs 15 min. or until done, turning every 5 min. Transfer to platter; brush with remaining barbecue sauce.
  • Sprinkle with sesame seed and remaining onions.
