This recipe was created by Janice Johnson of Nogales, AZ, and appears in the book "Clouds for Dessert" by Susan Lowell. Johnson explains, " Juanita is Margarita's little sister -- she is too young to go out with Jose Cuervo." This non-alcholic punch is pale green and sparkling. It will add thirst-quenching zest to your next function and is suitable for any age.

1 (12 ounce) can frozen limeade concentrate
1 (10 ounce) can frozen margarita mix concentrate
2 cups cold water
1 (1 liter) bottle Squirt soda (approximately 4 cups, or use any mixed citrus soda)
ice
salt
lime slice (optional)

Steps:

  • In a pretty punch bowl, combine the limeade and margarita-mix concentrates with the water and Squirt.
  • Add about half as much ice as you have punch. If you like, squeeze a fresh lime or two into the mixture. Sprinkle the punch lightly with salt, and add more to taste, if necessary.
  • For an elegant touch, rub the punch cups or glasses with lime juice, rim with salt and serve garnished with lime.

I made this punch for our Cinco de Mayo lunch here at our Corporate Office. It received rave reviews and those who "indulge" in liquor (not a drinker myself) told me they would use this punch to make the non-alcoholic version for the kids and add tequila for the adults! It's a refreshing and not-too-sweet compliment for your favorite Mexican fare or any meal of your choice.

1 liter ginger ale
1 (12 fluid ounce) can frozen raspberry-lemonade concentrate
1 (12 fluid ounce) can frozen limeade concentrate
1 lemon
1 lime

Steps:

  • In a large gallon pitcher combine the lemonade and limeade concentrates. Dilute with only (3) cans of water for each concentrated mix (most package directions instruct you to add 4 1/3 cans after you empty the container) of which will total 6 cans of water. Pour mixture into a large punch bowl. Add the liter of ginger ale. Slice the fresh lemon and lime and float in the punch along with ice, stirring well to chill. Any additional lemon and lime slices can be used for garnish on cups or serving glasses.
