LOADED SUMMER SQUASH CASSEROLE
My family loves my version of squash casserole. A lot of recipes use a cream of mushroom soup but I use cream of celery instead because it adds great flavor to the dish. Steps:
- 1. PRE-HEAT OVEN TO 350-degrees. Melt butter over medium heat in large pot.
- 2. Chop squash into chunks. (thick slices are equally fine if that's your preference). ADD to pot of melting butter.
- 3. Rough chop onion. ADD to pot of melting butter.
- 4. ADD salt & pepper to taste. I use about 1 tsp salt and 1/2 tsp pepper. STIR ingredients together to coat with salt & pepper. Turn heat to LOW. COVER pot with lid and allow to cook for about 10 minutes until slightly soft. Don't over-cook or the squash becomes mushy.
- 5. ADD Cream of Celery Soup, the sour cream and 1 c. of the shredded cheese.
- 6. CRUSH the Ritz Crackers. ADD half of the crushed crackers and the herbed stuffing mix to the squash, soup, sour cream and cheese mixture. STIR well.
- 7. Spray casserole dish with butter-flavored spray cooking oil. POUR mixture into the casserole dish. (I used an 8x8 in this photo but a larger casserole dish also works)
- 8. Sprinkle top with the cheese and remaining bread crumbs.
- 9. COVER with foil and BAKE at 350-degrees for approximately 30-minutes or until mixture is golden-brown and bubbly. (OPTIONAL): TOP with BACON. Return to oven un-covered for additional 10-minutes.
- 10. REMOVE from oven. Let sit for 5 to 10 minutes and serve warm. Top with chopped chives before serving (optional).

- Preheat oven to 450°. In a large skillet, melt butter over medium heat; add zucchini, yellow squash and shallots. Sprinkle with salt and pepper. Cook, stirring occasionally, 4-6 minutes or until vegetables are crisp-tender. Add garlic; cook 1 minute more., Add the cream; cook until thickened, 3-5 minutes. Remove from heat; stir in 1/2 cup bread crumbs and 1/4 cup cheese. Spoon mixture into a greased 11x7-in. or 2-qt. baking dish. Sprinkle with remaining bread crumbs and cheese. Bake until golden brown, 8-10 minutes.

Steps:
- Cook squash and onion in boiling, salted water for 5 minutes; drain.
- Combine soup and sour cream; stir in carrots.
- Fold in squash and onion.
- Combine stuffing and butter.
- Spread half of stuffing in bottom of 9x13-inch pan.
- Spoon squash mixture on top of stuffing.
- Sprinkle remaining stuffing over top.
- Bake at 350 degrees, uncovered, for 25-30 minutes.
- Note: Can easily be made ahead and served later!

Steps:
- In a small saucepan, combine squash, onion and 1/4 tsp salt.
- Cover with water and bring to a boil. Reduce heat, simmer uncovered for 2 minutes or until squash is crisp tender. Drain.
- In a bowl, beat egg, mayonnaise, sugar, pepper and remaining salt until blended.
- Stir in cheese and squash mixture.
- Transfer to a greased 2 cup baking dish.
- Toss cornflakes and butter; sprinkle over top.
- Bake uncovered at 350 for 25-30 minutes or until golden brown and bubbley.

AUNT FANNIE'S SUMMER SQUASH CASSEROLE

Steps:
- Wash squash, cut in half lengthwise, then in 1/4-inch slices.
- Combine with chopped onion and cook in water to barely cover until both are tender.
- Drain thoroughly, pressing out excess water with back of spoon.
- Mash squash and onion with potato masher.
- Mix with half the butter, the cracker crumbs, eggs, sugar, to taste, salt and pepper.
- Pour into greased casserole dish.
- Pour remaining butter on top and sprinkle with additional cracker crumbs.
- Bake at 375F for 45-60 minutes, or until top is golden brown and bubbly.
- NOTE: This recipe is from a restaurant in Smyrna, Georgia called Aunt Fannie's Cabin.
- Aunt Fannie was a freed slave of an old Georgia family who remained with the family until her death.
- The menu at the Cabin represented many of the dishes that Aunt Fannie prepared for the family.

JONI'S SUMMER SQUASH CASSEROLE
This recipe is so TASTY, and one that my sister introduced me to... Goes GREAT with just about any meal, and especially with baked pork chops, chicken, or turkey. Our family LOVES this, and we have been making it for years... Great for Thanksgiving or Christmas too, in place of stuffing!

Steps:
- Preheat oven to 325.
- Put stuffing mix into a lg. Zip-lock bag, and roll with a rolling pin, to make stuffing into fine crumbs.
- Melt margarine, and mix with the crumbs, in a lg. bowl.
- Put 1/2 crumbs on bottom of a 9x13" pan.
- Mix the rest of the ingredients well.
- Pour squash mixture on top of crumbs. Top with remaining crumb mixture.
- Bake for 1 hours.
- Note:.
- You can spoon these into little oblong aluminum pans, and freeze until ready to use.
