GREEN BEAN CORN CASSEROLE

Easy and Delicious Side Dish Loaded with Corn, Green Beans, and Cheese!

Number Of Ingredients 8

10.75 oz can cream of mushroom soup (or cream of celery soup*)
1 c. sour cream
1 c. shredded Cheddar cheese
1/2 c. finely chopped onion
2 cans French Style green beans, drained (14.5 oz each)
2 c. frozen corn (thawed)
1/4 c. crushed cheese crackers
Butter flavored spray

Steps:

  • Preheat oven to 350 degrees.
  • In a large bowl combine soup, sour cream, cheese and onion. Mix in corn and beans.
  • Transfer to 2 quart baking dish prepare with non-stick cooking spray.
  • Cover and bake 25 minutes in preheated oven. Uncover and sprinkle crushed crackers around outside of edge of pan. Spritz crackers with butter flavored spray. Bake 15 more minutes.

Corn Casserole all zazzed up! Bursty bites of cream-style corn and sweet corn plus garlic, bacon, and cheese throughout - so you know it's really, really good!

1 pound bacon, cut into small pieces
1/2 onion, finely chopped
1 clove garlic, minced
2/3 cup cornmeal
2/3 cup flour
1/4 cup sugar
1 tablespoon baking powder
1/2 teaspoon salt
1 cup sour cream
1/2 cup butter, melted
1 egg
one 15-ounce can corn, drained
one 15-ounce can cream-style corn
1 1/2 cups sharp white cheddar
Chopped chives

Steps:

  • Preheat the oven to 350 degrees. In a pan over medium heat, fry the bacon pieces until crispy. Remove from the pan, but leave some of the bacon grease to sauté the onions. Add the onions and a sprinkle of salt to the pan and cook until softened. Add in the garlic and cook for another minute. Take the pan off the heat. Chop the bacon into bits.
  • In a bowl, combine the cornmeal, flour, sugar, baking powder, and salt. In a separate bowl, whisk the sour cream, butter, and egg until smooth. Then, stir in the corn, cream corn, the onion mixture, half of the bacon. Add in the dry ingredients, and stir until just combined.
  • Pour into a greased casserole dish. Bake for 35 minutes. Remove from the oven and top with the cheese and remaining bacon. Bake for another 5 minutes. Sprinkle chopped chives over the top.

This is a family favorite. I usually cook with both of these variations. For Tex-Mex variation, add cup or two of salsa or picante sauce. Heat flavor to your desire (mild, hot). For a better top crust, add 1-2cups French's Fried Onions to the top and then the cheese. (Husband's favorite version)

1 can(s) corn, canned, drained
1 can(s) corn, cream-style
1 box corn muffin mix, 8 oz size
1 c sour cream
1 stick butter, melted
2 c cheddar cheese, shredded
1 1/2 c cheddar cheese, shredded

Steps:

  • 1. Preheat oven to 350 degrees F.
  • 2. In a large bowl, stir together both cans of corn, corn muffin mix, sour cream, 2 cups cheese, and melted butter.
  • 3. Pour into a greased 9 by 13-inch casserole dish. Bake for 45 minutes, or until golden brown.
  • 4. Remove from oven and top with remaining cheese. Return to oven for 5 to 10 minutes, or until cheese is melted.
  • 5. Let stand for at least 5 minutes and then serve warm.
