4 pounds cucumbers (about 6 large), cut into 1/4-inch slices
3 medium onions, cut into 1/8-inch slices
3 cups sugar
3 cups cider vinegar
4 teaspoons canning/pickling salt
1-1/2 teaspoons mustard seed

Steps:

  • In a large container, combine cucumbers and onions. In a large bowl, combine the remaining ingredients, stirring until sugar is dissolved. , Pour over cucumber mixture; mix well. Cover and refrigerate overnight. May be refrigerated for up to 2 weeks.

These marinated cucumbers are surprisingly tasty! They remind us of bread and butter pickles. The marinade has the right mix between tangy and sweet. This recipe is a classic summertime favorite. Great as a cookout side dish or a snack.

3 cucumbers, peeled and sliced
1 small onion, peeled and sliced into rings
2 c cold water
1/4 c granulated sugar
1/4 c apple cider vinegar
1/8 tsp celery salt

Steps:

  • 1. Layer slices of cucumbers and onion in a large bowl.
  • 2. Combine remaining ingredients and blend thoroughly.
  • 3. Pour marinade over cucumbers.
  • 4. Chill cucumbers at least 2 hours.
  • 5. Use a slotted spoon or fork to serve chilled marinated cucumbers.

6 cups sliced cucumber
1 cup sliced onion
1 cup sliced green bell pepper
2 tablespoons salt
1 tablespoon celery seed
1 cup distilled white vinegar
1 ½ cups white sugar

Steps:

  • In a mixing bowl, combine the cucumber slices, onions, and green peppers.
  • In a saucepan over medium heat, combine the salt, celery seed, vinegar and sugar. Bring the mixture to a boil. Allow the mixture to cool for 10 to 15 minutes.
  • Combine the mixture in the mixing bowl with the mixture in the saucepan. Pack into sterile jars and refrigerate for 24 hours.

1 cup vinegar
1/4 cup water
1 1/2 cups sugar
1 teaspoon celery salt
1 1/2 tablespoons salt
1/2 teaspoon caraway seed
3 sliced cucumbers (, about 6 cups)
1 sliced onion
1 sliced bell pepper

Steps:

  • Combine first 6 ingredients in saucepan and bring to a boil, stirring so the sugar dissolves.
  • Turn off heat and set aside for about 5 minutes.
  • Slice vegetables and place in large mixing bowl.
  • Pour vinegar mixture over veggies and toss a bit.
  • Layer in a large flat dish (I use my Pyrex 13 by 9 pan) that has a tight fiting lid.
  • Refrigerate, covered, for at least one whole day (but a couple days is even better).
  • Stir every 6 hours or so to be sure all cucumbers get marinaded.
  • Serve chilled as a salad or as a delicious edible garnish.

DILL CUCUMBER SLICES

Pickling is an essential skill for preserving the bounty that comes from the agrarian South. Here, two sons of the South - the cookbook authors Matt and Ted Lee - use the traditional boiling-pot method to preserve cucumber slices. Packing slices instead of whole cucumbers allows greater volume per jar, and slices are easier to serve. These pickles, adapted from a recipe used at Stone Barns in New York, get some slight heat and personality from garlic and chilies. The latter can be omitted for a milder end result.

8 medium Kirby cucumbers
1/4 cup plus 1 tablespoon granulated sugar
1/4 cup kosher salt
2 cups Champagne vinegar
1/2 teaspoon black peppercorns
4 sprigs dill
3 garlic cloves, peeled and halved
2 whole dried chilies (optional)

Steps:

  • Boil a stockpot of water as deep as the shoulder of a quart jar.
  • Wash cucumbers and slice on a mandoline into 1/8- to 1/4-inch-thick rounds.
  • In a small saucepan bring sugar, salt, vinegar and 2 cups water to a boil over high heat; remove from heat and set aside.
  • Distribute peppercorns, dill, garlic and chilies equally between two sterilized 1-quart jars, then pack jars with cucumber slices. Fill each jar with vinegar solution to 1/2-inch from rim.
  • Partly close jars, leave gap for steam to escape, and place in boiling water for 10 minutes. Carefully remove jars with jar lifter or 2 tongs and close lids tightly. Cool to room temperature. Refrigerate for up to 2 weeks.

LIGHT AND TASTY CUCUMBER SLICES



Light and Tasty Cucumber Slices image

This is another attempt at me trying to find low fat and low calories 'treats' that also pack a bit of flavor. I am a pickles freak so I would pretty much be happy with any cucumber and vinegar combo but I especially like these when I want a more delicate flavor. They are good as a side with dishes like salmon or I even sometimes just put a few on a sandwich when I want some zest without any fat. I make this with Splenda because I really don't want the sugar as I am counting fat and calories.

13 ounces cucumbers
2 garlic cloves, crushed and chopped
3/4 cup white vinegar
1 1/2 cups Splenda granular
1/4 teaspoon dried dill

Steps:

  • Slice the cucumber into really thin slices. I use my food processor to do this and it just takes a few seconds.
  • In a bowl combine the white vinegar, Splenda, garlic and dill and just stir until the Splenda is dissolved.
  • Pour wet mixture over the cucumber slices and stir so that the mixture has coated all of the slices.
  • You can eat right away but they are much better if you put them in an air tight container and chill them in the fridge for a few hours (I do them overnight).
