Had this at a retreat, and had to get the recipe. These are really good! I had to guess on the number of servings, since it really depends on how big the glasses are that you serve them in. Cooking time is approximate and includes time spent cooling in the refrigerator before finishing.

1 teaspoon instant coffee
1/2 cup Kahlua
1 (10 ounce) package small marshmallows
24 chocolate wafers, crushed fine
1 cup sour cream

Steps:

  • Combine coffee, Kahlua and marshmallows in the top of a double boiler. Stir until marshmallows are melted and smooth.
  • Refrigerate until cool.
  • Once the mixture is cool, stir in the sour cream.
  • Layer in parfait or wine glasses: the chocolate crumbs and the cream mixture, ending with the crumbs on top.
  • Refrigerate until firm.

Found this recipe on the back of a cross word puzzle from a Swedish "ladies magazine". The original recipe calls for Whiskey but I make it with Kahlua. You can use whatever kind of alcohol you like. Chilling time is not included.

2 egg yolks
3 tablespoons sugar
1 teaspoon cocoa powder
1/4 cup Kahlua
3/4 cup whipping cream, stiffly whipped

Steps:

  • Lightly whisk egg yolks and sugar in a glass bowl.
  • Put the bowl in a pan with simmering water.
  • Add cocoa and Kahlua.
  • Keep whisking until it thickens and doubles in size (about 10 minutes).
  • Take the bowl out of the pan and keep whisking until the cream has cooled off (about 5 minutes).
  • Gently mix the whipped cream with the eggcream.
  • Transfer to 4 individual small bowls.
  • Freeze several hours.
  • When serving, garnish with a little melted chocolate, berries or whatever you fancy.

This recipe I love to make around Thanksgiving to drink or give as presents at Christmastime. The longer you wait the better it is, try and wait 4 weeks. I got this recipe from one of my own concoctions from trying several different recipes.

4 cups water
1 cup instant coffee crystals (such as Folgers® Classic Roast)
2 cups light brown sugar
2 cups lightly packed dark brown sugar
1 (750 milliliter) bottle 190 proof grain alcohol (such as Everclear®)
2 teaspoons vanilla extract
1 vanilla bean, split lengthwise and halved

Steps:

  • Combine water and instant coffee in a pot; bring to a boil. Stir light brown sugar and dark brown sugar into coffee, reduce heat, and simmer, stirring every 15 minutes, for 3 hours. Remove from heat and cool completely.
  • Pour coffee mixture into a clean, large glass jar. Add grain alcohol, vanilla extract, and vanilla bean; cover with a tight-fitting lid. Let sit in a dark place, shaking occasionally, for 1 month. Divide into bottles, leaving a piece of vanilla bean in each.

1 teaspoon instant coffee granules
1 tablespoon hot water
1 package (8 ounces) cream cheese, softened
1/2 cup confectioners' sugar
1 teaspoon vanilla extract
2 cups whipped topping
1 chocolate crumb crust (9 inches)
PUDDING LAYER:
1 teaspoon instant coffee granules
1 cup 2% milk
1 package (3.9 ounces) instant chocolate pudding mix
1-1/2 cups whipped topping
KAHLUA CREAM:
1 cup heavy whipping cream
3 tablespoons confectioners' sugar
1 tablespoon Kahlua (coffee liqueur)
Chocolate curls, optional

Steps:

  • Dissolve coffee granules in hot water. In a large bowl, beat cream cheese and confectioners' sugar until fluffy. Add vanilla and coffee mixture. Fold in whipped topping. Spoon into crust., In a small bowl, dissolve coffee granules in milk. In a large bowl, combine milk mixture and pudding mix. Beat on high speed until pudding is thick. Fold in whipped topping. Spread carefully over cream cheese layer., In a small bowl, beat cream until it begins to thicken. Add confectioners' sugar and Kahlua; beat until soft peaks form. Spread over pudding layer. Top with chocolate curls if desired. Refrigerate for 2 hours or until set.

1/4 cup lightly toasted sweetened flaked coconut
3 tablespoons Kahlúa or other coffee-flavored liqueur
3/4 pint premium vanilla ice cream, softened slightly

  • Put 3 layers each coconut, liqueur, and ice cream in each of 2 wineglasses or parfait glasses, reserving about 1 tablespoon coconut and 2 teaspoons liqueur. Top parfaits with reserved coconut and liqueur and freeze, covered, 20 minutes.

Perfect for summer, these parfaits are light and refreshing. They can make an elegant finish to your meal. Instead of chocolate graham crackers you could use crushed Oreos, but I think the richness of the Oreo overwhelms the light mousse flavor. Cooking time is Chill time. Note: If you chose a smaller glass, such as a champagne glass, you will get 6 servings instead of 4 and will need to adjust the layering amounts accordingly.

1/2 cup 2% low-fat milk, very cold
1/4 cup Kahlua
1 (3 1/8 ounce) envelope instant chocolate mousse mix
1 tablespoon unsweetened cocoa powder
1 1/4 cups finely crushed chocolate graham crackers
1 1/2 cups Cool Whip, thawed
sugar wafers (optional) or Oreo cookies, etc, for garnish (optional)

Steps:

  • In a large mixing bowl, combine the milk, kahlua, mousee, and cocoa. Whip on low speed until well blended. Slowly increase the mixer to high, whipping for 4-5 minutes, or until fluffy.
  • In 4 clear glass dessert bowls (or wine/champagne glasses), layer 1/8 of the mousse, 2-3 tablespoons of graham crumbs, and 3 tablespoons of Cool Whip.
  • If choosing to garnish with cracker crumbs rather than cookies, reserve about 1/4 teaspoon of the cookie crumbs. Repeat the layering, using the remaining ingredients.
  • If garnishing with crumbs, sprinkle the remaining crumbs on top of each serving. If garnishing with cookies, leave the top of the parfait empty for now.
  • Refrigerate for at least 2 hours before serving. Before serving, garnish with cookies if desired.
