SLOW COOKER CHICKEN KORMA

Slow Cooker Chicken Korma image

Can't wait to try this aromatic dish! I love my slow cooker because I can brown the meat in it and then switch to slow cooker mode. Whether or not you have to brown the meat separately or not, this seems to be a very easy, yet flavorful, dish.

Time 6h30m

Yield 4 serving(s)

Number Of Ingredients 13

2 tablespoons oil
8 chicken thighs (boneless, skinless, cut into cubes, about 2 pounds in total)
2 onions, finely chopped (plus extra to garnish)
1 -2 green chili (seeded and finely chopped)
1 inch fresh gingerroot (peeled and finely chopped)
5 tablespoons korma curry paste
1 cup coconut cream (or coconut milk)
1 1/4 cups chicken stock
2 tablespoons ground almonds
1 small bunch fresh cilantro
3/4 cup plain yogurt
2 tomatoes, diced
salt and pepper

Steps:

  • Preheat the slow cooker if necessary. Heat the oil in a skillet, add the chicken a few pieces at a time until they are all in the pan, then fry, stirring, until golden. Remove the chicken from the pan with a slotted spoon and put it in the slow cooker pot.
  • Add the onions, chilies, ginger and curry paste to the pan and fry, stirring, for 2-3 minutes. Pour in the coconut cream or milk, stock, and ground almonds. Tear half the cilantro into pieces and add to the sauce with a little salt and pepper. Bring to a boil, stirring, then spoon over the chicken.
  • Cover with a lid and cook on low for 6-8 hours. Stir the korma, then ladle it into bowls, top with spoonfuls of yogurt, the tomatoes and extra raw onion and the remaining cilantro torn into small pieces. Serve with warm chapattis.

SLOW COOKER LAMB (OR CHICKEN) KORMA

Slow Cooker Lamb (Or Chicken) Korma image

A mild, rich, creamy curry. This recipe is adapted from "Creamy lamb and almond curry" from Slow Cooking Curry & Spice Dishes (Humphries). Instead of using creme fraiche, I used creamed coconut. Delicious, and the meat just falls apart in your mouth! To grind the almonds, you can use a mortar and pestle.

JULIE'S BAKED CHICKEN KORMA & RICE

Julie's Baked Chicken Korma & Rice image

This is the recipe I came up with to make chicken korma to take to a potluck, based on the excellent korma recipe my husband uses. I wanted to make it in a casserole form that would be easy to just mix together and bake then take in the same pan to the potluck. The folks at the gathering loved it, so I think it came out pretty darn well. :)

Time 1h10m

Yield 10-12 serving(s)

Number Of Ingredients 17

3 cups cubed skinless chicken breasts or 3 cups skinless chicken thighs
2 cups uncooked white rice
1 cup chopped onion
1 cup sliced mushrooms (optional)
1 tablespoon butter
1 tablespoon olive oil
4 tablespoons smooth cashew butter, warmed in microwave to soften
1 cup half-and-half
1 (13 1/2 ounce) can coconut milk or 1 1/2 cups plain yogurt
2 (14 1/4 ounce) cans chicken broth or 30 ounces homemade chicken broth
1/8 teaspoon cayenne, to taste
3 teaspoons turmeric
1 teaspoon cinnamon (Ceylon preferred)
1/2 teaspoon ground cloves
1 teaspoon ground coriander
2 teaspoons ground cumin
3 teaspoons ground cardamom

Steps:

  • Preheat oven to 375 degrees F.
  • In a large saucepan sauté the chopped onion and sliced mushrooms (if using) in butter and olive oil until onions are opaque.
  • Add spices and the remaining sauce ingredients except for one of the cans of broth (or half of your homemade); simmer for 5 minutes.
  • Turn off heat and add cubed chicken; stir.
  • Put uncooked rice in the bottom a large lightly-oiled lasagne pan and carefully pour the chicken/sauce mixture over (the pan will be pretty darn full).
  • (You can also just mix the rice into the sauce and pour into the pan, but if you do so make sure you evenly distribute the rice on the bottom of the pan.) Bake in 375 degree oven for 30 minutes, add the remaining can of chicken broth into the pan and stir well, then bake for an additional 30 minutes until rice is cooked through.
  • Makes about 10-12 potluck servings.

CROCK POT SOUTHWESTERN PUMPKIN SOUP (AKA KORMA SOUP)

Crock Pot Southwestern Pumpkin Soup (Aka Korma Soup) image

Almost ridiculously easy to make, this soup is based on a recipe from "S.O.U.P.S. - Seattle's Own Undeniably Perfect Soups" by Michael Congdon and is my absolute favorite soup. Although it is titled as "southwestern," this soup tastes very much like my favorite Indian dish of Chicken Korma, a mild, flavorful, non-spicy curry. I also use the soup as a baking sauce for chicken breasts, thighs, and cubed tofu - very tasty!

Time 3h10m

Yield 10 cups

Number Of Ingredients 17

1/4 teaspoon whole cloves
2 teaspoons coriander seeds
1/2 teaspoon green peppercorn
1 teaspoon ground cumin
2 teaspoons dried ancho chile powder
1/8 teaspoon dried chipotle powder
1 teaspoon vietnamese ground cinnamon
1 teaspoon garlic powder
1/4 teaspoon fresh ground nutmeg
4 cups vegetable stock
3/4 cup half-and-half
1 (8 fluid ounce) can evaporated milk
1 (29 ounce) can pumpkin puree
1/2 cup pure maple syrup
1 teaspoon kosher salt
grated cheddar cheese, for garnish
toasted cashews, for garnish

Steps:

  • In a hot skillet, toast the cloves, coriander seeds, and peppercorns.
  • Add the ground spices to the whole ones in the skillet- the cumin, chile powders, cinnamon, garlic powder, and nutmeg, and toast the mixture over high heat, stirring occasionally, for about 3 minutes or until the spices begin to smoke.
  • Remove from heat, let cool, and grind together to a powder (an electric coffee grinder works well for this); set aside.
  • Pour the stock, half and half, and evaporated milk into the crock pot; stir well, cover, and turn on high.
  • Put the pureed pumpkin into a large bowl, then add the maple syrup, salt, and the now-powdered spice mixture; use a whisk to incorporate the mixture well.
  • Add the pumpkin mixture to the liquids in the crock pot, whisking it well to make sure there are no lumps.
  • Cover and let simmer on high for 2 to 3 hours.
  • Garnish servings with grated cheddar cheese and toasted cashew pieces.
  • Many thanks to Michael for creating this wonderful soup! :).
