I bought a selection of lamb cuts from a CSA and got several one-pound packages of ground lamb. I made the last one tonight, and it was the best of all. Top them with Dijon mayo, tomato slices, and baby greens.

1 pound ground lamb
1 4-inch sprig rosemary, chopped
4 sprigs thyme, chopped
1 tablespoon garlic powder
1 pinch salt
1 pinch ground black pepper
3 tablespoons mayonnaise
1 tablespoon Dijon mustard
4 hamburger buns, split and toasted
4 thick slices tomato
1 cup baby mixed salad greens

Steps:

  • Preheat grill for medium heat and lightly oil the grate.
  • Thoroughly mix ground lamb, rosemary, thyme, garlic powder, salt, and pepper together in a bowl; shape into 4 patties.
  • Cook the burgers until they are beginning to firm and are hot and slightly pink in the center, about 5 minutes per side. An instant-read thermometer inserted into the center should read 140 degrees F (60 degrees C). Alternately, you can cook the burgers to your desired degree of doneness. Rest burgers while assembling toppings.
  • Mix mayonnaise and mustard together in a small bowl; spread 1 tablespoon of the mixture onto one side of each bun. Put a burger onto each bun and top with tomato and greens. Sandwich with remaining bun half to serve.

1 small onion, finely chopped (1/4 cup)
1 tablespoon chopped fresh mint leaves

Steps:

  • Make Rosemary-Mint Sauce.
  • Mix remaining ingredients. Shape mixture into 6 patties.
  • Spray 12-inch skillet with cooking spray; heat over medium heat. Cook patties in skillet 5 minutes; turn. Cook 3 to 5 minutes longer or until no longer pink in center. Serve with sauce.

So quick and easy to make, these lamb burgers are moist and delicious topped with grilled halloumi and you favourite dressing.

500 g lamb mince (20% fat)
2 cloves garlic
1 onion
2 tbsp mint
1 tsp salt
½ tsp pepper

Steps:

  • Peel and grate the onion, chop the mint leaves and crush the garlic.
  • Put the minced lamb in a large bowl and add the mint, onions, garlic and pepper.
  • Mix everything together and divide the mixture into 4 portions. Roll each one into a ball and then flatten it.
  • Preheat the grill to medium, season with salt, and grill for about 4 minutes each side.
  • Let the burgers rest for a minute before serving.

A wonderful recipe I found in a Betty Crocker low-fat and low-cholesterol cookbook. When my market doesn't have ground lamb, I ask the butcher to grind some; just make sure it's from the shoulder. If it's from the dark meat section, the meat will have too much fat and will not taste as good.

1 1/2 lbs lean ground lamb
1/4 cup finely chopped onion (about 1 small)
1 tablespoon chopped fresh mint leaves (I usually use 1/2 - 1 tsp. of dried mint)
3/4 teaspoon salt
1/4 teaspoon pepper
2 garlic cloves, finely chopped
1 cup plain nonfat yogurt
2 tablespoons chopped fresh mint leaves (I use1 tsp. dried mint)
2 tablespoons cider vinegar (can use red wine vinegar in a pinch)
1 teaspoon fresh rosemary leaves, crushed and finely chopped or 1/2 teaspoon dried rosemary
1/4 teaspoon salt
1/4 teaspoon pepper
1/4 teaspoon ground cumin

Steps:

  • TO MAKE AHEAD OF TIME: Prepare lamburgers as directed; shaped into 6 patties and store them, covered, in the refrigerator until ready to cook.
  • Prepare sauce and cover, refrigerated, until ready to cook patties.
  • REGULAR DIRECTIONS: Make rosemary-mint sauce and set aside. Spray a 12-inch skillet with nonstick cooking spray. Mix all other ingredients except Rosemary-Mint Sauce. Heat skillet over medium heat.
  • Shape meat mixture into 6 patties. Cook patties in skillet 5 minutes; turn. Cook 3-5 minutes longer until no longer pink in center. Serve with sauce. Cooked noodles and carrots taste good as sides.
