2 large granny smith apples, peeled, cored, and cut into 1/4 inch slices
2 tablespoons unsalted butter
2 -3 tablespoons sugar
1/4 teaspoon ground cinnamon
3 large eggs
1/2 cup milk
2 tablespoons unsalted butter, melted
1 teaspoon pure vanilla extract
1/2 cup all-purpose flour
1/4 teaspoon salt
2 tablespoons granulated sugar

Steps:

  • Preheat the oven to 425 degrees F
  • In a large 9- or 10- inch heavy nonstick ovenproof skillet melt 2 tbs butter.
  • Add the sliced apples, sugar, and cinnamon and sautéed the apples until tender.
  • Place eggs, milk, 2 tbs butter, vanilla, flour, salt and 2 tbs sugar in a large bowl, and mix well. Once the batter is completely smooth, pour over the apples in the skillet.
  • Bake for about 20 minutes or until the popover is puffed and golden brown
  • Do not open the oven door until the end of the baking time or it may collapse.
  • Serve immediately with a dusting of icing sugar and softly whipped cream.

These light, easy puff muffins are equally delightful as breakfast or dessert. For little kids: Let them crack the eggs and help stir the batter. For big kids: Let them measure and stir the ingredients for the popovers and measure and cook the berries.

Baking spray with flour
1 cup whole milk
3/4 cup all-purpose flour
3 large eggs, lightly beaten
1 teaspoon pure vanilla extract
Kosher salt
3 tablespoons unsalted butter, melted
1/4 teaspoon baking powder
1 cup frozen mixed berries
2 tablespoons granulated sugar* (See Cook's Note)
1 tablespoon confectioners' sugar, for dusting, optional* (See Cook's Note)

Steps:

  • Preheat the oven to 400 degrees F. Spray a 12-cup muffin tin generously with baking spray and set aside.
  • Whisk the milk, flour, eggs, vanilla and 1/2 teaspoon salt in a medium bowl until combined. Drizzle in the melted butter while whisking until combined, then let the batter stand for 5 minutes. Whisk in the baking powder, then divide the batter evenly among the muffin cups (a scant 1/4 cup per muffin). Bake until the popovers are puffed and browned around the edges, 20 to 25 minutes, rotating the pan halfway through.
  • While the popovers are baking, bring the berries, 1/2 cup water and granulated sugar to a simmer in a small saucepan over medium heat. Cook until the berries are juicy and soft and the liquid is reduced and thickened, about 10 minutes. Remove from the heat and cover to keep warm.
  • When the popovers are done, turn them out of the pan, using a small spatula if necessary. Arrange 2 popovers on each of six plates and garnish with a dollop of the sauce and a dusting of confectioners' sugar if using.

Apple Cinnamon Popovers are made with real apples and served with addictive brown sugar butter.

6 eggs
2 cups milk
2 tablespoons butter, melted
1 teaspoon vanilla
2 cups Gold Medal™ all-purpose flour
1 tablespoon granulated sugar
1 1/2 teaspoons ground cinnamon
1/2 teaspoon salt
2 cups finely chopped peeled apples
1/2 cup butter, softened
2 to 3 tablespoons packed brown sugar
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg

Steps:

  • Heat oven to 375°F. Generously grease 10 (4-oz) heatproof pottery custard cups, 10 to 12 regular-size muffin or popover-pan cups with butter. If using custard cups, arrange on cookie sheet. Heat cups in oven just prior to adding batter.
  • In large bowl, stir together all Popover ingredients except apples just until smooth. Stir in apples. Pour batter into hot cups, filling almost to top.
  • Bake 50 minutes. Do not open oven door during baking.
  • After 50 minutes, remove popovers from oven; cut several slits in top of each. Bake 5 to 10 minutes longer.
  • Meanwhile, in small bowl, mix Brown Sugar Butter ingredients until well combined.
  • Immediately remove popovers from cups. Serve warm with Brown Sugar Butter.

Softened butter for greasing pans, plus 1 1/2 tablespoons unsalted butter, melted
1 1/2 cups all-purpose flour, sifted
3/4 teaspoon kosher salt
1 teaspoon chopped fresh thyme leaves
3 extra-large eggs, at room temperature
1 1/2 cups whole milk, at room temperature

Steps:

  • Preheat the oven to 425 degrees F.
  • Generously grease aluminum popover pans or custard cups with softened butter. You'll need enough pans to make 12 popovers. Place the pans in the oven for 2 minutes to preheat. Meanwhile, whisk together the flour, salt, thyme, eggs, milk, and melted butter until smooth. The batter will be thin. Fill the popover pans less than half full and bake for exactly 30 minutes. Do not peek.
  • Serve hot.
