EASY ONE-PAN CHICKEN FRIED RICE



Easy One-Pan Chicken Fried Rice image

When you need a meal to feed the entire family and are short on time and groceries, try this easy, one-pan fried rice dish made with with leftover chicken and rice. A handful of veggies add color and texture while a few pantry staple spices and condiments add flavor to this simple stir-fry dish the whole family will love.

1 tablespoon canola oil
1 teaspoon sesame oil
⅓ cup diced carrots
¼ cup sliced green onions, white and lighter green parts
½ teaspoon garlic powder
½ teaspoon ground ginger
3 cups cooked rice, cooled
1 teaspoon kosher salt
½ teaspoon ground black pepper
1 cup shredded cooked chicken
½ cup frozen peas
2 tablespoons butter
2 large eggs, beaten
2 tablespoons soy sauce
2 teaspoons rice vinegar
2 tablespoons sriracha mayonnaise (Kikkoman)
1 tablespoon sliced green onions, or to taste

Steps:

  • Heat canola and sesame oils in a large, nonstick skillet over medium-high heat. Add carrot and 1/4 cup green onion; cook, stirring constantly, for 2 minutes. Stir in garlic powder and ginger and cook for 2 minutes. Stir in rice, salt, and pepper; cook, stirring only once or twice, until rice is lightly browned, about 5 minutes. Stir in chicken and peas; cook for 2 minutes.
  • Push rice mixture to the sides of the pan, creating a circle in the middle. Add butter to the center of the pan. When melted, pour eggs into the center. Cook eggs, stirring often, until almost set, about 3 minutes. Stir eggs into the rice mixture. Stir in soy sauce and rice vinegar; cook for 2 more minutes.
  • Serve immediately topped with Sriracha mayo and green onions.

I found this recipe on the internet and it is a winner! The wings take some time so plan ahead. They are definately worth it! Time it takes to marinate is not included in prep or cooking time.

2 tablespoons butter
1 1/2 cups finely chopped onions
2 cloves garlic, minced
3/4 teaspoon chili powder
1 teaspoon cumin
1/2 cup Kahlua
2 drops hot sauce
2 tablespoons Worcestershire sauce
1 cup barbecue sauce
1 teaspoon salt
2 tablespoons clover honey
20 chicken wings

Steps:

  • In 2 quart saucepan, melt butter.
  • Add onions and garlic and saute over medium heat for three minutes.
  • Add chili powder and cumin.
  • Cook, stirring constantly, for 2 minutes.
  • Blend in Kahlua and cook to reduce liquid by one-half.
  • Stir in hot sauce, worcestershire sauce, BBQ sauce and salt.
  • Simmer for 5 minutes.
  • Remove from heat and stir in clover honey.
  • Cool.
  • Remove and discard the tips from the chicken wings.
  • Divide the wings in half at the remaining joint.
  • Marinate the wings in the cooked, cooled sauce for 1 hour at room temperature or overnight in the refrigerator.
  • Arrange marinated wings on a broiler pan.
  • Sprinkle with salt and pepper to taste.
  • Broil for 5 minutes, turn and brush with remaining sauce.
  • Remove the wings from the broiler and reduce oven temp to 350º.
  • Bake for 15 minutes.

2 Tbsp egg, beaten
1/4 c oil
2 Tbsp oil
2 Tbsp cornstarch
1 1/2 lb chicken, boneless, skinless and cut in 1/2
1/2 c water chestnuts, sliced
4 oz mushrooms, sliced
1 can(s) bamboo shoots, canned
1/4 lb bean sprouts
4 oz snow peas, optional
3 Tbsp kahlua
1 tsp cornstarch
1 c cashews

Steps:

  • 1. Coat chicken in mixture of egg, 2 tablespoons oil and the cornstarch.
  • 2. Heat the remaining oil in a wok; add chicken, stir well and cook until golden brown.
  • 3. Remove chicken to plate or bowl; drain well.
  • 4. Leaving very little oil in the wok, add all the vegetables; stir-fry for 3-5 minutes.
  • 5. Add kahlua (mixed with remaining cornstarch), stir well.
  • 6. Transfer to a heated serving platter.

A very quick and easy dinner. If the sauce is thickened it is a coating for the chicken. If the sauce in not thickened it is a nice sauce for the chicken over rice.

2 chicken breast halves (I prefer with bone)
1/2 teaspoon onion salt
1 tablespoon butter
1/3 cup Kahlua
1/2 cup orange juice (add some concentrate too if available)
1 tablespoon lemon juice
1 teaspoon grated orange rind

Steps:

  • Sprinkle breasts with onion salt.
  • Brown in butter.
  • Combine remaining ingredients.
  • Pour over chicken.
  • Cover and simmer 35 to 40 minutes until done.
  • Thicken sauce with 2 Tbs cornstarch dissolved in 1/4 cup water if desired.

4 cups water
⅔ cup soy sauce
¼ cup brown sugar
1 tablespoon cornstarch
1 tablespoon minced fresh ginger
1 tablespoon minced garlic

3 skinless, boneless chicken breast halves, thinly sliced
1 tablespoon sesame oil
1 green bell pepper, cut into matchsticks
1 (8 ounce) can sliced water chestnuts, drained
1 head broccoli, broken into florets
1 cup sliced carrots
1 onion, cut into large chunks
1 tablespoon sesame oil

Steps:

  • Bring rice and water to a boil in a saucepan over high heat. Reduce heat to medium-low, cover, and simmer until rice is tender, and liquid has been absorbed, 20 to 25 minutes.
  • Combine soy sauce, brown sugar, and corn starch in a small bowl; stir until smooth. Mix ginger, garlic, and red pepper into sauce; coat chicken with marinade and refrigerate for at least 15 minutes.
  • Heat 1 tablespoon sesame oil in a large skillet over medium-high heat. Cook and stir bell pepper, water chestnuts, broccoli, carrots, and onion until just tender, about 5 minutes. Remove vegetables from skillet and keep warm.
  • Remove chicken from marinade, reserving liquid. Heat 1 tablespoon sesame oil in skillet over medium-high heat. Cook and stir chicken until slightly pink on the inside, about 2 minutes per side; return vegetables and reserved marinade to skillet. Bring to a boil; cook and stir until chicken is no longer pink in the middle and vegetables are tender, 5 to 7 minutes. Serve over rice.
