EASY, CHEESY ONE POT SLUMGULLION
You have most likely had this one pot slumgullion before, you just didn't know it! I've heard it called American Goulash, American Chop Suey, Beefaroni and Beefy Mac! It doesn't matter what you call it, it is such a delicious, EASY meal! Meat, tomatoes, macaroni and shredded cheese all come together in one pot for the perfect, family-friendly weeknight meal!

- In a large skillet over medium high heat, add 1 tsp olive oil. Add ground beef to pan and brown the meat, breaking it up with a spoon as it cooks (2-3 minutes). Season meat with Italian seasoning, seasoning salt and garlic powder. Pro Tip: During the last minute of cooking, use a potato masher to get the meat broken up into super small bits.
- Add onion and green pepper and cook 2 minutes more, stirring occasionally.
- Add crushed tomatoes, beef broth, Worcestershire sauce and macaroni. Give everything a big stir. Bring to a boil. Then, reduce heat to LOW, cover and cook 15 minutes until macaroni is tender.
- Turn off the heat. Stir in brown sugar (if using), then sprinkle cheese over pan. Cover the pan for a minute or so until cheese melts. Top with scallions and crushed red pepper and serve immediately.

Slumgullion (also known as American Goulash, American Chop-Suey, or Beefaroni) is a classic -and incredibly cheap - comfort meal. But make no mistake, this slumgullion recipe is anything BUT cheap-tasting. Who knew basic ingredients like pasta, ground beef, onion, and tomato sauce could make such an easy, delicious dinner?

- In a large non-stick pot, add 1 tbsp olive oil. Once hot, add in onions and saute until fragrant.
- Add the ground beef, onion powder, garlic powder, oregano, rosemary, salt, pepper, and red chili flakes. Stir up the ground beef with your spatula to break it into chunks, and stir until meat is fully cooked.
- Mix in the tomato sauce and bouillon. Reduce the heat to low, and mix to combine. Allow the mixture to cook for 5-7 minutes. Turn off the heat.
- Add in the cooked pasta and stir the mixture to combine.
- You can serve the slumgullion as is at this point, or you can mix in the cheddar cheese.
- Sprinkle some chopped parsley and the slumgullion is ready to serve. ENJOY!

- Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain and place in large saucepan.

- Brown the meat over high heat with 1-2 TB olive oil in a dutch oven. Saute onion with meat. Add carrots, potatoes, tomatoes, seasonings and water and simmer for at least 1-2 hours or until the vegetables are tender. You can add leftover veggies such as cabbage, corn, green beans, etc. Thicken the broth with flour. Add 1/2 cup macaroni in last 1/2 hour cooking, if desired. Adjust seasonings if needed. If you are using stove top, be careful to not overcook.

- Pat lamb dry and season well with salt and pepper. Put oil in a heavy-bottomed soup pot over medium-high heat. Brown meat on all sides, working in batches.
- Set meat aside and add onions and carrots to pot. Season with salt and pepper. Cook vegetables, stirring, until lightly browned, about 5 minutes. Heat oven to 350 degrees.
- Return meat to pot, add broth and bring to a simmer. Put in thyme sprig and arrange potatoes on top (it's fine if potatoes are not completely submerged). Season potatoes, cover pot and transfer to oven.
- Bake for about 1 hour, until lamb is quite tender when probed with a skewer or paring knife. Remove fat from top of broth. Ladle stew into shallow bowls and serve.
