This recipe came from the Jim Dandy Quick Grits bag. I make it Christmas morning every year and we all love it. It can be made a day ahead and refrigerated, just bake a little longer.

1 lb breakfast sausage, cooked and drained
4 cups water
1 teaspoon salt
1 cup quick-cooking grits
1 1/2 cups sharp cheddar cheese, shredded
1/2 cup butter or 1/2 cup margarine
1 cup milk
4 eggs, beaten
1/4 teaspoon ground red pepper

Steps:

  • 1. Heat oven to 350. Grease a 2 quart glass baking dish. In large saucepan, combine water and salt. Bring to a boil. Gradually stir in grits. Reduce heat to low; cover and cook 5 minutes, stirring occasionally.
  • 2.Brown sausage.
  • 3. Remove grits from heat. Add butter and 1 cup of cheese, stir until melted. Add sausage, eggs, and pepper; mix well. Pour mixture into greased baking dish. Sprinkle remainder of cheese on top.
  • 4. Bake at 350 for 1 hour or until golden brown. Let stand 10 minutes before serving.

1/2 cup butter
2/3 cup packed brown sugar
1 egg
2 (1 ounce) unsweetened chocolate squares, melted and cooled
2 tablespoons milk
1/4 cup maraschino cherry juice
1 1/2 cups sifted all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 cup chopped walnuts
1/2 cup diced maraschino cherry
30 regular-sized marshmallows, cut in half
walnut pieces
1 tablespoon butter
1 (1 ounce) unsweetened chocolate square
1 cup powdered sugar
1/2 teaspoon vanilla
2 tablespoons hot milk (about)

Steps:

  • Cream butter; add in sugar gradually.
  • Beat in egg.
  • Mix in cooled chocolate, milk, cherry juice, sifted dry ingredients (flour, baking soda, salt), chopped walnuts, and cherries.
  • Drop batter by heaping teaspoonsful onto greased baking sheets.
  • Bake in a 350° oven for about 12 minutes.
  • Place marshmallows, cut side down, on hot cookies.
  • Cool; frost with Glossy Chocolate Frosting; top with walnut pieces.
  • To make Glossy Chocolate Frosting: Melt butter and chocolate together; mix in sugar, vanilla, and enough milk to make frosting of spreading consistency.

AKA Hayner Toll House Cookies This recipe comes from my aunt Sandy, she was married to my moms brother Jim. She would bake the basic form of these every year for the Hayner Family Reunion. Myra decided to ramp things up at Christmas and add milk chocolate, semi sweet chocolate, white chocolate, and dried cranberries. This recipe makes a lot of cookies. Of course you can cut it in half or make the whole recipe and freeze the remaining dough till needed. They are absolutely delicious.

5 cup(s) all-purpose flour
2 teaspoon(s) baking soda
2 teaspoon(s) salt
2 cup(s) butter, softened
1 1/2 cup(s) white granulated sugar
1 1/2 cup(s) brown sugar, light
2 teaspoon(s) vanilla extract
4 - eggs
1 cup(s) peanut butter
2 12oz package(s) semi-sweet chocolate chips
2 12oz package(s) milk chocolate chips
2 12oz package(s) white chocolate chips
2 cup(s) coarse chopped pecans
2 cup(s) coarse chopped walnuts
1 cup(s) coarse chopped dried cranberries

Steps:

  • Preheat oven to 275. Combine flour, soda, and salt, set aside.
  • In a LARGE mixing bowl combine butter, white and brown sugar, and vanilla. Beat till creamy
  • Beat in egg, one at a time.
  • Add peanut butter
  • Gradually add dry ingredients; mixing well
  • Stir in nuts, chocolate chips and cranberries
  • Using a large ice cream scoop drop onto either parchment or silicone lined baking sheet, press each down slightly and bake at 275 for 25 min for softer cookies 30 min for crisper cookies (your oven times may vary)
  • Remove from oven and allow to cool for several min before moving to a cooling rack
