JULIA CHILD'S CASSEROLE-SAUTEED PORK CHOPS
Great easy and basic pork chop recipe. Especially great when used with a marinade. From Julia Child's Mastering the Art of French Cooking.

Steps:
- Preheat the oven to 325 degrees.
- Dry the pork chops on paper towels.
- Heat the fat or oil in the casserole until it is moderately hot, then brown the chops, 2 or 3 at a time, on each side for 3 to 4 minutes. As they are browned transfer them to a side dish.
- Season with salt, pepper, and 1/4 teaspoons thyme if they have not been previously marinated.
- Pour the fat out of the casserole and add the butter and garlic if using.
- Return the chops to the casserole, overlapping slightly, and baste them with the butter.
- Cover and heat the casserole until the meat is sizzling, then set in lower third of preheated oven for 25 to 30 minutes.
- Turn and baste the chops once or twice.
- Remove chops to serving platter.
- Remove all but 2 Tb. of fat from the casserole and add in the white wine.
- Boil rapidly, scraping up coagulated cooking juices until you have about 1/2 cup of concentrated sauce. Pour sauce over chops.

PERFECT PORK CHOPS
This is one of my large family's very favorite and often ordered from my catering customers too! I never liked pork chops because they were always dry to me until I started making them like this-- no other way for me now. This can be easily doubled, tripled and on and on!

Steps:
- Add salt and pepper to bread crumbs.
- Beat egg and add milk.
- Dip chops in egg mixture and coat with bread crumbs.
- Brown chops on both side in about 1/2 inch of oil in a skillet.
- Place chops in a baking pan or dish, they can overlap slightly.
- Pour the boiling water around the pork chops, not over the tops, just so it surrounds them.
- Quickly cover the dish with lid or foil and bake at 400 degrees for 35 minutes.
- Remove the lid/foil and bake another 15 minutes.
- Enjoy!

PERFECTLY JUICY GRILLED PORK CHOPS RECIPE

- In a small bowl, mix together soy sauce, vegetable oil, honey, Dijon mustard, garlic, onion powder, and red pepper flakes to make a marinade.
- Place pork chops in a container or gallon-sized freezer bag and pour marinade on top.
- Place container in fridge and let pork chops marinate for at least 2 hours, preferably longer (up to 8 hours - the longer you can let it marinade, the more flavorful your pork chops will be).
- Preheat grill (or grill pan on stove top) to medium heat. Remove pork chops from the bag (discard marinade) and place pork chops on the grill. Grill for 6-8 minutes per side, until the outside is seared and the internal temperature reaches 145 degrees.
- Let pork chops rest for a few minutes before serving and enjoy!
