These breads keep well wrapped well in plastic wrap and foil, chilled for 1 week or frozen for 1 month.

3 cups all-purpose flour
2 teaspoons double-acting baking powder
1 teaspoon baking soda
1 teaspoon salt
2 tablespoons sugar
2 garlic cloves, minced
1 teaspoon dried rosemary, crumbled
1 teaspoon black pepper
1/2 cup sun-dried tomato, drained and chopped (packed in oil)
2 tablespoons oil (Reserves of the tomatoes in oil)
2 large eggs
1 1/2 cups 2% low-fat milk
3 tablespoons vegetable shortening, melted and cooled
1/2 cup kalamata olive, pitted and chopped
2 tablespoons capers, minced
1/2 cup fresh parsley, minced
1 cup parmesan cheese, grated

Steps:

  • preheated oven to 350°F.
  • Into a bowl sift together the flour, the baking powder, the baking soda, the salt, and the sugar.
  • In a small skillet cook the garlic with the rosemary and the pepper in the reserved oil from the sun-dried tomatoes over moderately low heat, stirring, until it is softened and fragrant but not brown.
  • In a large bowl whisk together the eggs, the milk, the shortening, and the garlic mixture.
  • Add the flour mixture, and stir the batter until it is just combined. Stir in the sundried tomatoes, the olives, the capers, the parsley, and the Parmesan.
  • Divide the batter among 2 buttered and floured regular sized loaf pans.
  • Bake the breads in the middle of the oven for 35 to 40 minutes, or until a tester comes out clean.
  • Remove the breads from the pans and let them cool, right sides up, on a rack.

1/2 cup honey
1 cup milk
3 tablespoons melted butter
1 1/2 cups flour
1/2 cup sugar
3 teaspoons baking powder
1 teaspoon salt
3/4 cup chopped pecans
1 egg, beaten

Steps:

  • Preheat oven to 350 degrees.
  • Butter loaf pan.
  • In medium saucepan, combine 1/2 cup honey and milk; Stir over medium heat until honey dissolves.
  • Stir in melted butter.
  • Set aside to cool.
  • Sift flour, sugar, baking powder and salt into large mixer bowl.
  • Add pecans and toss to coat.
  • Set aside.
  • Whisk egg into cooled milk mixture.
  • Add to flour mixture.
  • Beat at medium speed just until blended.
  • Pour into pan and smooth top.
  • Bake for 65-75 minutes until toothpick comes clean from center.
  • Cool on rack 10 minutes, Remove and cool again on rack.

This was an answer to a recipe request in the Star -Telegram sometime in the early 90's. The recipe was in the Parade Magazine published in 1961. The article said the recipe dated from 1880. I thought some of you might be collectors of old historic recipes.

3/4 cup cider vinegar
1 1/2 cups water
1 1/4 cups sugar, divided
4 teaspoons cinnamon, divided
2 cups all-purpose flour, sifted
1 tablespoon baking powder
1 teaspoon salt
1/3 cup shortening
3/4 cup milk
4 tablespoons butter or 4 tablespoons margarine, divided

Steps:

  • Combine vinegar, water, 1 cup sugar and 2 teaspoons cinnamon. Stir over low heat until sugar disolves. Cook over medium heat for 20 minutes.
  • Meanwhile, mix and sift flour, baking powder and salt. Cut in shortening; stir in milk with fork until soft dough forms.
  • Roll out into a rectangle about 1/4-inch thick. Combine remaining sugar and cinnamon; sprinkle over surface of rectangle. Dot with 2 tablespoons butter.
  • Roll up, starting at longer side. Cut crosswise into slices 1 1/4 inches thick.
  • Place slices, cut side up, close togather in deep baking dish. Dot with remaining butter.
  • Pour hot vinegar mixture over all. Bake at 375 degrees for 30 to 40 minutes. Serve hot with heavy cream.
