This mild chili gets its flavor from ground sausage, chunky tomatoes, and kidney beans. For a spicier chili, substitute the mild salsa for a medium to high heat salsa.

1 pound ground beef
1 pound ground sausage
1 yellow onion, chopped
2 (14.5 ounce) cans stewed tomatoes
1 (15 ounce) can tomato sauce
1 (15 ounce) can light red kidney beans, drained and rinsed
1 (15 ounce) can dark red kidney beans, drained and rinsed
1 (8 ounce) jar mild salsa
¼ cup chili seasoning mix
½ teaspoon garlic powder

Steps:

  • Heat a large skillet over medium-high heat. Cook and stir beef, sausage, and onion in the hot skillet until beef and sausage are completely browned, 7 to 10 minutes; drain and discard grease.
  • Stir stewed tomatoes, tomato sauce, light red kidney beans, dark red kidney beans, mild salsa, chili seasoning mix, and garlic powder into the beef mixture; bring to a boil, reduce heat to medium-low, and cook at a simmer until the flavors meld, 90 minutes to 2 hours.

1 lb hamburger
1 (1 1/4 ounce) package McCormick mild chili seasoning
3/4 cup water
1 (16 ounce) can bush chili beans
1 (15 ounce) can tomato sauce

Steps:

  • Brown and drain the hamburger.
  • Sprinkle seasoning over hamburger and stir to coat.
  • Stir in water and bring to a gentle boil for about 2 minutes.
  • Add beans and tomato sauce.
  • Let simmer until warmed through.
  • Serve topped with shredded cheddar cheese and/or chopped onions and/or crushed saltines, if desired.

1 1/2 lbs lean ground beef (90%-95%)
1 (16 ounce) can red kidney beans
3 (16 ounce) cans Del Monte crushed tomatoes with mild green chilies
1 (15 1/2 ounce) jar mild salsa
hot sauce (Fire In The Hole is good!)
1 (3 7/8 ounce) can sliced olives
salt and pepper

Steps:

  • Brown ground beef in (preheated) large skillet with a little water.
  • Drain and rinse beef in a colander.
  • MUST RINSE IF YOU WANT IT LOW FAT!
  • Leave the colander in the sink.
  • Put beef in a stock pot.
  • Rinse kidney beans in the colander.
  • Mix them with the beef.
  • Add all other ingredients.
  • Cook over med-low heat for about an hour.
  • Stir once in a while.
  • DON'T LET IT BURN!
  • Serve hot.
  • Great with Tortilla chips and shredded cheddar cheese.
  • Note: For the best Nachos EVER, Spread finished chili over tortilla chips, top with shredded Monterey Jack cheese.
  • Place in preheated 400°F oven for 10 minutes.
  • Sour cream on the side.
  • You can make this into 2 layers also.
  • Just add more chips, then chili, then cheese again.
  • Same cooking time if layered.

OLD JOHN'S CHILI CON CARNE

This was my father's chili con carne recipe. He rarely measured anything when making it and consequently neither do I. It is a very mild chili but the heat/spice level can easily be increased (with tabasco or chile peppers) for those who like that sort of thing. The leftovers freeze very well and make an excellent chili mac casserole, it also goes well as Cincinnati style chili (with spaghetti), or in burritos or tacos. I LOVE LOTS and LOTS of dark red kidney beans, but you can use as much or as few beans as you like even substituting light red beans if you prefer. Like all chilis; it's even better the second or third day. The cocoa powder gives it a deeper base note; but can be omitted or instant coffee may be used as a substitution. If you use instant coffee, introduce it in small increments and taste frequently as coffees vary in strength, you may not require as much instant coffee as cocoa powder. The single most variable measure is the ketchup. It is a "to taste" ingredient and is used to balance the seasoning vs tomato. It depends greatly on the amount of the seasoning you add and how acid the tomato sauce and paste are, as well as the intensity of the onion. I can use as little as 3 TBSP or as much as an 8 ounce bottle. It is a very adaptable recipe and handles additions and changes very well. It also travels well for potlucks or brunches. Make it as thick or as thin as you want

3 large bermuda onions, cut up coarsely (the larger the onions, the better)
3 large garlic cloves, sliced thin (more or less)
1 large garlic clove, diced (more or less)
3 lbs ground chuck
1 (29 ounce) can tomato sauce
1 (6 ounce) can tomato paste
3 (52 ounce) cans dark red kidney beans, drained (reserve liquid)
1 (1 ounce) jar mc cormick's chili powder (mild)
kosher salt (to taste)
cumin (to taste)
turmeric (to taste)
paprika (mild, to taste)
2 tablespoons cocoa powder (regular or Dutch processed, you can substitute instant coffee powder, see note in description)
2 tablespoons extra virgin olive oil
tomato ketchup

Steps:

  • Heat olive oil in frying pan add one onion, the ground chuck, the 3 sliced cloves of garlic, 1 teaspoon each of cumin, paprika, tumeric and 1 tablespoon chili powder, saute until beef is browned and drain off the liquid/oil.
  • Place drained beef and onion mixture into a large stock pot over medium heat. Add the remaining onion, the diced clove of garlic, the drained kidney beans and the tomato sauce and stir well.
  • If the mixture is too thick, thin it with the reserved bean liquid or add another can of tomato sauce.
  • Add the tomato paste, another TBSP each of the cumin, paprika and tumeric, 2 TBSP of cocoa powder and 2 to 4 TBSP of the chili powder. (sometimes, I'll use the entire jar) Cook until the onion is tender, stirring occasionally and thinning as desired with the reserved bean liquid.
  • Add enough tomato ketchup to correct for the acid balance (see note above).
  • Serve with grated cheddar cheese and sour cream if desired.

This is my version of Chili. It is easy to prepare and very mild in taste. You prefer yours hotter, just up the spices. My family loves it served either over rice or spaghetti topped with sharp cheddar and sour cream. I like mine with few pickled jalapenos on top! Enjoy! PS-I really believe the fresh garlic makes a big difference in this chili.

2 lbs ground beef (I prefer a higher fat content and drain later. I think it is more flavorful)
1 large onion, diced
4 garlic cloves, minced
4 (14 ounce) cans stewed tomatoes
1 (14 ounce) can tomato sauce
2 tablespoons chili powder
2 teaspoons oregano
2 teaspoons salt
1 pinch sugar (healthy pinch)
1 (14 ounce) can kidney beans
1 (14 ounce) can black beans (any combo of beans that you like)

Steps:

  • In a frying pan brown the beef with the onion and garlic over medium heat.
  • Over medium heat add to a dutch oven or large pot all ingredients except beans. Break up the tomatoes with a spoon or your hand. I squeeze mine.
  • Once the meat is ready, drain and add to the tomatoe mixture. Let simmer for an hour or so, add beans. Taste for seasonings. I usually let mine set on the stove on warm or low for a few hours to let the flavors meld. It is even better the next day.
  • If you choose to use lean beef and no draining, just make it all in the dutch oven or large pot.

1 (28 ounce) can crushed tomatoes
1 (15 ounce) can black beans, rinsed and drained
1 (15 ounce) can kidney beans, rinsed and drained

3 tablespoons chili powder
2 teaspoons ground black pepper

Steps:

  • Lightly coat the inside of a slow cooker with cooking spray.
  • Heat a large skillet over medium-high heat. Cook and stir ground turkey in the hot skillet until browned and crumbly, 5 to 7 minutes; drain and discard grease. Transfer ground turkey to the slow cooker.
  • Stir crushed tomatoes, black beans, kidney beans, diced tomatoes, tomato paste, chili powder, black pepper, salt, and garlic powder into ground turkey.

4 lbs extra lean ground beef (96%)
4 (15 1/2 ounce) cans kidney beans, drained and rinsed
2 large onions, chopped
2 large tomatoes, chopped
1 lb carrot, peeled and sliced
4 bell peppers, 1 green 1 red, 1 yellow, 1 orange, cut into 1/2-inch squares
6 garlic cloves, chopped
2 (46 fluid ounce) vegetable juice, spicy hot
1/2 cup cashew meal
4 tablespoons chili powder
1 teaspoon cumin
2 teaspoons paprika
1 teaspoon celery seed
1 teaspoon fresh ground pepper

Steps:

  • In a large skillet, brown the ground beef, one pound at a time, over high heat together with the garlic and onions. If your skillet or wok is large enough, you can brown the beef all at once to save time. On the last batch, add the spices after the beef is browned and continue frying for another couple of minutes.
  • Add the browned beef to a very large pot with a lid, and then add the beans, tomatoes, carrots, peppers, and V8 juice. Bring to a boil and then reduce heat to simmer. To make the cashew meal, process the cashews in a blender in short bursts, until a grainy meal is formed. Don't process for too long or you'll have cashew butter. Stir in the cashew meal, cover, and simmer for an additional 30 minutes. Makes 10 servings.

I found a recipe and tweaked it to suit my tastes. If you like tomatoes and for your chili to have more of a sweet taste and not too many beans then this is the recipe for you and if your family doesn't care for beans, you can leave them out.
