HOLLY TATERS - SEASONED BAKED POTATOES
I grew up with a chain of fried chicken fast food joints. They had the best seasoned potatoes. Below is my late grandma's recipe for baking instead of frying. These are also great to make ahead and bake later. I take these to work when we have lunch for the staff.

Steps:
- Preheat oven to 375. Melt stick of margarine in METAL baking pan(glass pans seem to make the taters soggy) . Wash and quarter the potatoes - keep the skin on. In a plastic zip-loc bag put all the dry ingredients. Coat the potatoes and place in a single layer in pan. Bake for 45 minutes.
- I keep the mix in the fridge for making one or two potatoes.

CHEESE-STUFFED TATER TOTS RECIPE
Combine baked potatoes and cheese to make baked, not fried, stuffed tater tots adults will love as much as the kids.

Steps:
- Preheat oven to 350 degrees.
- Peel skin from baked and cooled potatoes and coarsely grate into a mixing bowl. Sprinkle salt, chives, garlic powder and potato starch over potatoes then toss gently to coat. Add shredded cheddar cheese then toss gently to incorporate.
- Press small amount of potato mixture together in your hand (if it falls apart, add more starch in 1 tsp increments until mixture holds its form). Cut string cheese in half lengthwise, then cut into ½"- ¾" long pieces.
- Place 1 heaping Tbsp of potato mixture into palm of hand and indent with thumb then place 1 piece of string cheese in center of potato mixture. Cover string cheese completely with potatoes (form a tot with the cheese in the center of the potato mixture). Continue to form tater tots, pressing firmly so they hold together. Repeat with all remaining filling and cheese.
- Line baking sheet with foil or parchment paper then coat with cooking spray. Evenly space tots on baking sheet then brush with oil and bake 12−15 minutes, turning once halfway through baking.
- Remove from oven, cool slightly then serve.

LOADED SMASHED TATERS
You can make an entire pot of smashed taters in the time it takes to bake a single potato! I like to use baby Yukon Golds because the skins are very thin and easy to mash. Make this to your taste-sometimes I add in garlic and chives or sub shallots for the green onions. - Scrub and pierce potatoes; place on a microwave-safe plate. Microwave, uncovered, on high until tender, 15-17 minutes, turning once., Meanwhile, in a large saucepan, combine the salsa, chicken and cheese. - Take a piece of cheese and wrap a palmful of the mixture around it, shaping it into a tot (you may have to squeeze out some excess moisture to make it nice and tight).
- Fill a large, deep skillet halfway with oil and heat over medium. When the oil is hot, drop in some tots, turning them along the way until they're crispy and golden brown. Let cool a bit.
