Fresh jalapenos is needed for this recipe which easily doubles/triples to do in batches for canning. This is JJ's chutney that will give your mouth a funky little roller coaster ride of hot & sweet. Serve it with cream cheese on crackers, or as chutney on Tortilla chips. Great for gift baskets! Remove the seeds from the jalepenos for 'Cowgirl Candy'. I have sometimes made this with an assortment of hot peppers from our garden.

2 cups fresh jalapenos, sliced (must be fresh!)
1/2 onion, chopped
1 teaspoon kosher salt
1 cup light corn syrup
2 -4 drops green food coloring

Steps:

  • Place all ingredients into a small saucepan and cook over medium heat until boiling.
  • Reduce temperature to low and simmer 20-25 minutes, stirring occasionally until liquid is reduced by about half.
  • Let cool, stirring occasionally (it will thicken more as it cools) You can serve it warm or transfer to a jar and store in refrigerator. Serve with crackers spread with cream cheese and the candy.
  • TO JAR FOR LONG STORAGE OR GIFTS: Carefully pour hot candy/jelly into sterilized 4 or 8 oz jars, leaving a 1/4" headspace. Wipe jar rims, place warm lids and rings atop and tighten hand tight. Process in a boiling water canner for 10 minutes. Remove jars and cool on a wire rack.

Cooking in a cast iron skillet is the true cowboy way and no one knows about cowboy cooking more than the famous outlaw, 'Johnny Jalapeno'! Rumor has it he was almost lynched by the famed McDaniel gang over this recipe. They shouted "This ain't no derned cowboy supper, ain't no beans in it!" Well, Johnny ran quick as lightning over to the campfire, and made another skillet supper, this time adding the last can of beans he had! 1 lb ground beef
1/2 onion, chopped (optional)
1 (1 ounce) envelope taco seasoning mix (Old El Paso is Johnny's favorite)
1 (14 ounce) can kidney beans, drained well (or pinto or black beans)
1 cup kernel corn
1 (8 ounce) box corn muffin mix
1/3 cup 2% low-fat milk
1 egg
1/2 cup cheddar cheese, shredded
2 tablespoons chopped jalapenos
1 cup monterey jack cheese
1 cup shredded lettuce
1/4 cup chopped tomato
1 dollop sour cream
1 dollop guacamole

Steps:

  • Lightly grease the inside of an 10" cast iron skillet with a little butter. Place in oven and turn temperature to 450°F.
  • Meanwhile, cook beef (and onion if using) in a medium sized skillet. When almost done (drain if necessary), add seasoning mix, stirring to coat. Add beans and corn and continue cooking for 1-2 minutes.
  • In a medium bowl, mix corn muffin mix, milk, and egg until smooth. Add cheddar and jalapeno, mixing to combine. Carefully remove cast iron skillet from oven and spread dough into it, using the back of a wooden spoon (pan will be hot).
  • Spread beef and bean mixture over dough, leaving a 1/2" border. Bake uncovered 15 minutes.
  • Sprinkle with monterey jack cheese and bake an additional 2 minutes or until cheese is warm and melted. Top with garnishments, slice pie fashion and serve.

Ok, they are really johnny cakes with jalapeño and cheddar (but it coulda have happened that way) :P *Make up a story about this fictional character around the campfire while rising and cooking them. If your really talented, make them in the shape of a jalapeno pepper!

1 cup cornmeal
1 teaspoon baking soda
1 teaspoon salt
1 tablespoon sugar
2 eggs
1 cup 2% low-fat milk
2 tablespoons butter, melted
2 tablespoons jalapeno peppers, finely chopped, seeded
1/4 cup cheddar cheese, grated

Steps:

  • Combine the dry ingredients in a stainless steel bowl. Combine the liquid ingredients in a separate bowl using a whisk.
  • Pour the liquid ingredients into the dry ingredients and whisk together. Allow to rest for 30 minutes before cooking.
  • When ready to cook stir in the jalapeno and cheddar cheese. Cook on a lightly oiled griddle or low sided pan.
  • When the first side has cooked to a golden brown, flip and cook second side. Serve immediately.

This is a fantastic one dish meal recipe that is super fast and easy to make. And here's how this recipe came about: JJ and the McDaniel gang went on a long needed vacation. They were enjoying the blue waters and sandy beaches of cancun, but that Johnny still had a hankerin for cookin! (it's in his blood, he can't help it). Well, with all those delicious tropical fruits and flavors around, he told the gang that "well, a man's gotta do what a man's gotta do". So the gang helped their buddy and stormed inta the hotel kitchen wavin their pistolas high up in the air shoutin' 'Stand back!" as Johnny started grabbin for the pans. Well that frightened little manager of the hotel had him a taste,.. It was so good, that when the sheriff arrived, the manager told him that is was just a case of 'good old island fever!" The sheriff was initially a bit upset by the false alarm , but he got over it just fine after a taste of this medly. Ah, love vacations, they'z always an adventure! said Johnny.

1 tablespoon extra virgin olive oil
2 tablespoons butter
2 garlic cloves, minced
1 jalapeno, diced small (optional)
1/2 red onion, thinly sliced
1 tablespoon fresh ginger, minced (or 1 tsp ground)
1 large carrot, ribboned (see instructions)
1 (8 ounce) can sliced water chestnuts, drained
1/3 cup pink grapefruit juice
1/4 cup orange juice
2 tablespoons lemon juice
2 tablespoons honey
1 1/2 lbs jumbo shrimp, peeled deveined
1 cup cooked white rice (or brown)
1/4 cup chopped parsley flakes

Steps:

  • CARROT RIBBONS: Peel the carrot and then continue peeling long strips, rotating the carrot so the strips don't get too wide.
  • Heat oil and butter in a large skillet on medium heat. Add the garlic, jalapeno, onion, and ginger. Cook 1 minute to soften onions. Add carrots, and water chestnuts and continue cooking until carrots are just tender, about 2-3 minutes. Spoon the vegetables to a dish and cover to keep warm.
  • In the same skillet increase the heat to med-high. Add the juices and honey. When the juice has simmered down some, add the shrimp and cook about 1 minute per side when shrimp is just about fully cooked.
  • Add the vegetables back in along with the cooked rice and stir until sauce coats everything and thickens. Plate up, garnish with the dried parsley, and serve.

A refreshing summer treat - both sweet and tart! Make your own pie crusts with the ingredients and instructions below or cheat and buy crusts. Either way you have an easy make-ahead dessert. My favorite to make at our lake cottage in Michigan. (Time includes chill time.)

3 cups graham cracker crumbs
2/3 cup butter, melted
6 tablespoons sugar
8 ounces Cool Whip, thawed
12 ounces frozen pink lemonade concentrate, thawed
1/2 gallon vanilla ice cream, softened
red food coloring (optional)

Steps:

  • Preheat oven to 375°F.
  • Combine graham cracker crumbs, butter and sugar.
  • Press crumb mixture into two 9-inch pie plates.
  • Bake 10 minutes; cool.
  • Combine Cool Whip, lemonade and ice cream.
  • Add a few drops of food coloring at this time (if using), mixing well, until you get the desired color.
  • Mound mixture into pie crusts.
  • Freeze for at least 4 hours.
  • Variation 1: Use yellow lemonade and yellow food coloring.
  • Variation 2: Use limeade and green food coloring.
