1 1/4 cups butter, softened
1 cup gouda cheese or 1 cup edam cheese, grated
1/2 teaspoon salt
1/4 teaspoon pepper
1 pinch cayenne pepper
1/2 teaspoon Worcestershire sauce
6 slices stale drk pumpernickel bread, finely crumbled

Steps:

  • Mix butter, cheese, salt, pepper, cayenne and worcestersire til well blended and smooth.
  • Shape into balls 1 inch balls, roll in bread crumbs.
  • Refrigerate 1 hour.

2 (8 ounce) packages cream cheese, softened
⅔ cup white sugar
1 teaspoon almond extract
2 eggs
12 ounces baking white chocolate (such as Baker's®)
2 teaspoons vegetable shortening, or as needed
1 (3 ounce) package sliced almonds

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Lightly grease a 9-inch springform pan.
  • Combine cream cheese, sugar, and almond extract in a bowl and whip using an electric mixer on low speed until combined. Beat in eggs 1 at a time. Pour into the prepared pan.
  • Bake in the preheated oven until set, 30 to 35 minutes. Remove from the oven and let cool for 1 hour; refrigerate for at least 3 hours more.
  • Scoop cheesecake into small balls using a melon baller or a tablespoon-sized scoop. Place on a wax paper-covered cookie sheet. Freeze cheesecake balls, 8 hours to overnight.
  • Place chocolate in the top of a double boiler over simmering water. Stir frequently, scraping down the sides with a rubber spatula to avoid scorching, until chocolate is melted, about 5 minutes. Stir in shortening until consistency is smooth and easy to work with.
  • Dip each cheesecake ball into chocolate to coat; replace on the cookie sheet. Garnish with sliced almonds while chocolate is still warm.
  • Refrigerate for 2 hours before serving.

1 (4 ounce) container crumbled feta cheese
1/2 teaspoon Worcestershire sauce
2 teaspoons finely chopped onions
1/4 teaspoon black pepper
1/2 cup chopped fresh parsley
cucumber, slices
grape tomatoes
kalamata olive
whole almond

Steps:

  • Beat first 5 ingredients at medium speed with an electric mixer until well combined. Cover mixture tightly, and chill at least 1 hour or until firm (can chill up to 3 days).
  • Roll cheese mixture into 3/4-inch-round balls. Roll each ball in parsley. Serve immediately, or cover and chill until ready to serve. If chilled, let stand 30 minutes before serving. Serve with cucumber slices, grape tomatoes, kalamata olives, and whole almonds.

This is one of my favorite things to make once the weather gets a chill in the air. It's great for cheese-lovers (like myself) and works great as leftovers or at dinner parties! Truffle oil has by far been one of the best culinary purchases I have made. One little bottle has lasted me a year, and can be used with so many things, like this recipe. Top with a pinch of truffle salt!

1 (16 ounce) package cavatappi (corkscrew macaroni)
6 tablespoons butter
½ cup flour
5 ½ cups milk, divided
2 ½ cups shredded smoked Gouda cheese
2 cups shredded sharp Cheddar cheese
1 ½ cups shredded Swiss cheese
1 ½ cups grated Parmesan cheese, divided
½ cup dry bread crumbs
1 tablespoon truffle oil

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Butter a 9x13-inch baking dish.
  • Bring a large pot of lightly salted water to a boil. Cook cavatappi in boiling water, stirring occasionally, until cooked through but firm to the bite, about 8 minutes. Drain.
  • Melt butter in a large pot over medium-low heat. Whisk flour into butter until mixture has a thick, paste-like consistency, about 30 seconds. Slowly whisk 2 cups milk into butter-flour mixture until smooth. Stir in remaining milk, increase heat to medium high, and cook, whisking constantly, until mixture is thick and almost boiling, 5 to 10 minutes.
  • Stir Gouda cheese, Cheddar cheese, Swiss cheese, and 1 cup Parmesan cheese into milk mixture until cheese melts and cheese sauce is smooth. Fold cavatappi into cheese sauce; pour mixture into prepared baking dish.

2 (8 ounce) packages cream cheese, softened
1 (8 ounce) package sharp cheddar cheese
1 teaspoon garlic powder
1 dash ground red pepper flakes
1/4 cup chopped roasted red pepper
1/4 cup chopped green onion
1 2/3 cups chopped pecans

Steps:

  • Beat cream cheese, shredded cheese, garlic powder and ground red pepper until well blended. Divide in half.
  • Add roasted red peppers to one half and green onions to the other half; mix each half until well blended.
  • Cover and refrigerate several hours or until chilled.
  • Shape each cheese mixture into 24 balls, each about 1-inch in diameter.
  • Roll in pecans.
  • Cover and refrigerate until ready to serve with crackers or chip of your choice.
