SNICKERDOODLE COOKIE PIZZA

Cooking spray
2 1/2 cups flour
1 teaspoon baking soda
1 teaspoon sea salt
3/4 teaspoon cream of tartar
2 sticks unsalted butter, softened
1 cup plus 2 tablespoons sugar
3 large egg yolks
2 tablespoons pure vanilla extract
1/2 teaspoon ground cinnamon
1 pound fresh raspberries
2 tablespoons vodka
1/4 teaspoon fresh thyme leaves
Pinch kosher salt
2 cups chocolate ganache or store-bought chocolate fudge
3/4 cup chopped brownie
1/2 cup fresh mixed berries
1/4 cup white chocolate chips
1/2 teaspoon fleur de sel or sea salt

Steps:

  • Preheat the oven to 350 degrees F. Line a 14-inch round baking pan with parchment and spray with cooking spray.
  • For the pizza: In a medium bowl, whisk together the flour, baking soda, salt and cream of tartar. Set aside.
  • In the bowl of an electric mixer, combine the butter and 1 cup sugar. Beat on high speed until light and fluffy, about 4 minutes. Add the egg yolks and vanilla and beat until combined. With the mixer on low speed, gradually add the flour and mix until just combined.
  • Transfer the dough to the prepared baking pan and spread into the pan, leaving a 1-inch gap around the edge (to allow for spreading). In a small bowl, combine the cinnamon and the remaining 2 tablespoons sugar. Sprinkle over the dough. Bake until the cookie is brown at the edges, 12 to 18 minutes. Transfer to a wire rack to cool completely.
  • Meanwhile, make the raspberry drizzle: Combine the raspberries, vodka, thyme and pinch of salt in a blender or food processor and pulse until smooth. Strain and store in the refrigerator until needed.
  • Before serving, spread the cookie with chocolate ganache, leaving about 1-inch border. Scatter the brownie pieces, berries and chocolate chips on top of the pizza. Spoon about 1/4 cup raspberry drizzle over the top (reserving remaining drizzle for another use). Sprinkle with sea salt. Serve immediately.

1 roll (16.5 oz) Pillsbury® refrigerated chocolate chip cookies
1 1/2 cups miniature marshmallows
1/2 cup red and green candy-coated chocolate candies
1/2 cup hot fudge topping, heated, if desired

Steps:

  • 1. Heat oven to 350 degrees F. Grease 12-inch pizza pan with shortening, or spray with cooking spray. In pan, break up cookie dough into pieces and press out dough evenly in bottom of pan to form crust. Bake 12 to 17 minutes or until light golden brown.
  • 2. Sprinkle marshmallows and candies evenly over crust. Bake 2 to 3 minutes longer or until marshmallows are puffed. Drizzle hot fudge topping over top. Cool completely, about 1 hour. Cut into wedges to serve.
  • Use candy-coated chocolate candies in all colors for a festive New Year's party cookie! For taste variations, add 1/4 cup semi-sweet chocolate chips, butterscotch chips or peanut butter chips after drizzling with hot fudge.

MONSTER COOKIE PIZZA

This recipe came about because of an accident with a cookie recipe. My son Aaron was making chocolate chip cookies for the first time with me supervising. He did great with the mixing but when it came time to bake he used the ice-cream scoop to put them on the cookie sheet. We went to check on them because they were going to spread out and we were surprised to find that they were spreading over the side of the pan so while my son got them out of the oven before they started to bake completely, I got a cookie sheet with sides and we sprayed it and scraped the melting cookies on to it. We finished baking them and to our surprise they looked like a pizza because all the chocolate was on the top and the cookie was on the bottom.

1/2 cup shortening
1/2 cup butter
2 1/2 cups all-purpose flour
1 cup packed brown sugar
2 eggs
1 teaspoon vanilla
1/2 teaspoon baking soda
1 (12 ounce) package semisweet chocolate chips

Steps:

  • Preheat the oven to 375 degrees F.
  • In a mixing bowl beat the shortening and butter with an electric mixer on medium to high speed for 30 seconds. Add 1 1/4 cups of the flour and the brown sugar and beat until thoroughly combined. Add the eggs, 1 at a time, and mix until incorporated. Add the vanilla and baking soda. Beat in the remaining 1 1/4 cups flour and mix until well combined. Stir in chocolate chips.
  • Using a large ice-cream scoop, place full scoops of the batter on a cookie sheet with no sides. Bake for 5 minutes or until they start to melt. Remove from oven and place on a cookie sheet with sides or a medium size jelly roll pan. Finish baking about 6 to 10 minutes or until cookie base is dark brown. Remove from oven and let cool. They can be sliced into squares or broken into pieces.

2 (16 1/2-ounce) packages chocolate chip cookie dough (recommended: Nestle Tollhouse)
1/2 cup heavy whipping cream
4 ounces chopped semisweet chocolate
1/2 cup toffee chips
1/4 cup chopped pecans

Steps:

  • Preheat the oven to 375 degrees F. Spray a nonstick 12-inch pizza pan with nonstick spray.
  • Press the cookie dough into the bottom of the prepared pizza pan. Bake for 25 minutes.
  • Remove the pizza from the oven and let cool on a wire rack. Remove from the pan.
  • Meanwhile, bring the heavy cream to a gentle simmer in a small saucepan over medium heat. Add the chopped chocolate to a medium bowl. Pour the hot cream over the chocolate and stir to melt. Let stand for 5 minutes to thicken. Top the pizza with the cooled ganache. Sprinkle with toffee chips and pecans. Slice into wedges.

1 (18-ounce) package prepared sugar cookie dough (such as slice and bake kind)
1 pound can prepared vanilla frosting
Red and green food coloring, for making garnish
1 tablespoon sweetened coconut flakes
4 ounces marzipan (1/2 cup), chilled
1 fruit roll-up (cherry, strawberry, or raspberry)
5 white jelly rings

Steps:

  • Preheat the oven to 350 degrees F.
  • Form the cookie dough into a flat disk, wrap in plastic, and refrigerate for 30 minutes.
  • Roll the dough out between 2 sheets of waxed paper into a 12 to 13-inch circle. Carefully transfer to a greased baking sheet and bake until lightly browned, about 12 to 15 minutes. Let cool on the baking sheet for 10 minutes, then transfer to a wire rack to cool completely.
  • Meanwhile, put frosting in a mixing bowl and gradually stir in red food coloring until it resembles tomato sauce. Put coconut in a bowl and add green food coloring until it's the color of basil.
  • Lay the fruit roll-up out flat and use a 1 1/2-inch round cookie cutter to cut out "pepperoni" slices. Use the large holes of a grater to shred the marzipan into "mozzarella." Set toppings aside.
  • Spread the frosting over the cookie, leaving a 1/2-inch border around the rim. Add a layer of fruit "pepperoni," then sprinkle with marzipan "mozzarella" and coconut "basil." Spread jelly rings around pizza. Slice into wedges with a pizza cutter and serve.
