1 cup cornmeal
½ cup milk
½ cup shortening
½ cup white sugar
1 ⅓ cups cake flour
2 ½ teaspoons baking powder
1 teaspoon salt
1 egg
1 cup milk

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease thoroughly an 8 inch square cake pan.
  • Combine cornmeal and milk. Sift flour, baking powder, and salt. Stir together the egg and milk.
  • Cream shortening, and blend in sugar. Stir flour mixture and egg mixture alternately into creamed mixture alternately. Blend in cornmeal mixture.
  • Bake for 40 to 45 minutes. Serve hot, with maple syrup.

My children expect this at least once a month as a regular feature on our Saturday morning breakfast menu OR when we have breakfast-for-supper. Prepare the optional sausage and hard-boiled eggs ahead of time, and it goes together quicker-n-anything!

2 cups flour
1/2 cup sugar
2 tablespoons baking powder
1 teaspoon salt
2 cups cornmeal, yellow
4 eggs
2 cups milk
1 cup oil

Steps:

  • Preheat oven to 425; grease a 13x9 pan.
  • Add dry ingredients to a large mixing bowl, stir through, make a well in the center.
  • In another bowl, add eggs, milk, and oil all at once; blend well.
  • Add wet to dry ingredients, stir until moistened (don't over-mix or you'll be sorry!).
  • Fold in optional ingredients. Sausage should be in crumbles or bite-size pieces.
  • Pour into prepared pan; rap pan on counter-top several times to bounce out the air-bubbles.
  • Bake for 25-30 minutes--top will be golden-brown.
  • Serve with butter and maple syrup.
  • OPTION #1: Add 1 cup grated sharp Cheddar cheese.
  • OPTION #2: Add 1/2 - 1 cup of sweet corn (plain kernels); adds a neat "chewy" texture to the 'cake.'
  • OPTION #3: Add 6 hard-boiled, chopped eggs.
  • OPTION #4: Add 1 pound fried & drained pork sausage (crumbled) or links (bite-size).

1 cup yellow cornmeal
2 tablespoons whole wheat flour
½ teaspoon salt
1 tablespoon white sugar
1 teaspoon baking powder
1 ½ tablespoons shortening, melted
1 cup boiling milk
1 egg, separated

Steps:

  • Preheat oven to 275 degrees F (135 degrees C). Lightly grease a 9x9 inch baking pan.
  • Sift cornmeal and flour together and spread thinly on a baking sheet. Bake in preheated oven until lightly brown, about 10 minutes. Let cool. Raise oven temperature to 400 degrees F (200 degrees C).
  • In a large bowl, combine cornmeal mixture, salt, sugar and baking powder. Pour in shortening and milk; stir to blend.
  • In a separate large bowl, beat egg white until stiff. In a third bowl, beat egg yolk then fold into egg white. Gently stir flour mixture into beaten egg. Pour into prepared baking pan.
  • Bake in preheated oven for 45 to 50 minutes, until golden brown.

3 c flour
1 Tbsp baking powder
1 tsp salt
1/4 c white sugar
1/2 c butter
2/3 c milk

Steps:

  • 1. Combine dry ingredients and cut in the butter until pea sized. Add milk to make a soft dough and knead until smooth. Let dough rest for about 10 minutes.
  • 2. You can use either of these cooking methods: Heat a cast iron skillet on very low to medium low heat on the stove top and grease well. Roll out the dough into a disk that neatly fits in the pan. Grill on each side about 10-15 minutes being careful not to burn it. Flipping it is a challenge. I used 2 spatulas in tandem. Check for doneness and cut into wedges and eat. This is how they do it in the Bahamas.
  • 3. OR place the dough in a greased 8 or 9 inch round or square pan. Pierce the top with a fork and bake at 350 for 20-25 minutes. Remove from oven and brush with milk, return to oven and bake for 5 minutes more. Then EAT IT.

4 teapoons baking powder
1/2 cup sugar
3 1/2 tablespoons oil (like peanut or canola)
1 1/2 cups water
1 teaspoon salt
3 tablespoons butter or margarine, melted

Steps:

  • Mix dry ingredients together well. Add wet ingredients and mix. Batter will be thick. Turn onto floured surface and knead several times or beat batter in bowl several times with a wooden spoon. Turn into a greased 8" round or square pan (can use an iron skillet). Dip fingers into flour and pat down dough. Prick top with a fork and brush with half of melted butter. Bake @450F for 25 minutes or until light golden brown. Brush with remaining melted butter. Cool slightly and serve warm or at room temp.

My Uncle Johnny, one of my mother's brothers, sent us this recipe in the '70s. It's a Texas treat I hope you'll enjoy!

6 eggs - separated
1 lb brown sugar
1 lb margarine or butter
4 c flour
1 tsp baking powder
8 oz glazed cherries
8 oz glazed pineapple
3-1/2 Tbsp lemon extract
1 lb shelled pecans

Steps:

  • 1. Cream together brown sugar and margarine or butter. Add egg yolks. Reserve egg whites for Step 5.
  • 2. Dredge fruit in 2 cups of the flour.
  • 3. Mix baking powder and remaining two cups of flour, and add to sugar and egg batter.
  • 4. Stir in fruit mixture from Step 2.
  • 5. Beat egg whites to a soft peak and fold in.
  • 6. Pour into either a prepared 13 x 9 pan or Bundt pan, sprayed with cooking spray.
  • 7. Bake at 225 degrees for 3 to 3-1/2 hours, considering not all ovens were created equal. ;)
  • 8. Enjoy a big ol' hunk of Texas goodness with a large dollop of your favorite vanilla ice cream. Mmm-mmm good! ;)

I remember making this growing up from a handwritten recipe that my mom kept in a plastic sleeve. It's one of the first recipes I learned to make, and along with her banana bread recipe, the first place I learned to 'sour' milk by adding a little lemon juice or vinegar to the milk. Serve with butter and honey and a glass or milk for a great snack, or serve as a side dish to chili, fried chicken, or just about anything that you'd enjoy a hunk of cornbread with! njoy!

  • I remember making this in a weird little rectangular pan, which I'm sure we greased. I would estimate this to fit in an 8 or 9 inch square pan, Adjust time accordingly, as the 8 inch will make a litte thicker cake. Bake until a toothpick comes out clean--no longer--so it will stay moist.

2 cups flour

1 box butter pecan cake mix
1 can(s) coconut pecan frosting
ingredients needed to prepare cake
1 tub cool whip
1 pkg sweetened flaked coconut
1 small package chopped pecans

Steps:

  • 1. Preheat oven to proper temperature indicated on the box for the type of baking vessel you prepfer. In a large bowl, mix cake batter according to package directions.
  • 2. Once batter is mixed, add can of frosting. Fold into batter until well incorporated.
  • 3. Pour batter into a greased and floured (we use baking nonstick spray with flour) 13 x 9 baking dish. Original recipe calls for the use of a Bundt pan so you can use this pan if desired. Bake until cake is golden brown and toothpick inserted into center comes out clean.
  • 4. Remove from oven and let cool completely. If using Bundt pan, cool for few minutes before removing the cake from the pan to completely cool. Spread tub of cool whip all over the top of the cake (or all over cake if used the Bundt pan).
  • 5. Sprinkle coconut all over the cool whip and then sprinkle the chopped pecans on top of the coconut. Cake is ready to be served. Refrigerate leftovers.
  • 6. *Variations: We substituted Caramel cake mix when Butter Pecan cake mix was not available. If making the cake in the Bundt pan, you can choose to skip the cool whip, coconut, and pecans and just serve the cake with some powdered sugar sprinkled on top. You can also frost the cake with another can of the coconut pecan frosting if desired. You can really make this cake recipe your own by trying different variations.

Knead a few times until dough is smooth and hold together. Let rest* for 10 to 20 minutes. Shape into rounds. Flatten in your hand (real islands know the deal) or flatten out, prick with fork. If you are frying, make sure that your oil is hot, and place in fryer. Fry at medium-high heat over stove, turning several times, until brown and crusty on both sides. it should take 15 to 20 minutes. 1 cup water
1/2 cup shortening
4 tablespoons cocoa
2 cups flour

1/2 cup buttermilk
1 teaspoon vanilla

  • Bring to a boil the margarine, water, shortening and cocoa; set aside to cool.
