1/3 cup Dark Chocolate Chunks or Chocolate Chips
Peanuts (optional)
TROPICAL PINEAPPLE COCONUT MACADAMIA GRANOLA BAR:
12 Pitted Dates
1 cup Rolled Oats
2 Tablespoons Almond Butter
1/3 cup Honey
2 Tablespoons Coconut Oil (melted)
1/2 cup Coconut Flakes (unsweetened)
1/2 cup Dried Pineapple (chopped)
1/2 cup Macadamia Nuts (chopped)
Pinch of Salt
CHOCOLATE CHIP COOKIE DOUGH GRANOLA BAR:
12 Pitted Dates
1 cup Rolled Oats
1/4 cup Raw Cashews
1/3 cup Honey
2 Tablespoons Coconut Oil (melted)
1/4 teaspoon Salt (if cashews are salted, don't add salt)

2 1/2 Tablespoons Coconut Oil (melted)
Pinch of Salt
1/3 cup Dark Chocolate Chunks or Chocolate Chips
CRANBERRY WALNUT TRAIL MIX GRANOLA BARS:
12 Pitted Dates
1 cup Rolled Oats
2 Tablespoons Almond Butter
1/3 cup Honey
2 Tablespoons Coconut Oil (melted)
Pinch of Salt
1/2 cup Dried Cranberries
1/3 cup Walnuts

Steps:

  • To make each Homemade Granola Bar Recipe:
  • Combine dates, honey, nut butter or nuts, and coconut oil in food processor or high-powered blender (such as Vitamix or Blendtec). If you want to blend the oats into a flour-type consistency, add to food processor. If you want hearty oats (like a granola bar), stir in oats when you add mix-ins.
  • Pulse mixture until smooth.
  • Place mixture into a bowl and stir in remaining mix-in ingredients.
  • Press into a small pan or baking dish (I use a quarter baking sheet) and place into freezer to chill for 15 minutes to allow the bars to set up.
  • Remove from freezer and cut into bars.
  • Store in pantry, refrigerator, or freezer.

ROCKY ROAD GRANOLA BARS

Cooking spray
2 1/2 cups rolled oats (225 grams)
2 tablespoons ground flax seed (14 grams)
1/2 cup crumbled digestive biscuits (60 grams)
1/2 cup finely chopped walnuts (65 grams)
1/2 cup chocolate chips (60 grams)
1/4 cup brown sugar (50 grams)
1/4 cup honey (85 grams)
1/4 cup golden corn syrup (85 grams)
6 tablespoons unsalted butter (85 grams)
1/2 teaspoon vanilla extract
1/4 teaspoon kosher salt
3/4 cup mini marshmallows, optional (40 grams)

Steps:

  • Grease a 9-inch square baking pan with cooking spray, line the bottom with parchment paper and set aside.
  • Combine the oats, flax seed, digestive biscuits, walnuts and chocolate chips in a large heat-proof bowl.
  • Combine the sugar, honey, corn syrup and butter in a small saucepan set over medium heat. Cook, stirring occasionally, until the butter melts and the mixture starts to boil. Once it has come to a light boil, cook the mixture for 2 minutes to dissolve the sugar.
  • Remove the pot from the heat and stir in the vanilla and kosher salt. Add to the oat mixture and stir to combine. Stir in the marshmallows, if using.
  • Scrape the mixture into your prepared pan and press firmly into an even layer. Place the pan in the fridge for about 1 hour to firm up.
  • Carefully lift the granola bars out of the pan and slice into 12 equal bars. Wrap individually in parchment, wax paper or plastic wrap and place in a tightly sealed container.
  • For a chewier bar, store in the fridge. For softer bars, store in the cupboard.

  • Melt 2 tablespoons butter in a saucepan with 1/3 cup honey and brown sugar, and a pinch of salt. Mix in 2 cups rolled oats, 1 cup each chopped nuts and dried fruit, and 2 tablespoons wheat germ. Press into a parchment-lined 8-inch-square pan and bake 30 minutes at 300 degrees F. Cool, then cut into bars.

These granola bars are the perfect way to get your gingerbread fix first thing in the morning without actually eating a cookie. They get the signature gingerbread flavor from molasses in the syrup, lots of ground holiday spices and, my favorite, a couple tablespoons of candied ginger. This recipe can easily be doubled and baked in a 13-by-18-inch baking sheet; I like to do this and freeze half for later.

Nonstick cooking spray
1/2 cup dark brown sugar
1/2 cup vegetable oil
4 tablespoons honey
2 tablespoons molasses
2 1/4 cups old-fashioned oats
3/4 cup pecan pieces, toasted
3/4 cup slivered almonds
1/2 cup salted roasted cashews, chopped
1/2 cup pepitas
2/3 cup dried cranberries
3 tablespoons candied ginger, chopped
1 tablespoon ground cinnamon
1 teaspoon ground ginger
1/2 teaspoon ground allspice
1/4 teaspoon ground cloves
1/4 cup plus 1 tablespoon whole-wheat flour
1/4 cup plus 1 tablespoon wheat germ
Kosher salt
1/4 cup holiday sprinkles

Steps:

  • Preheat the oven to 350 degrees F. Line a 9-by-13-inch rimmed baking sheet with parchment and grease well with nonstick cooking spray.
  • Combine the brown sugar with the oil, honey and molasses in a medium saucepan. Bring to a boil over medium heat, stirring often. Remove from the heat and set aside.
  • Toss together the oats, nuts, pepitas, dried cranberries, candied ginger, spices, wheat flour, wheat germ and 1 teaspoon salt in a large bowl. Pour the honey mixture on top and toss to coat. Transfer to the prepared pan and spread evenly. Spray the bottom of a second baking sheet with nonstick cooking spray and use it to press the granola down into the pan evenly. Sprinkle the holiday sprinkles on top.
  • Bake until golden brown, 25 to 30 minutes. Let cool completely, then remove from the baking sheet and cut into fourteen 1 1/2-by-4-inch bars. Store in an airtight container at room temperature for up to a week or freeze for up to 2 months.
